SPICY TOFU BENTO BOWL

Steps:
- To make Spicy Tofu: Whisk together soy sauce, chili sauce and sesame oil in bowl.
- Heat nonstick skillet over medium heat.
- Dip tofu in chili mixture. Cook 10 minutes or until browned, turning occasionally. Add green onions, yogurt and lemon juice to remaining chili mixture. Toss with tofu.
- To make salad:. Whisk together soy sauce, lemon juice, ginger and chili sauce in bowl.
- Mound rice in the bowls.
- Top with greens. Shave strips of carrots over top with vegetable peeler. Top with tofu, cucumber and avocado.
- Sprinkle with sesame seeds and serve with sauce.

SPICY TOFU SALAD BOWL
When it's too hot or when I don't feel like cooking, I'll make this quick healthy bowl. Sometimes I just eat it as a salad without rice and sometimes I mix a spoonful of the spicy paste with the steam rice and eat it.

Steps:
- Mix green onions, soy sauce, sesame seeds, Korean red pepper powder, sugar, and sesame oil together in a bowl until evenly combined.
- Place rice in a serving bowl. Toss lettuce and cucumber together and place onto rice. Arrange tofu over lettuce and cucumber. Drizzle sesame mixture over tofu to taste.

- Heat skillet over medium heat. Dip tofu in soy sauce mixture; cook 10 minutes, or until browned. Cool 10 minutes.
- Add green onions, yogurt, and lemon juice to remaining chile mixture. Toss with tofu.
- Mound rice in serving bowls. Top with greens. Shave carrot strips over top with vegetable peeler. Top with tofu, cucumber, and avocado. Sprinkle with sesame seeds; serve with chile-soy sauce mixture.

- Peel the ginger and daikon. Slice the ginger as thinly as you can and slice the daikon into slightly thicker slices.
- Rub half a tsp of salt into the ginger slices and set aside for 30 min. After 30 min rinse the salt off.
- Put rice vinegar, 120 ml / ½ cup cup of water, sugar and 1 tsp of salt into a small pot and bring to a gentle boil.
- Prepare two small jars / bowls if you intend to dye the ginger pink and the daikon yellow. Otherwise you can pickle everything together! Place ginger in one small jar and daikon in another and divide the pickling mixture between these two containers. Add a slice of beetroot to the ginger to dye it pink and turmeric to the daikon to dye it yellow. Set aside for a day.

- Press liquid out of the tofu. Cube tofu and toss (gently) with the cornstarch until coated. Arrange on a baking sheet lined with parchment. Arrange broccoli and peppers on another baking sheet.
