Spicy Szechuan Beef Recipe image

This dish is hot enough to make you sit up and take notice, but the heat isn't so powerful that it overwhelms the flavors from the meat and veggies.

Time 21m

Number Of Ingredients 12

8-ounce sirloin steak
1 tablespoon cornstarch
2 tablespoons soy sauce
2 teaspoons mirin, divided
3 tablespoons of chili oil, divided
1 teaspoon brown sugar
1/2 teaspoon salt
1 red bell pepper
1 carrot
1/2 cup beef broth
1 teaspoon crushed red pepper
1 teaspoon Szechuan peppercorns

Steps:

  • Freeze the steak in the freezer overnight to make for easier slicing.
  • Take the steak out of the freezer 1 hour before you plan to cook it, and slice it into thin strips.
  • Place the steak strips into a large bowl along with the cornstarch, soy sauce, 1 teaspoon of mirin, 1 tablespoon of chili oil, brown sugar, and salt. Mix well and let the steak marinate for 15 minutes.
  • Slice the red pepper and carrots into thin matchsticks.
  • In a large pan, add 1 tablespoon chili oil and turn the heat to medium-high.
  • Cook the sliced red pepper and carrots for 3 to 4 minutes, then set aside.
  • Cook the marinated steak in 1 tablespoon of chili oil (in batches, if need be) for 3 to 4 minutes, stirring constantly.
  • Turn down the heat to medium-low and add the cooked vegetables, mix these together with all of the cooked steak strips.
  • Add the beef broth, 1 teaspoon mirin, the crushed red pepper, and the Szechuan peppercorns to the pan. Cook for 5 minutes until slightly thickened.
  • Serve the Szechuan beef over rice. If desired, garnish with spring onions and sesame seeds.

SPICY SICHUAN BEEF STIR-FRY

Spicy Sichuan Beef Stir-Fry image

This beef and vegetable stir-fry takes its cues from dry fried Sichuan beef, which calls for browning strips of beef over high heat to ensure juicy, flavorful meat. Hot cherry peppers and spicy black bean sauce give this dish its fire, but you can use sweet black bean sauce for a mellower version. To get closer to the original dish, seek out Sichuan peppercorns.

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 12

1 pound flank steak, halved lengthwise and thinly sliced against the grain
2 tablespoons low-sodium soy sauce
2 teaspoons cornstarch
1 English cucumber, peeled, halved lengthwise, seeded and cut into 3/4-inch chunks
2 stalks celery, chopped, plus celery leaves for topping
3 tablespoons Asian black bean sauce
4 pickled hot cherry peppers, chopped, plus 2 tablespoons brine
2 tablespoons vegetable oil
2 cloves garlic, minced
1 tablespoon minced fresh ginger
1 teaspoon mixed peppercorns
4 cups cooked jasmine rice

Steps:

  • Toss the steak with 1 tablespoon soy sauce and 1 teaspoon cornstarch in a large bowl. Combine the cucumber and celery in a separate bowl; set aside.
  • Stir the black bean sauce with the remaining 1 tablespoon soy sauce and 1 teaspoon cornstarch, the cherry pepper brine and 1/4 cup water in a small bowl; set aside.
  • Heat 1 tablespoon vegetable oil in a large nonstick skillet over high heat. Add the cucumber-celery mixture and cook, undisturbed, 1 minute. Toss and cook, stirring occasionally, until crisp-tender, 1 to 2 minutes. Transfer to a bowl.
  • Heat the remaining 1 tablespoon oil in the same skillet. Add the steak in a single layer. Cook until browned on the bottom, about 1 minute. Toss and continue cooking, stirring, until just a few pink spots remain, 1 more minute. Add the garlic, ginger and peppercorns and cook, stirring, until the meat is cooked through, 1 to 2 more minutes. Add the black bean sauce mixture and cherry peppers and bring to a boil. Cook until glossy, about 1 minute. Toss in the cucumbers and celery.
  • Serve the stir-fry over rice. Top with celery leaves.

AMAZING Authentic Szechuan Sauce! Use as an easy delicious stir-fry sauce or flavorful marinade - preservative-free, msg free, gluten-free adaptable, vegan and full of amazing flavor! Can be made in 5 minutes! Keeps for 10 days in the fridge!

Provided by Sylvia Fountaine

Categories     sauce

Time 10m

Yield ½ cup

Number Of Ingredients 11

½ -1 teaspoon Szechuan Peppercorns (or sub black peppercorns)
1/4 cup soy sauce ( of Gluten-Free Liquid Aminos) see notes.
3 tablespoons honey (or sub maple syrup, coconut sugar, brown sugar or sugar alternative)
1 tablespoon sesame oil
1 tablespoon rice wine vinegar (or black vinegar)
1 tablespoon Chinese cooking wine (shaoxing) or mirin (both optional)
3 garlic cloves, finely minced (use a garlic press)
2 teaspoons fresh ginger, finely minced ( or use ginger paste)
1 tablespoon garlic chili paste (or sambal oelek) more for more spicy or sub 1 teaspoon chili flakes
½ teaspoon Chinese Five Spice
optional- 2-3 teaspoons corn starch, to thicken, see notes.

Steps:

  • Toast szechuan peppercorns in a hot dry skillet over medium heat, until fragrant, about 1-2 minutes. Crush.
  • Place all ingredients in a medium bowl or small jar and whisk until well combined.
  • If using as a stir-fry sauce, and you would like to thicken it, whisk in 2 teaspoons cornstarch.
  • If using as a marinade, forgo the cornstarch and make sure to season what you are marinating ( chicken, tofu, beef) with salt. The marinade alone will probably not be salty enough.
  • If making a stir-fry, try adding a few dry Chinese or Arbol chilies (5-10) to the stir-fry, right before adding the Szechuan Sauce. Do not eat the chilis. ????

Categories     Main

Time 30m

Number Of Ingredients 21

1 flank steak ((about 1 lbs / 450 g), cut against the grain to 1/8" (4-mm) slices (*Footnote 1))
1 egg (, beaten)
1 tablespoon peanut oil ((or vegetable oil))
1/2 teaspoon salt
3 tablespoons Chinkiang vinegar ((*Footnote 2))
2 tablespoons Shaoxing wine
1 tablespoon light soy sauce ((or soy sauce))
1 tablespoon dark soy sauce ((or soy sauce) (*Footnote 3))
1 tablespoon homemade chili oil ((Optional))
1 tablespoon Doubanjiang ((fermented chili bean paste) (*Footnote 4))
1/2 cup beef stock ((or water))
3 tablespoons sugar
1 tablespoon cornstarch
1/3 cup cornstarch
1/3 cup peanut oil ((or vegetable oil))
1/4 white onion (, sliced)
1 bell pepper (, thinly sliced (I used half red and half green))
4 Chinese dried chili peppers
1 tablespoon ginger (, minced)
1 tablespoon garlic (, minced)
Roasted sesame seeds (for garnish (Optional))

Steps:

  • Beat the egg in a medium sized bowl. Add the sliced beef, vegetable oil, and salt. Mix well and let marinate for 15 to 20 minutes while preparing the other ingredients.
  • Combine everything for the sauce in a big bowl and mix well.
  • When you're ready to cook, drain the extra liquid from the bowl of beef. Add the cornstarch. Stir to coat the beef, until it forms an uneven coating with a little dry cornstarch left unattached.
  • Heat oil in a large nonstick skillet (or a cast iron pan) over medium high heat until hot. Add the beef and spread into a single layer in the skillet. Separate the beef pieces with a pair of tongs or chopsticks.
  • Cook without touching the beef for 2 to 3 minutes, or until the bottom turns golden. Flip to brown the other side, 1 to 2 minutes. Transfer the beef to a big plate and remove the pan from the stove. Let cool for 2 to 3 minutes.
  • Place the pan back onto the stove and turn to medium heat. You should still have 1 to 2 tablespoons of oil in the pan. If not, add more.
  • Add the onion, pepper, and dried chili pepper. Cook and stir for 1 minute.
  • Add the ginger and garlic. Stir a few times to release the fragrance.
  • Stir the sauce again to dissolve the cornstarch completely. Pour into the pan. Stir and cook until it thickens a bit.
  • Add back the beef pieces. Stir to coat beef with sauce.
  • Transfer everything to a plate immediately and garnish with roasted sesame seeds, if using.
  • Serve hot over steamed rice as a main dish.

  • In a medium bowl, mix the ground beef with the hoisin, peanut butter, soy sauce and sriracha by hand, until smooth. Form into 6 patties that are just larger than the buns. Refrigerate until ready to grill.
  • Preheat the grill to high heat. Slice all the veggies into thin even julienne-style pieces. Mix the soy sauce, sherry, black vinegar, garlic, ginger and Sriracha together in a small bowl. Whisk in the cornstarch and have another 1/2 cup of water ready on the side.
  • Preheat a wok (or large skillet) on high heat. Add a scant amount of sesame oil, and stir fry the veggies in small batches for 30-60 seconds until just barely cooked and slightly charred. (You won't get char marks if you use too much oil or add all the veggies at once.) Turn off the heat and add the liquid mixture. Whisk to thicken. If the sauce is too thick, add a little water until you reach your preferred thickness. Mix in the stir fried veggies and peanuts.

TOP 9 CHINESE SICHUAN RECIPES

  • Kung Pao Chicken. This is the popular dish made with chicken, peanuts, and hot chiles, that is named after a generic government official or kung pao. Feel free to turn the heat up or down on this dish by adjusting the amount of chiles used.
  • Mapo Tofu (Mapo Doufu) Tofu and a bit of ground meat are dressed up with spicy seasonings in this popular dish. The name mapo doufu means "old pockmarked grandmother bean curd" in honor of the old woman who is reputed to have invented the dish.
  • Hot and Sour Soup. Unlike other Szechuan recipes, this popular soup gets its heat from white pepper (the sour comes from vinegar). Tofu adds extra protein to this warming soup that is reputed to be good for colds.
  • Chinese Green Beans. This popular Szechuan dish is a staple at many Chinese restaurant buffets. Instead of chili paste, feel free to add 4 to 6 small dried red chilis if desired.
  • Twice Cooked Pork (Hui Guo Rou) In this Szechuan dish, pork is first simmered in a broth of water, rice wine, and ginger and then stir-fried along with vegetables like leeks and red bell pepper, chili paste, sweet bean paste, and dark soy sauce.
  • Crispy Szechuan Beef (Gan Bian Niu Rou Si) This recipe uses a technique known as "dry-frying" where the beef is fried for several minutes, making it extra chewy and crispy.
  • Chicken With Orange Peel. Poultry and citrus are a popular combination in western China. The linking of hot chiles with Szechuan peppercorn produces the "numbing fire" that gives the cuisine its fiery reputation.
  • Bang Bang Chicken (Bang Bang Ji) Sweet, sour, and salty come together in this popular dish, also known as strange flavor chicken. Chunky peanut butter can be used in place of sesame paste.
  • Spicy Szechuan Eggplant. Eggplant and ground pork are stir-fried with chile paste and other seasonings in this spicy Szechuan recipe. For a vegetarian version, leave out the ground pork and increase the amount of eggplant.
