5 plum tomatoes, chopped
1 large sweet onion, chopped
2 jalapeno peppers, seeded and chopped
2 tablespoons sugar
2 tablespoons minced fresh cilantro
2 tablespoons lime juice
1 teaspoon salt
1 teaspoon minced garlic
1 can (15 ounces) mandarin oranges, drained
Tortilla chips

Steps:

  • In a small bowl, combine the first eight ingredients. Gently stir in mandarin oranges. Chill until serving. Drain before serving if necessary. Serve with tortilla chips.

HOMEMADE SPICY TOMATO SALSA



Homemade Spicy Tomato Salsa image

3 vine tomatoes ((halved))
10 cherry tomatoes ((halved))
30 g jarred jalapeños
½ onion ((red or white))
1 small chilli
½ lime
1 garlic clove
handful fresh coriander
1 tsp sea salt

Steps:

  • Put all the ingredients except the tomatoes into a food processor and pulse until finely chopped.
  • Add the tomatoes and carefully pulse a few times until the tomatoes are chopped and combined. Be careful not to liquefy them. (Alternatively, finely chop all the ingredients including the tomatoes and mix in a bowl)
  • Scoop into a bowl and season with salt and pepper. Serve with a garnish of fresh coriander and some tortilla chips.

  • Mix all of the ingredients together in a large bowl.
  • Place in the fridge for the flavours to develop for about an hour.
  • Serve as a topping on whatever dish you want. This goes well with crisps too.

Number Of Ingredients 9

2 medium tomatoes (about 1 1/4 lbs)
2 cloves garlic
1 to 2 jalapeño peppers (depending on heat), stemmed and seeded
1 to 2 dried chile de arbol, stemmed and crushed
1 tablespoon lime juice
1 1/2 teaspoons kosher salt
1 tablespoon extra-virgin olive oil
2 tablespoons chopped cilantro
1/3 cup finely chopped red onion, rinsed in cool water and drained

Steps:

  • Bring a medium pot of water to a boil and cook tomatoes and garlic 2 minutes. Drain and rinse with cool water. Peel and core tomatoes.
  • In a food processor or blender, blend first seven ingredients until mostly smooth. Transfer tomato mixture to a mixing bowl and fold in cilantro and onion. Taste, adjust seasoning, and serve.

Garden tomatoes are in abundance so I make salsa with ingredients I had on hand and this is what I came up with. Do adjust the heat to your taste.

1/2 tablespoon vegetable oil
1 sweet onion, diced
1 yellow bell pepper, diced
5 cups fresh seeded diced tomatoes
4 garlic cloves, minced
2 -4 chipotle chiles in adobo, minced
1 cayenne pepper, diced, if more heat is desired (optional)
1/4 cup minced fresh basil (or cilantro)
1 lime juice
1/3 cup vinegar or 1/3 cup bottled lemon juice
salt and pepper
1/8 cup sugar, if tomatoes need to be sweetened (optional)
1/2 teaspoon cumin

Steps:

  • Heat oil in a large pan add onions and peppers till soft add garlic cook 1 minute.
  • Add remaining ingredients and simmer 15-20 minutes to reduce liquid.
  • Adjust seasoning and place in hot washed jars.
  • Process for 15 minutes in a hot water bath to seal.
  • Or refrigerate to be consumed within the week.

  • Turn your oven to broil before prepping anything to saturate the oven with heat, placing a rack ~6 inches from the top burner. Prepare a rimmed baking sheet by lining it with aluminum foil. Do not use parchment as it would burn or silicon mats as they are typically only oven safe up to to ~450 ºF).
  • Wash the tomatoes and cut them in half, and place them cut side up on the prepared baking tray. You cut them in half so that they don't burst open in the oven and create a mess!
  • Add the whole peppers, unpeeled garlic cloves, and cut onion. Sprinkle some salt and drizzle a bit of oil over the tray.
  • Place the baking tray in the oven on the top rack and broil for 6-8 minutes, or until there are some brown spots on the peppers. Flip the peppers and return to the oven for another 3-5 minutes or until the other side of the peppers have some brown spots as well as the papery garlic skin. At this point, remove the garlic and peppers from the baking tray and when they are cool enough to handle trim off the tops of the peppers and remove the skin from the garlic cloves.
