SPICY TUNA BITES
These quick and easy spicy tuna bites are a healthier spin on the classic spicy tuna roll that has all the taste without the fat or carbs. Perfect for a light lunch!

Steps:
- Slice the cucumber into 1/4 inch thick circles and lay out onto a plate.
- Dice the tuna and green onions and place them into a medium mixing bowl.
- Into the bowl, add the Greek yogurt, sriracha, garlic powder and salt. Make sure to taste and adjust the salt to your preference.
- Scoop about 1 Tbsp of tuna onto each cucumber and garnish with additional sriracha and sliced nori (if desired.) Alternatively, if you want it to taste even more like sushi, mix some extra minced nori into the tuna mixture.
- Devour!

BLACKENED TUNA BITES WITH CAJUN MUSTARD
This can be served as a dinner or an appetizer. It is positively amazing. This is my own creation inspired by my favorite dish at a local NJ restaurant. I hope you like it as much as I do.

Steps:
- Make the mustard first: Mix all ingredients in a small saucepan.
- Bring to a boil, stirring often.
- When somewhat smooth, it's done.
- Now start the tuna: TUNA Cut up tuna in large bite size pieces Coat with blackening seasoning Heat oil in pan till very hot, but not smoking Sear tuna on all sides for about 7-10 minutes total.
- Do not overcook.
- It's good for the tuna to be slightly pink on the inside.
- Serve right away with Cajun Mustard.
- This can also be made with peeled jumbo shrimp.

- In a small bowl, whisk the first five ingredients; set aside. Spritz tuna with cooking spray. Sprinkle with sesame seeds, salt and pepper. In a large nonstick skillet, brown tuna on all sides in batches until medium-rare or slightly pink in the center; remove from the skillet., On each of 30 wooden appetizer skewers, thread one tuna cube. Arrange on a serving platter. Garnish with onions. Serve with sauce.

Steps:
- Bring water to a boil in a medium saucepan, and stir in rice. Reduce heat, cover, and simmer for 20 minutes.
- Heat 1 tablespoon oil in a small saucepan over low heat. Stir in onion, cover tightly, and cook until tender but not browned, about 5 minutes.
- In a large bowl, mix tuna, milk, flour, parsley, sugar, and vinegar. Season with salt and pepper. Mix in rice, onion, and eggs. Mold the mixture into 12 balls using 2 teaspoons.
- Heat oil in a large, heavy skillet or deep fryer. Fry the tuna balls in batches until lightly browned, 2 to 3 minutes. Drain on paper towels.

- Start preparing your sushi rice first. While most recipes instruct you to rinse rice in a fine mesh strainer until your water runs clear, I think it's optional. [read post for more details on this] I did a side by side experiment to compare rinsed rice vs not rinsed- and it's totally up to you! Add rice to a medium saucepan with water and bring to a boil. Once it starts to boil, reduce heat to low, cover and cook until the water is completely absorbed – about 15 minutes.
- While rice is cooking, mix rice-wine vinegar, salt, and sugar in saucepan (stirring over medium heat to help sugar and salt dissolve). Remove from heat and set aside.
- Prepare your other ingredients: cut carrots into ribbons or slice thin, cut cucumbers into long thin strips, dice jalapeño (seeds removed), slice cold cream cheese in strips lengthwise and slice avocado lengthwise.

- Peel the cucumber in to 20 thick discs. The amount of discs depends on the length and girth of the cucumber, use two smaller ones if needed.
- Chop the onion, garlic and basil leaf. Add to a skillet and lightly saute until garlic is golden. If you are short on time, these ingredients can also be kept raw and added to the tuna directly. Add mixture to the tuna once done.
