1 cup gold tequila
1 small jalapeno, halved
3 oz orange juice
1 ½ oz Spicy Tequila
½ oz grenadine syrup
1 slice orange, for garnish
1 slice jalapeno, for garnish
1 maraschino cherry, for garnish

Steps:

  • Pour the tequila into a small jar and add the jalapeno. Cover and let sit overnight or up to 2 days if you want it really spicy. Strain, discarding the jalapeno. Cover and store in a cool, dark place.
  • Fill a tall glass with ice. Pour in the orange juice and spicy tequila. Slowly pour in the grenadine and watch it sink to the bottom; do not stir. Garnish with the orange and jalapeno slices and a cherry.

2 tablespoons grenadine

Steps:

  • Pour tequila into a Mason jar. Add pineapple and jalapeno. Screw lid on and leave in a cool, dark place for 48 hours. Strain tequila and discard pineapple and jalapeno.
  • Combine orange juice and 2 1/2 ounces of tequila in a cocktail shaker with ice. Shake and pour into 2 glasses.
  • Slowly pour 1 tablespoon grenadine into each glass.

Everyone loves wings and this recipe for my Drunken Chicken Wings is a delicious new way to enjoy one of America's favorite dishes. In an untraditional sort of way.

2 ½ pounds chicken wings (tips trimmed off saved for soup.)
⅔ cup tequila
½ cup fresh lime juice
3 tablespoons sugar
1 tablespoon olive oil
2 teaspoon sea salt
¼ teaspoon freshly ground black pepper
½ teaspoon red pepper flakes (or hotter if you like)

Steps:

  • Start by combining all the ingredients to make the marinade in a small bowl, mixing well.
  • Place the chicken wing sections in a large bowl or large ziplock bag, then the marinade. Mix the wings in the marinade so they all get coated.
  • Cover the bowl or seal the ziplock bag and refrigerate for 4-6 hours. You can marinate the wings overnight if needed. (bone-in and skin-on chicken is okay to marinate overnight)
  • Preheat oven to 400°.
  • Line a baking pan with foil.
  • Arrange the chicken wings in a single layer in the pan, and pour the marinade evenly over all the wings
  • Bake until meat is well browned and pulling away from the bone, about 1 hour to 1 hour and 15 minutes.
  • Any marinade that is on the tray with the fully cooked chicken wings is safe to use since its been a subjected to a high temperature.

This is a recipe that I made up for a bunch of hungry guys that where watching football one afternoon with my husband. They loved them so much that they actually paid more attention to the wings than the game for 15 minutes! For milder sauce use mild chili sauce instead of Thai. Serve with celery and ranch or blue cheese dressing.

1 (10 ounce) jar prepared jalapeno pepper jelly
1 cup orange juice
1 cup tequila
2 pounds chicken wings
½ gallon vegetable oil for frying
½ cup butter
¼ cup Thai-style chili sauce

Steps:

  • Whisk jalapeno pepper jelly, orange juice, and tequila together in a bowl until smooth; pour into a large resealable plastic bag. Add chicken wings, coat with the marinade, squeeze to remove excess air, and seal the bag. Marinate in the refrigerator 4 hours to overnight.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Remove chicken wings from the marinade and shake to remove excess moisture. Blot wings dry with paper towel. Discard the remaining marinade.
  • Fry chicken wings in batches in hot oil until golden brown on the outside and no longer pink on the inside, 10 to 15 minutes per batch. Drain on a wire baking rack.
  • Melt butter in a saucepan over medium heat. Stir chili sauce into the melted butter until the color is consistent; pour into a large stainless steel bowl. Add chicken wings and toss to coat in the sauce.

2 cups Pomegranate juice
1 cup granulated sugar
the peel of 1 orange
3 ounces (1/3 cup) fresh-squeezed orange juice
2 ounces (1/4 cup) blanco tequila
1 ounce (2 tablespoons) homemade grenadine
an orange wheel and a maraschino cherry for garnish

Steps:

  • make the grenadine. Combine pomegranate juice and sugar in a small saucepan and bring to a simmer over medium heat. Stirring until sugar is dissolved. Let simmer for 5 minutes. Add the orange peel and let simmer 5 more minutes or until thick. Remove from heat and let cool. Remove orange peel and pour into a tightly-sealed container. Grenadine will keep for 1 month in the refrigerator.
  • make the tequila sunrise. Combine orange juice and tequila in a cocktail shaker filled with ice. Shake vigorously for 15 seconds. Strain into a cocktail glass. Add grenadine by spooning into the bottom of the glass. Garnish with the orange wedge and cherry and enjoy!

1½ oz (100 percent blue agave) Silver Tequila
4 oz fresh orange juice

  • In a cocktail shaker or glass, muddle the jalapeño and lime.

1/2 cup extra virgin olive oil
1/4 cup tequila
1/4 cup low sodium soy sauce
1 whole lime juiced, about 1/4 cup
1/3 cup diced shallots
2 cloves garlic, crushed
1 whole flank steak
1/2 tablespoon kosher salt
1/2 tablespoon coarse black pepper
1/2 tablespoon granulated garlic
1 whole red pepper, seeded and sliced
1 whole yellow pepper, seeded and sliced
1 whole green pepper, seeded and sliced
1 medium red onion, thinly sliced
1 whole jalapeño, thinly sliced
1 package corn or flour tortillas
1/2 cup sour cream
1/2 cup diced cilantro
1 whole avocado, sliced
2 whole limes, sliced in wedges

Steps:

  • Combine all marinade ingredients in a 1 gallon baggie and stir to incorporate. Trim the silver skin and excess fat off the flank steak and place in the baggie. Remove the air and seal tightly. Marinate in the refrigerator for two hours.
  • Prepare the grill for two zone cooking, or direct/indirect using lump charcoal. Target 500 degrees Fahrenheit over the direct heat. Place cast iron pan over the indirect side while the grill warms up.
  • Remove the flank steak from the marinade and discard marinade. Combine the salt, pepper and garlic in a small bowl and season the steak.
  • Start by placing the flank steak over direct heat. As soon as you place the flank steak over direct heat, drop all the peppers and onions into the cast iron pan and stir. It will sear and smoke.
  • While the peppers and onions cook, sear the steak for four minutes or until you see good grill marks over the direct heat. Flip the flank steak and sear over direct heat for an additional 4 minutes.
  • Move the flank steak to the indirect side. At the same time, using high heat gloves, move the cast iron pan over the direct heat and continue to stir the peppers and onions.
  • Cook the flank steak over indirect heat until the internal temperature of the flank steak at the thickest part reads 125 degrees F, about 4 - 6 more minutes. Remove the flank and let it rest for 10 minutes.
  • While flank is cooking and resting, continue stirring the peppers and onions until they are soft. This should take a total time of 16 - 18 minutes. Likely the flank will be resting while the veggies finish up.
  • Remove the cast iron from the grill when the peppers and onions are soft. Slice the flank steak against the grains in thin slices and serve with your favorite toppings.
