Spicy Tropical Couscous Salad image

A nice, refreshing side dish that's perfect when the weather starts to warm up. It's a great side dish for almost any grilled meat!

1 (10 ounce) box couscous
1/2 cup pineapple, small dice
1/3 cup red onion, small dice
1/2 cup mango, small dice
1/2 cup red bell pepper, small dice
1 jalapeno pepper, seeded and minced
1/3 cup cilantro, minced
1 tablespoon lime juice
1/2 tablespoon orange zest
1 tablespoon scallion, finely sliced
salt & pepper (optional)

Steps:

  • Cook couscous according to package directions WITHOUT oil or butter.
  • Fluff couscous with fork and set aside in a bowl to cool.
  • Add remaining ingredients to cooled couscous and mix well.
  • Refrigerate 1 hour before serving.

¼ cup Lemon Juice
½ teaspoon Kosher Salt
1 teaspoon Cayenne Powder
1 teaspoon Dijon Mustard
1.5 cups Water
2 teaspoons Kosher Salt, divided
1.5 cups Moroccan Couscous
1 teaspoon Smoked Paprika
1 cup Red Onion, diced
1 cup Feta Cheese Crumbles
3 cups Cherry Tomatoes, sliced in half
½ cup Kalamata Olives, sliced
2 cups Cucumbers, sliced
1 Jalapeño, chopped, seeds included
½ cup Green Onion, chopped
5 Garlic Cloves minced
1 tablespoons Fresh Basil, chopped
1 teaspoon Black Pepper
2 teaspoons Black Garlic, optional - ground, fermented, dried ground black garlic

Steps:

  • SaladBring the water to a boil, adding 1 teaspoon salt. To the boiling water, add the couscous, stirring quickly. Cover the pot with a lid, remove from heat, and allow to sit for about 5 minutes. Add the prepared couscous to a large bowl, allow to cool slightly, and toss in the following ingredients one at a time: the remaining salt, smoked paprika, red onion, feta cheese, cherry tomatoes, Kalamata olives, cucumbers, jalapeño, green onion, garlic, fresh basil, black pepper, black garlic. Toss well, ensuring the ingredients are evenly distributed. DressingIn a small dish, combine the lemon juice, kosher salt, cayenne powder, and mustard. Whisk well. Pour the dressing over the salad, tossing well to ensure that it is well-incorporated.

100g couscous
220g can chickpea , rinsed and drained
100ml hot chicken stock
zest and juice 1 lemon
1 roasted red pepper , chopped
25g flaked toasted almonds
handful mint leaves, chopped
2 tbsp natural Greek yogurt
1 tsp harissa

Steps:

  • Tip the couscous and chickpeas into a bowl and pour over the stock. Cover and leave for 5-10 mins until the couscous has absorbed the stock. Allow to cool a little. Toss through the lemon zest and juice, pepper, almonds and mint. Spoon into a container, then top with the yogurt and a drizzle of harissa.

2 cups uncooked couscous
1 teaspoon salt
3 cups boiling water
6 green onions, chopped
1 cucumber, peeled and diced
2 large ripe tomatoes, peeled and diced
1 1/2 cups cooked garbanzo beans
1/2 cup crumbled feta cheese
1 cup chopped fresh parsley
1/4 cup chopped of fresh mint or 1 tablespoon dried mint
3 tablespoons extra virgin olive oil
2 lemons, juice of
salt & fresh ground pepper

Steps:

  • Add the couscous, salt, and boiling water to a large mixing bowl.
  • Cover bowl and set aside for 10 minutes.
  • Fluff couscous with a fork; all liquid should be asborbed; let cool to room temperature (I put the couscous in the frig to chill a little).
  • Once the couscous is at room temperature, add the chopped green onion, cucumber, tomatoes, garbanzo beans, feta cheese, parsley, mint, olive oil, lemon juice, and salt and pepper to taste.
  • Toss salad gently.
  • It is recommended that if you make this salad ahead of time, add the olive oil and lemon juice right before ready to serve.
