Easy soup to make using ingredients that I always have on hand. My husband loves this stuff. He likes to put a big spoonful of leftover mashed potatoes in the bowl and cover it with the soup. I like it served with corn chips and grated cheese. For a spicier soup, add a few diced jalapenos.

1 pound ground turkey
½ cup chopped onion
1 (12 ounce) package frozen mixed vegetables (peas, carrots, green beans, corn)
2 (10 ounce) cans diced tomatoes with green chile peppers
1 (15 ounce) can ranch style chili beans
1 (15 ounce) can chicken broth
1 (1 ounce) package taco seasoning mix
1 (1 ounce) package ranch dressing mix

Steps:

  • Heat a large pot over medium-high heat and stir in the ground turkey and onion. Cook and stir until the turkey is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Add the mixed vegetables, tomatoes with green chiles, ranch beans, chicken broth, taco seasoning, and ranch dressing mix. Bring to a boil, then reduce heat and simmer on low for 20 minutes.

2 tablespoons olive oil
1 ¼ pounds ground turkey
1 onion, chopped
2 carrots, cut into 1/4 inch rounds
2 stalks celery, chopped
1 ½ cups frozen corn
5 cloves garlic, chopped
1 (1 ounce) package taco seasoning mix
¼ teaspoon ground cumin
¼ teaspoon chili powder
¼ teaspoon dried oregano
½ bunch chopped fresh cilantro, divided
1 (28 ounce) can diced tomatoes with juice
1 (15 ounce) can kidney beans, rinsed and drained
1 green chile pepper, halved lengthwise
½ cup sliced black olives
3 ½ cups chicken broth
1 cup water, or more as needed
¼ cup lime juice
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large pot over medium-high heat and stir in the ground turkey. Cook and stir until the turkey is crumbly, evenly browned, and no longer pink. Transfer turkey to a bowl; set aside.
  • In the same skillet, stir in the onion; cook and stir until the onion is nearly translucent, about 5 minutes. Add the carrots and celery. Continue to cook and stir until tender, about 8 more minutes.
  • Stir in the corn, garlic, taco seasoning, cumin, chili powder, dried oregano, and about 1/4 cup cilantro along with the cooked turkey. Cook and stir until fragrant, about 2 minutes.
  • Mix in the tomatoes, kidney beans, green chile pepper, olives, chicken broth, water, and lime juice. Season with salt and black pepper. Bring to a boil, then reduce heat to low and continue to simmer for 20 minutes. Remove chile halves, and garnish with the remaining cilantro before serving.

3/4-1 lb ground turkey breast
6 -8 taco shells
4 teaspoons whole wheat flour
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon sea salt
3/4 teaspoon onion flakes
1/2 teaspoon cumin
1/2-1 teaspoon cayenne pepper (the more you add the spicier the tacos!)
1/4 teaspoon garlic powder
1/4 teaspoon unbleached cane sugar
1/8 teaspoon ground oregano
1/2 cup low-fat sour cream
1/2 cup 2% cheddar cheese
1/3 cup picante sauce
2 tomatoes, coarsely chopped
1 onion, coarsely chopped
1 cup lettuce, shredded

Steps:

  • Whisk together all seasoning ingredients in small bowl. Set aside.
  • Brown meat in large skillet. Add seasoning mixture and 2/3 cup water; mix thoroughly.
  • Bring to boil, then reduce to low heat. Cook 10 minutes, stirring occasionally.
  • Heat taco shells according to package instructions.
  • Spoon meat into warmed taco shells.
  • Top as desired.

1 red pepper, chopped
3 cans (15.5 oz. each) spicy chili beans
1 can (14.5 oz.) diced tomatoes and green chiles, undrained
1 can (14.25 oz.) corn, undrained
1-1/2 cups water
1 can (8 oz.) tomato sauce
2 tsp. chili powder
2 tsp. ground cumin
1-1/2 cups KRAFT Shredded Pepper Jack Cheese

Steps:

  • Cook turkey with onions and peppers in large saucepan; drain. Return turkey mixture to pan.
  • Add all remaining ingredients except cheese; stir, carefully breaking up tomatoes with back of spoon. Bring to boil; simmer on medium-low heat 5 min., stirring occasionally.
