1/2 cup reduced-fat mayonnaise
2 tablespoons chili sauce
2 tablespoons chopped fresh parsley
2 tablespoons grainy mustard
2 tablespoons chopped gherkins or pickles
Hot sauce, such as Tabasco

Steps:

  • In a small bowl, combine mayonnaise, chili sauce, parsley, mustard, and chopped gherkins (or pickles). Season with hot sauce, as desired.

1 teaspoon finely chopped shallots
1 teaspoon chopped pickled hot peppers
1 teaspoon chopped parsley
1 cup unseasoned mayonnaise, homemade if possible
Cider vinegar to taste
Salt to taste
Cayenne pepper to taste

Steps:

  • Add pickles, shallots, hot peppers and parsley to mayonnaise. Let stand at least an hour. The vegetables will season the mixture.
  • Adjust seasoning with vinegar, salt and cayenne.
