- In a 4-quart (4 L) slow cooker, combine all ingredients, except kale, beans, and lemon juice.
- Stir well. Cover the pot and cook on high-heat setting for 2 hours or until farro is tender.
- Open the lid and stir in kale, white beans, and lemon juice. Cover and cook for a further 1 hour.
- Turn off the slow cooker and open the lid. Stir vegetable stew well before serving.
- Ladle into soup bowls. Serve chopped fresh basil or parsley and crumbled feta cheese, if desired.

SPAGHETTI WITH SHRIMP, KALE AND TOMATOES
I like to use black kale for this. I blanch it in the pasta cooking water, then I add the chopped blanched leaves to the tomato sauce at the end of cooking, just so they will heat through and soften a little more. I sear the shrimp and make the tomato sauce in the same pan. You can toss shrimp in the tomato sauce or just top each serving with them, which is the way to go if there are vegetarians at the table.

- Fill a large pasta pot with water and bring to a boil. Add salt to taste and the kale. Boil 2 to 3 minutes, until tender, then using a Chinese skimmer, a strainer or a slotted spoon, transfer to a bowl of cold water (do not drain water in the pot; you'll use it for the pasta). Drain kale and a handful at a time, squeeze out excess water. Chop medium fine and set aside.
- (You can do this step while you are waiting for the water to come to a boil for the kale). Season shrimp with salt and pepper to taste. Heat olive oil over medium-high heat in a large, heavy skillet or a wide saucepan and add shrimp. Do not stir for a minute, then turn shrimp and toss in the pan until seared on the edges, pink and cooked through, about 4 minutes. Remove to a plate.
- Turn heat down to medium and add garlic and hot pepper flakes. Cook, stirring, until fragrant, 10 to 20 seconds (the pan will be quite hot), and stir in tomatoes with liquid, sugar, salt and oregano or thyme. Turn heat up to medium-high and stir often as tomatoes come to a brisk boil. Turn heat down to medium and cook, stirring often, until tomatoes have cooked down and taste very fragrant, about 10 minutes. Stir in kale and simmer for another 3 to 5 minutes. Stir in shrimp or keep separate, remove from the heat and keep warm. If sauce seems dry you can add some cooking water from the pasta.
- Bring water in pot back to a boil and add spaghetti. Cook al dente, following timing instructions on the package but checking for doneness a minute before the indicated time. Set aside 1/2 cup of the cooking water from the pasta, in case you want to moisten the sauce more, drain pasta and toss with tomato and kale mixture. Add water from the pasta only if you think the mixture seems dry. Serve the pasta and top each serving with 3 shrimp if you haven't tossed the shrimp with the sauce. Pass crumbled feta or grated Parmesan at the table for sprinkling.

- In a large pan heat the oil on medium heat. Add onion and cook for 1 minute. Add garlic, beef and spices. Cook until meat is browned, about 10 minutes. Add tomatoes and reduce heat to low. Let simmer for about 25 minutes, stirring occassionally. Add kale and stir. Cook for another 10 minutes. Enjoy!

- In a 6-qt. stockpot, heat oil over medium-high heat. Add onion; cook and stir until tender, 6-8 minutes. Add garlic; cook 1 minute longer. Stir in sweet potatoes, apples, honey, seasonings and broth. Bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, 25-30 minutes., Puree soup using an immersion blender, or cool soup slightly and puree in batches in a blender; return to pan. This is a delicious sauteed kale recipe that I got from my mom and tweaked a bit. It tastes so good that even my 18-month-old son will eat it! Serve with extra olive oil and salt, if desired. We enjoy this recipe with plenty of salt and oil. I do not measure exactly. It's a recipe you can play around with!

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender but still holding their shape, about 15 minutes. Drain.
- Meanwhile, heat 2 tablespoons olive oil in a large frying pan over medium-high heat until quite hot. Toss in pieces of kale; reduce heat to medium. Cover and cook, stirring often, until kale begins to soften and crisp slightly, about 5 minutes. Add onion; cook until softened and translucent, 2 to 3 minutes. Stir in garlic.

- In a large cooking pot warm the olive oil on a medium heat. Once warm, add the onion, celery and carrots and sauté for 5-7 minutes, stirring often until the onions are translucent.
- Stir in the tomato paste, garlic, chili flakes, paprika, chili powder and thyme. Cook another 1-2 minutes, stirring often.
- Add the stock, lemon juice or vinegar, bay leaf and beans. Bring the soup to a boil and then reduce the heat down low to maintain a gentle simmer. Let simmer for 15 minutes.

You want some of the vegetables and soup blended up to create a thicker consistency, but make sure not to blend up everything. The idea is to have a thick soup with bits of beans and vegetables still intact. Tip: You can also scoop out a couple of cups of the soup and blend it up in a traditional blender if needed. Just make sure to open the lid of the blender carefully and away from your face as it will likely be steamy.

- Cook pasta of choice according to package directions until al dente. Make sure to salt the water. Before draining, reserve 1 cup of the pasta water for the sauce. Drain pasta and set aside until needed.
