½ teaspoon garlic powder
1 teaspoon salt
1 tablespoon seasoned salt

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C).
  • In a medium bowl, mix together the pumpkin seeds, butter, garlic powder, salt and seasoned salt until the pumpkin seeds are evenly coated. Spread in an even layer on a cookie sheet.
  • Bake for 1 hour and 15 minutes, stirring every 10 to 15 minutes until toasted. Cool completely on the baking sheet, then transfer to a serving dish.

Steps:

  • Preheat oven to 350 degrees F.
  • Place the pumpkin seeds in a large bowl and toss with the oil, ancho powder, salt, and chile de arbol powder. Spread evenly on a baking sheet and bake for 8 to 10 minutes, stirring once. Let cool and store in an airtight container.

¼ teaspoon cumin
¼ teaspoon ground cinnamon
¼ teaspoon ground ginger
1 pinch cayenne pepper
2 cups raw whole pumpkin seeds, washed and dried
cooking spray
2 teaspoons salt, or to taste
1 tablespoon olive oil
2 tablespoons white sugar

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Line a baking sheet with parchment paper.
  • In a large bowl, stir together 3 tablespoons of sugar, the cumin, cinnamon, ginger, and cayenne pepper, and set aside.
  • Place the pumpkin seeds on the prepared baking sheet, spray them with cooking spray, and sprinkle with salt to taste. Bake the seeds in the preheated oven until lightly golden, 20 to 25 minutes.
  • Heat the oil in a large nonstick skillet over medium heat, and stir in the toasted pumpkin seeds along with 2 tablespoons of sugar. Cook and stir the seeds until the sugar forms a coating on the seeds, 2 to 3 minutes. Stir the caramelized seeds into the bowl of sugar-spice mixture, toss to coat, and let cool.

1 habanero chile, roasted, seeded and deveined
2 Tbsp. GREY POUPON Dijon Mustard
2 cloves garlic, roasted
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 jicama, peeled, cut into 1/2-inch-thick sticks
1 pkg. (8 oz.) sugar snap peas (about 3 cups)

Steps:

  • Use pulsing action to process pumpkin seeds in food processor just until seeds resemble coarse crumbs. Add next 6 ingredients; process until thickened and well blended.
  • Spoon half the pumpkin mixture into small serving bowl; cover with layers of sour cream and remaining pumpkin seed mixture.

1 cup raw pumpkin seeds (rinsed and dried on a clean kitchen towel (4 oz))
1 tablespoon extra-virgin olive oil
1 teaspoon Diamond Crystal kosher salt (or 1/2 teaspoon fine salt)
1 teaspoon smoked paprika (or chili powder)
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper ((up to 1/2 teaspoon if you like your food spicy))

Steps:

  • Preheat your oven to 350 degrees F. Line a large rimmed baking sheet with parchment paper.
  • In a medium bowl, using a large spoon or your clean hands, mix the cleaned and dried pumpkin seeds, the oil, and the seasonings.
  • Spread the pumpkin seeds in a single layer on the prepared baking sheet. Roast until golden, stirring the seeds halfway through, 15-20 minutes. Start checking after 15 minutes and watch out to make sure they don't burn - they progress from pale to brown very fast.
  • Serve immediately - they are wonderful when warm!
