Spicy Baked Tofu Scramble with Potatoes image

This tofu scramble recipe is a great way to mix up breakfast and get some veggies in your first meal of the day. Serve with portobello mushroom steak; leave out the potatoes and serve crispy hash browns instead! This can be served with toast if you leave out the potatoes. Don't forget the fruit for an unforgettable breakfast or brunch.

2 tablespoons vegetable oil
1 cup chopped red onion
4 fresh curry leaves
¼ teaspoon black mustard seeds
¼ teaspoon fennel seeds
¼ teaspoon cumin seeds
¼ teaspoon salt
⅛ teaspoon ground black pepper
¼ cup chopped jalapeno pepper
¼ cup chopped green bell pepper
5 small golden potatoes, thinly sliced
3 cloves garlic
1 (12 ounce) package extra-firm tofu, drained and rinsed
¼ teaspoon ground turmeric
ground black pepper to taste
1 pinch onion powder, or to taste
1 pinch garlic powder, or to taste
1 tablespoon nutritional yeast
1 tablespoon chopped fresh cilantro

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a nonstick pan over medium heat. Add oil, onion, curry leaves, mustard seeds, fennel seeds, cumin seeds, salt, and black pepper. Cook for 5 minutes. Add jalapeno and bell pepper and cook for 2 minutes more. Add potatoes and cook for another 10 minutes. Transfer mixture to a large glass casserole dish.
  • Bake in the preheated oven for 15 minutes.
  • Meanwhile, combine tofu, turmeric, black pepper, onion powder, and garlic powder in the same nonstick pan over medium heat. Break tofu into scrambled egg consistency and cook for 5 minutes. Add nutritional yeast and cook over low heat for about 1 minute more. Remove from heat and add cilantro.
  • Remove casserole dish from the oven and add tofu mixture; stir to combine and return to the hot oven.
  • Continue baking for 10 minutes more. Let rest 5 minutes before serving.

1 teaspoon olive oil
2 cloves garlic, minced
¾ cup sliced mushrooms
3 scallions, thinly sliced
1 jalapeno pepper, seeded and sliced into 1/4-inch slices
¼ teaspoon red pepper flakes
1 teaspoon kosher salt
¼ teaspoon ground black pepper
½ cup grape tomatoes
3 ½ tablespoons chopped fresh cilantro, or to taste
1 ounce crumbled queso fresco

Steps:

  • Place tofu onto a plate and place another plate on top. Set a 3- to 5-pound weight on top (a container filled with water works well). Press tofu for 20 to 30 minutes; drain and discard the accumulated liquid. Crumble tofu into 1/4-inch pieces.
  • Heat olive oil in a saucepan over medium heat. Add garlic; cook and stir until fragrant, about 2 minutes. Add mushrooms, scallions, and jalapeno; cook until softened, about 2 minutes. Stir in crumbled tofu and red pepper flakes. Cover and cook until flavors blend, about 4 minutes.
  • Season the tofu mixture with salt and pepper. Stir in tomatoes and 3 tablespoons cilantro; cook and stir until tomatoes are just heated through, about 2 minutes. Spoon tofu scramble onto 2 plates; sprinkle queso fresco on top. Garnish with the remaining cilantro.

1 bell pepper
½ onion
2 teaspoons oil
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon onion powder
½ teaspoon garlic powder

1 tablespoon lemon juice

Steps:

  • Drain tofu from container, wrap it in a paper towel, and place it on a plate. Rest another plate on top of the tofu and microwave for 3-5 minutes.
  • Unwrap the tofu and cut into cubes.
  • Place the tofu in a bowl and mash with a fork.
  • Cut the top off a bell pepper and remove all the seeds and thinly slice.
  • Chop the onion.
  • Heat oil in a pan over medium heat. Add the onions and peppers, and cook until softened.
  • Add in the tofu and cook on medium heat until most of the water has evaporated.
  • Add the salt, pepper, onion powder, garlic powder, and cumin, and mix well, until all the seasonings are evenly distributed.
  • Add the lemon juice to the tofu and mix until evenly combined.
  • Remove the tofu from the heat and serve.

240 g firm tofu (crumbled)
2 tbsp vegetable oil
1 large shallot (thinly sliced)
1½ tsp spicy jerk chilli paste (or harissa, chipotle or your favourite curry paste)
4 cherry tomatoes (halved)
5 g fresh coriander (roughly chopped, including stalks)
20 g spinach or rocket (to serve)
2 slices of crusty bread (to serve)
2 tbsp unsweetened dairy-free yogurt (to serve)

Steps:

  • Drain tofu and firmly dab it with a clean tea towel to remove any excess moisture.
  • Heat 2 tbsp of vegetable oil in a frying pan. Add the shallots and cook for 2-3 minutes until starting to soften.
  • Add the tofu, crumbling it into small pieces with your fingers. Mix quickly, add chilli paste and cook stirring for 5 minutes. For the last minute of cooking, add the halved tomatoes to just soften slightly. Then take off the heat and mix in chopped coriander.
  • Serve the spicy tofu scramble on a piece of crusty bread with a handful of spinach or rocket and a dollop of yoghurt or vegan cream cheese.

1 Onion , chopped
1 Red Bell pepper (Capsicum)
1 Tomato , chopped
1 Green Chilli , chopped

Steps:

  • To begin making the Tofu Bhurji Recipe, firstly crumble the tofu and keep it aside.
  • Heat a tablespoon of butter in a heavy bottomed pan; add the cumin seeds, onion, capsicum, green chillies and ginger. Saute the onions and capsicum on low to medium heat until they are soft and tender.
  • Once the onions and capsicum are soft, add the tomatoes, turmeric powder, red chilli powder and give it a good stir.
  • Finally, stir in the crumbled tofu and salt to taste. Stir well, check the salt and spice levels and adjust to suit your taste.

1/2 tablespoon extra virgin olive oil
1 poblano pepper, cored and diced
1/2 medium red onion, diced
3 Roma tomatoes
1 large jarred roasted red bell pepper, chopped (about 1/2 cup)
1 tablespoon chili powder
1 tablespoon smoked paprika
3/4 teaspoon sea salt, plus more to taste
1 (16-ounce) block sprouted firm or extra-firm tofu, drained and rinsed
Juice of 1 lime, more or less to taste
8-10 small corn tortillas, warmed
1 ripe avocado, halved, pitted, peeled, and mashed with sea salt + lime juice to taste
Cilantro leaves ((optional))
Hot sauce ((optional))

Steps:

  • In a large sauté pan, heat the olive oil over medium heat. Add the poblano pepper and red onion, and sauté for 4-6 minutes, or until beginning to soften, stirring occasionally.
  • Meanwhile, add the Roma tomatoes to a blender and pulse several times to chop and purée. You want them to be thoroughly chopped yet maintain a bit of texture. Set aside.
  • Add the roasted red pepper, chili powder, smoked paprika, and sea salt to the pepper and onion mixture. Continue to sauté for 1 minute, or until the spices begin to bloom and become fragrant.
  • Stir in the Roma tomatoes, and crumble in the tofu. Simmer for 10-12 minutes, or until the liquid reduces, stirring occasionally.
  • Stir in the lime juice and continue to simmer for just 1 more minute. Then, turn off the heat.
  • Taste and season with more sea salt if desired. (I usually add another 1/8 to 1/4 teaspoon. Proper seasoning is essential to a flavorful tofu scramble and while you certainly don't want to over-season, don't be too shy with the sea salt.)
  • Scoop a bit of the tofu filling into each warm tortilla. Top with a dollop of mashed avocado, a bit of cilantro (if using), and a few dashes of hot sauce (if using).
  • Serve immediately.
  • Leftovers can be refrigerated in separate containers for up to 2 days.
