Forget ordering takeaway and make your own Thai red curry at home. This classic dish takes just 15 minutes to prep and it's bursting with flavour.

1tbsp vegetable oil
1tbsp ginger & garlic paste
red curry paste
800ml coconut milk
8 skinless, boneless chicken thighs, cut into large chunks
4 lime leaves (ideally fresh)
2tbsp fish sauce
1tsp brown sugar
Thai basil
basil or coriander, plus extra to serve
1 red chilli, sliced diagonally
thumb-sized piece ginger, cut into matchsticks
cooked jasmine rice, to serve

Steps:

  • Heat 1 tbsp vegetable oil in a large saucepan over a medium heat and fry 1 tbsp ginger and 1 tbsp garlic paste for 2 mins. Add 5-6 tbsp red curry paste, sizzle for a few secs, then pour in 800ml coconut milk.
  • Bring to the boil, reduce to a simmer, stir a little and wait for the oil to rise to the surface.
  • Add 8 skinless, boneless chicken thighs, cut into chunks, and lime leaves, and simmer for 12 mins or until the chicken is cooked through.
  • Add 1 tbsp of the fish sauce and a pinch of brown sugar, then taste - if you like it a little saltier, add more fish sauce; if you like it sweeter, add a little more sugar.
  • Bring to the boil, take off the heat and add ½ small pack Thai basil.
  • Spoon the curry into four bowls and top with 1 red chilli, a thumb-sized piece of ginger and a few extra basil leaves. Serve with jasmine rice.

5 - 6 tbsp Thai Red Curry Paste ((store bought, Maesri best) (Note 1))
1 quantity homemade Thai Red Curry Paste
2 large garlic cloves (, minced)
2 tsp fresh ginger (, finely grated )
1 tbsp lemongrass paste (or finely chopped fresh (Note 3))
3 tbsp vegetable oil ((or canola or peanut))
1 cup (250 ml) chicken broth/stock (, low sodium)
400 ml / 14 oz coconut milk ((full fat!))
6 kaffir lime leaves ((Note 4))
1 tbsp sugar ((white, brown or palm))
2 tsp fish sauce (, plus more to taste)
350g / 12 oz chicken thighs ((boneless and skinless), cut into 0.75 / 1/3" thick slices (Note 5))
150g / 5 oz pumpkin or butternut squash, ( cut into 1.5cm / 3/5" cubes (~1 heaped cup))
120g / 4oz green beans (, trimmed and cut into 5cm/2" pieces)
12 Thai basil leaves ((Note 6))
Fresh red chilli slices ((small chilli - spicy, large = less spicy))
Fresh coriander / cilantro leaves
Steamed jasmine rice

Steps:

  • Heat oil in a large heavy based skillet over medium high heat.
  • Add curry paste and Extras (if using jar paste) and cook for about 2 minutes so it "dries out" (See video)
  • Add chicken broth and stir to dissolve paste. Simmer rapidly for 3 minutes or until liquid reduces by half.
  • Add coconut milk, lime leaves, sugar and fish sauce. Stir, then add chicken.
  • Spread chicken out, bring to simmer, then turn heat down to medium. Simmer for about 8- 10 minutes or until Sauce reduces, the chicken is cooked and the sauce is almost at the thickness you want.
  • Do a taste test. Add more fish sauce (or even shrimp paste) to add more saltiness, sugar for sweetness.
  • Add pumpkin and beans, stir. Cook for 3 minutes or until pumpkin is just cooked through and Sauce is thickened - see video for Sauce thickness.
  • Remove from heat. Stir through a handful of Thai basil leaves.
  • Serve over jasmine rice, garnished with fresh red chilli slices and fresh coriander/cilantro leaves, if desired.

For the Spicy Red Thai Curry Sauce:
1 (14 ounce) can Lite Coconut Milk
2 tablespoons Red Curry paste
1 tablespoon fish sauce
1 tablespoon creamy peanut butter
2 cloves garlic, very finely minced
1 teaspoon fresh ginger, very finely minced
1 - 4 dried Thai (bird) chiles
juice of ½ a lime
For the Chicken, Rice, and Vegetables:
1½ cups uncooked jasmine rice + the water needed for cooking
2 tablespoons vegetable oil
1 pound boneless skinless chicken (I used thighs), cut into 1" pieces
salt & pepper to taste
1 medium onion, diced
1 cup fresh mushrooms, sliced
1½ cups carrots, sliced
3 cups fresh broccoli florets
½ cup chicken broth, as needed
1 cup snow peas
chopped fresh cilantro and ¼ cup chopped unsalted peanuts to garnish
sriracha is optional

Steps:

  • In a medium saucepan bring the coconut milk to a simmer. Add the red curry paste, fish sauce, peanut butter, garlic, and ginger. Stir to combine and bring to a slow boil. Reduce the heat to medium low, stir, toss in your preferred number of chiles (1 for mild, 2 or 3 for medium, 4 for hot) and let the sauce cook down while you prepare the rest of the meal.
  • Start a pot of water and cook rice according to package instructions.
  • Heat the 2 tablespoons oil in a a large skillet. Add the chicken pieces and sprinkle with salt and pepper. Brown the chicken and cook for about 7 minutes, until it's cooked through. Remove it from the skillet and set aside.
  • Add the onions, mushrooms, and carrots to the skillet. Cook for about a minute. Add the broccoli and continue cooking for about 5 minutes, until the broccoli is tender but still a little bit crisp and bright green. You can add chicken (or vegetable) broth as needed if you feel like the skillet seems dry.
  • Toss in the snow peas and add the chicken back in. Cook for another 2 minutes or so.
  • Squeeze the lime juice into the Red Thai Curry Sauce and stir just before serving.
  • To serve add a scoop of rice to each plate or shallow bowl. Surround the rice with the chicken and vegetables, and the spoon the Spicy Red Thai Curry Sauce over the chicken and vegetables. Garnish with chopped fresh cilantro and chopped unsalted peanuts. Add a little sriracha if you prefer.

2/3 cup unsweetened coconut milk
2 to 3 teaspoons Thai red curry paste
1 tablespoon Asian fish sauce
3 tablespoons vegetable oil, divided
1 1/2 pounds skinless, boneless chicken thighs, cut into 1/2-inch strips, or skinless, boneless breasts, cut into 1 1/2-inch chunks
Salt and freshly ground black pepper
1/2 pound shiitake mushrooms, stemmed, caps quartered
1 tablespoon very finely chopped fresh ginger
2 large garlic cloves, very finely chopped
1/2 cup water
Toasted peanuts and cilantro leaves, for garnish
Steamed rice and lime wedges, for serving

Steps:

  • In a small bowl, whisk the coconut milk with the curry paste and fish sauce until combined. Heat a large skillet until very hot. Add 2 tablespoons of the vegetable oil and heat until just smoking. Season the chicken with salt and pepper and add it to the skillet in a single layer. Cook over high heat, turning once, until the chicken is browned but not cooked through, 4 to 5 minutes. Transfer the chicken to a plate and pour off the fat in the skillet. Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the shiitake caps and stir-fry over high heat until lightly browned, about 5 minutes. Stir in the ginger and garlic, stir-fry for 1 minute. Add the chicken, red curry mixture and the water and bring to a boil. Reduce heat and simmer for 2 to 3 minutes or until the chicken is cooked through. Transfer the chicken and curry sauce to a serving bowl and garnish with peanuts and cilantro. Serve immediately with rice and lime wedges.

2 -4 tablespoons curry paste (i like red and i use 4)
14 ounces coconut milk
1 tablespoon brown sugar
1 tablespoon fish sauce
1 -2 tablespoon soy sauce
1 tablespoon lime juice
1/4 cup water or 1/4 cup broth
1 green bell pepper, sliced
1 red bell pepper, sliced
4 ounces mushrooms, sliced
1 1/2 cups broccoli
1 1/2 cups Chinese eggplants, cut
1 cup red onion, sliced
1/2 cup water chestnuts (or both!) or 1/2 cup bamboo shoot (or both!)

  • heat a wok or large pan over med. heat with the coconut milk. whisk in 2 tbs curry paste. cook for a few minutes until hot and combined.
  • add fish sauce, soy sauce, brown sugar, lime juice and water (you can taste before adding the water, you might not want it!). add more curry if you want now.
  • add veggies and bring to a boil. reduce and simmer about 10 mins, or until the tenderness you like.
  • serve over sticky rice.

Quick and easy 30 minute Thai curry recipe full of flavour!

4 boneless skinless chicken thighs
1 tbsp Mae Ploy Thai red paste
1 shallot (diced)
2 garlic cloves (minced)
1 tsp minced ginger
1 tin coconut milk (500ml)
1 cup green peas
½ cup green beans
½ red pepper
½ green pepper
¼ cup thai basil
¼ cup coriander
2 kaffir lime leaf (cut into strips)

Steps:

  • Wash your vegetables. Slice your peppers into medium strips and your green beans in half or quarters. Dice the shallot and mince the garlic. Set everything aside into separate bowls for ease.
  • Cut the kaffir lime leaves into strips and roughly chop the coriander. The thai basil can remain whole.
  • Wash your chicken then dry and use a meat mallet to lightly tenderise the meat. Then slice into strips discarding of any excess fat.
  • Heat oil in your pan and fry the chicken until white all over. Next add the paste and the chopped shallot, minced ginger and garlic. Continue to stir and sauté until the onion is limp and golden - about 4 minutes.
  • Add the coconut milk to the pan stir and season with salt and pepper. Cover and leave on high and allow to come to the boil.
  • When boiling turn the heat down to medium/low and add your vegetables and leave to simmer for 10/15 mins until the vegetables are to your taste.
  • Just before turning off the heat add your fresh herbs and kaffir lime leaf and 3-4 drops of fish sauce. Mix and leave for a further 2-3 minutes and your curry is ready to go!

2 tablespoons roughly chopped fresh cilantro leaves and stems
2 tablespoons neutral oil, such as canola
1 tablespoon grated fresh ginger
1 tablespoon roughly chopped lemongrass (from root end)
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon shrimp paste
10 cloves garlic
8 medium red chiles, such as Fresno
4 small shallots, halved
1 Sri Lankan (kaffir) lime leaf, torn into pieces (see Cook's Note)
Kosher salt and freshly ground black pepper
4 tablespoons canola oil
2 pounds flank steak, thinly sliced against the grain

1 yellow onion, thinly sliced into strips
1 green bell pepper, sliced into strips
1 red bell pepper, sliced into strips
Two 14-ounce cans coconut milk
1 cup low-sodium chicken broth
2 tablespoons fish sauce
3 tablespoons roughly chopped fresh cilantro
2 tablespoons roughly chopped fresh Thai basil
1 tablespoon roughly chopped fresh mint

Steps:

  • For the red curry paste: In a food processor, combine the cilantro, oil, ginger, lemongrass, coriander, cumin, shrimp paste, garlic, red chiles, lime leaf, 1 teaspoon salt and 1 teaspoon pepper. Pulse to a consistent paste.
  • For the curry: Heat 2 tablespoons of the oil in a large Dutch oven over medium heat. Add the curry paste and cook, stirring well, until aromatic, about 2 minutes. Transfer to a bowl and set aside. Add the remaining 2 tablespoons oil to the pot and increase the heat to high. Sprinkle the flank steak with a pinch of salt, then add it to the pot; cook for 3 to 4 minutes. Remove the steak and add the onions and peppers; cook until tender, 2 to 3 minutes. Add the coconut milk, bring to a gentle boil, then add the curry paste back to the pot; stir well. Reduce the heat and simmer for about 15 minutes. (If the coconut milk breaks and separates, don't worry: it will come back together to a smooth consistency.) Add the chicken broth and fish sauce, and continue simmering until the sauce has a nice, gravy-like consistency, 12 to 15 minutes. Return the beef to the pot and finish with the cilantro, basil, mint and lime juice. Taste and adjust the seasoning.

1 kg Pork Shoulder (cut into 1 1/2 inch strips)
6 tbsp Water
4 tbsp Canola oil
4 tsp Cornstarch
2 cup Water
2 tbsp Lime juice
2 tsp Kosher salt
4 Japanese Eggplants (cut into 1 inch chunks)
2 cup Coconut cream
1/2 cup Red curry paste
2 tbsp Brown sugar or Palm sugar
1.5 cups Butternut squash (diced)
2 cups Coconut milk (mixed with 2 cups of water)
4 Red Thai Chiles (sliced, seeds removed)
2 cup Thai basil leaves
12 Lime leaves (thinly sliced)
4 tbsp Fish sauce

Steps:

  • In a large mixing bowl combine water, oil, cornstarch and salt. Add the sliced pork shoulder to the bowl and mix well. Cover and marinate for at least 2 hours or overnight.
  • In a medium bowl, stir together water, lime juice and salt. Add eggplant chunks to the bowl and soak to prevent the eggplant from turning brown. Set aside. Drain and rinse before cooking.
  • In a large wok over high heat, heat the coconut cream until it bubbles, 2 to 3 minutes. Add the red curry paste, brown sugar, pork, and squash and stir to mix. Reduce the heat to medium-low and simmer, stirring often, for approximately 5 minutes. Add the thin coconut milk and continue cooking, stirring for 15 minutes.
  • Add the eggplant and cook, stirring constantly to fully submerge the eggplant to prevent from discolouring. Add the chiles, Thai basil leaves, lime leaves and fish sauce. Mix well and cook for another minute. Season to taste then remove from the heat.
  • Serve Thai Red Pork Curry with steamed rice.
