1 1/2 tablespoons minced garlic
1 1/2 tablespoons minced fresh ginger
2 scallions, minced (white and green parts)
2 tablespoons dry sherry
2 tablespoons Splenda sugar substitute
2 tablespoons soy sauce
1 tablespoon water
2 tablespoons peanut oil or 2 tablespoons canola oil
1 1/2 lbs green beans, trimmed and rinsed
2 tablespoons water

Steps:

  • Stir-Fry Sauce: Combine the stir-fry sauce ingredients in a small bowl.
  • Set aside.
  • Stir- Fry: In a large skillet or wok.
  • Heat the oil and stir-fry the green beans,until they are barely crisp-tender, about 2 minutes.
  • Add water and continue stir-frying for another 2 minutes, until the beans are crisp-tender and the water has evaporated.
  • Add the sauce and continue stir-frying for 5 or 6 more minutes.
  • Until the beans are tender,BUT, not over cooked.
  • Serve immediately.

2 teaspoons chili garlic paste
2 tablespoons vegetable oil
6 cups fresh green beans, trimmed
1 teaspoon sesame seed

Steps:

  • In medium bowl, mix stir-fry sauce and chili garlic paste; set aside.
  • In 12-inch nonstick skillet, heat oil over medium-high heat until very hot. Add green beans. Toss in hot oil and cook 5 to 7 minutes, stirring every minute, until bright green and crisp-tender (mixture may spatter during cooking). Beans will sizzle, blister and brown in spots. Remove from heat.
  • Remove beans from skillet with slotted spoon; add to sauce mixture and toss to coat. Place in serving bowl; sprinkle with sesame seed.

¼ cup water
1 tablespoon minced ginger
2 cloves garlic, minced
1 teaspoon sesame oil
2 tablespoons soy sauce
1 tablespoon rice vinegar
½ teaspoon white sugar
¼ teaspoon red pepper flakes

Steps:

  • Combine green beans and water in a skillet over medium-high heat. Cover and cook, stirring occasionally, until beans are tender crisp, 4 to 5 minutes. Add ginger, garlic, and sesame oil; cook, stirring frequently, until garlic is lightly browned, 1 to 2 minutes.
  • Mix soy sauce, rice vinegar, sugar, and red pepper flakes together in a small bowl. Pour over beans and cook until sauce thickens enough to coat beans, 3 to 5 minutes.

10 oz / 300 g green beans ((Note 1a))
7 oz / 220 g pork mince ((Note 1b))
1/2 small onion, finely chopped (about 1/2 cup)
2 tsp finely chopped garlic (2 cloves) ((Note 2))
2 tsp ginger, finely chopped ((Note 2))
2 1/2 tbsp peanut oil (or vegetable or canola)
1 tbsp dark soy sauce (Note 3)
1 tbsp Chinese cooking wine (Note 4 for subs)
1 tsp sugar
1 1/2 tsp + Chilli Garlic Sauce (Note 5)

Steps:

  • Mix Sauce ingredients in a bowl.
  • Trim the tough end of the beans, then chop into 2 - 2.5cm / 4/5 - 1" pieces.
  • Charred Beans: Heat 1 1/2 tbsp oil in a heavy based skillet over high heat (I use cast iron) until smoking. Add beans, spread out to cover base. Leave for 1 minute. Quick stir, spread out, cook for 30 seconds. Stir, then leave for 30 seconds, then repeat once more (so 2 1/2 minutes in total cook time) until beans are charred but tender crisp (not withered and floppy). Remove into bowl.
  • Turn heat down to medium high, add 1 tbsp oil. Add onion, then garlic and ginger. Cook for 1 minute until edges of onion are golden.
  • Turn heat back up to high. Add pork and cook, breaking it up as you go. Cook for 2 minutes until the pork is cooked through, then add Sauce. Cook for 30 seconds, then add beans and stir for another 30 seconds.
  • Serve over rice. Garnish with slices of large red chilli (it's mild), entirely optional. To eat, mix the pork into the rice then eat it with a spoon - forget chopsticks for this one! (For a low carb, low cal option, try Cauliflower Rice)

1 pound green beans, trimmed
Salt to taste
1 tablespoon soy sauce, low-sodium if desired
1 tablespoon Chinese rice wine or dry sherry
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
1/4 teaspoon red pepper flakes
1 tablespoon peanut oil or canola oil

Steps:

  • Bring a pot of water to a boil, season with salt and add the green beans. Boil 1 minute, drain and rinse with cold water, then place on a kitchen towel to dry thoroughly. (If vegetables aren't dry when you add them to the hot wok or pan, they will splutter and braise instead of stir-frying.) Place within reach of your wok or pan.
  • Combine the soy sauce and wine or sherry in a small bowl or measuring cup and place within reach of your wok or pan. Place the garlic, ginger and red pepper flakes in another small container near the burner.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and swirling the pan. Add the garlic and ginger, stir-frying for no more than 10 seconds, and then add the green beans. Toss together, then add the soy sauce and sherry and stir-fry for one to two minutes, until the beans are crisp-tender. Remove from the heat and serve.

Few dishes are as simple as the stir-fry, which just requires some chopping, a few seasonings and a blistering hot pan. This sweet and spicy stir-fry is a light meatless meal, loaded with fresh green beans, corn and tofu. Ginger, garlic and jalapeño provide a little heat.

One 14-ounce package firm tofu, sliced about 1/4 inch thick
1 tablespoon soy sauce
1 tablespoon Shao Hsing rice wine or dry sherry
2 teaspoons dark Asian sesame oil
1/4 to 1/2 teaspoon salt (to taste)
1/4 to 1/2 teaspoon ground pepper, preferably white pepper
1/4 teaspoon sugar
2 tablespoons peanut oil or canola oil
1 tablespoon minced garlic
1 tablespoon minced ginger
1 jalapeño, seeded and minced
1/2 pound baby green beans, trimmed and broken in half if very long
Kernels from 2 ears of corn
2 tablespoons minced scallions
1 cup roughly chopped cilantro

Steps:

  • Cut the tofu into 1/4-inch matchsticks, and place them on paper towels. Place another paper towel on top, and prepare the remaining ingredients.
  • In a small bowl or measuring cup, combine the soy sauce, rice wine or sherry, and the sesame oil. Combine the salt, pepper and sugar in another small bowl. Have all the ingredients within arm's length of your pan.
  • Bring a medium saucepan of lightly salted water to a boil, add the green beans and blanch one minute. Transfer the beans to a bowl of cold water, drain and dry on a kitchen towel.
  • Heat a 14-inch flat-bottomed wok or 12-inch steel skillet over high heat until a drop of water evaporates from the surface within a second or two. Add 1 tablespoon of the oil to the sides of the pan and tilt the pan to distribute. Add the tofu. Stir-fry one to two minutes until it begins to color. Add the garlic, ginger and jalapeño, and stir-fry for no more than 10 seconds.
  • Add the remaining oil and then the green beans, corn and scallions. Stir-fry for one minute. Add the salt, pepper and sugar, and toss together. Add the soy sauce mixture. Cover and cook 30 seconds. Uncover, add the cilantro and stir-fry for another 30 seconds to a minute until the green beans are crisp tender. Remove from the heat and serve.

For the Stir-Fry:
4 to 4 1/2 cups fresh green beans
2 to 3 strips bacon
1 shallot (or 1/4 cup purple onion, finely chopped)
4 cloves garlic (finely chopped or minced)
1/2 teaspoon dried crushed chili
Optional: 1 red bell pepper (chopped up into small pieces)
For the Stir-Fry Sauce:
1/2 teaspoon shrimp paste
3 tablespoons soy sauce
2 teaspoons dark soy sauce
1 tablespoon fish sauce (plus more to taste)
1/2 tablespoons brown sugar

Steps:

  • Combine the stir-fry sauce ingredients together in a cup, stirring well to dissolve the sugar. Set aside.
  • Fry the bacon in a wok or large frying pan until medium-done. Remove from heat and pour off half the fat .
  • While letting the bacon cool, prepare the beans by snipping off the ends and cutting them into 2- to 3-inch lengths. Prepare the other ingredients.
  • Remove bacon and cut it into small pieces. We follow the Asian method here by using a pair of clean scissors-makes the job quick and easy!
  • With half the bacon fat still in the wok/pan, place over medium-high heat. Add the bacon pieces, shallot/onion, and garlic, plus 1 to 2 tablespoons water-just enough to get a good sizzle. Stir-fry until garlic is fragrant (1 minute).
  • Add the beans, plus the red pepper (if using) and chili. If needed, also add a little more water to keep the ingredients frying nicely (1 to 2 tablespoons). Stir-fry 2 to 3 minutes.
  • Add the stir-fry sauce, stirring well, then cover with a lid and let cook 5 to 7 minutes, stirring occasionally.
  • For this dish, it is best if the beans are chewy rather than soft. Try one-if it's not tender enough, continue stir-frying another 1 to 2 minutes.
  • Taste-test the stir-fry for flavor, keeping in mind that this dish should taste primarily salty and spicy (the saltiness is balanced out when served with plain rice). We usually add 1 more tablespoon fish sauce as well as another sprinkling of fresh or dried chili. If it's too salty for your taste, add a squeeze of lime juice.
  • Serve with plenty of plain rice and ENJOY the strong flavors of this dish!

½ yellow onion, chopped
1 teaspoon minced garlic
1 pound fresh green beans, trimmed and halved
¼ cup soy sauce
3 tablespoons nuoc mam (Vietnamese fish sauce)
¼ cup water
1 medium tomato, diced
salt and pepper to taste

Steps:

  • Heat the oil in a skillet over medium heat. Add the onion and garlic; cook and stir for a few minutes then add the green beans. Stir to coat with the flavors in the pan. Steps:

  • Cook untrimmed beans in a 6- to 8-quart pot of boiling salted water, uncovered, stirring occasionally, until just tender, 3 to 5 minutes. Transfer with tongs to a large bowl of ice and cold water to stop cooking, then drain in a colander and pat dry with paper towels. Trim beans and cut crosswise into 3/4-inch pieces.
  • Meanwhile, pulse peanuts in a food processor until about half of peanuts are finely ground and remainder are in very large pieces (do not grind to a paste).

1 pound fresh green beans, (trimmed)
Ranch dressing

Steps:

  • In a medium bowl, whisk together flour, 1 teaspoon salt, 1 teaspoon garlic powder, 1/2 teaspoon black pepper, and cayenne pepper.
  • In another medium bowl, stir together 1 1/2 cups water, 1 teaspoon salt, 1 teaspoon garlic powder, and vinegar. In a small bowl whisk together egg and baking powder. Whisk into water mixture.
  • Pour 2 inches of oil into a Dutch oven. Heat between 350-375 degrees.
  • In batches, dip green beans in egg mixture and then dredge in flour mixture. Dredge in egg mixture a second time and then in flour mixture a second time.
  • Fry beans for 3 to 4 minutes or until golden brown. Season to taste with salt and serve with Ranch dressing.

2 Tbsp toban djang (Chinese Chili Bean Sauce)
2 Tbsp oyster sauce or Vegetarian oyster sauce
1 tsp sugar
1 Tbsp cooking oil (only if you are using center cut bacon)
6 slices of thick center cut or 4 slices of thick cut bacon, cut into bite sizes
3 cloves garlic, chopped
1 small shallot, chopped (You can substitute to 1/4 of small onion)
1 lb long beans, cut into 2-inches long (You can substitute to green beans)
1/4 cup chicken stock

Steps:

  • In a small mixing bowl, combine all the ingredients for the sauce. Set aside.
  • Heat a wok over high heat, add oil and bacon. Cook the bacon until the edges are crispy and enough oil's released.
  • Add chopped garlic and shallot. Stir fry for 30 seconds to 1 minute or until you can smell the fragrance.
  • Before the garlic and shallots get burn, pour the sauce mixture. Stir fry all together for 30 seconds to 1 minute. Be careful not to burn the sauce.
  • Add long beans and chicken stock. Now, cover with a lid and let them steam for 5 to 6 minutes. Stir occasionally. If don't have a lid for your wok, add additional 1/4 cup water. Stir fry for 5 to 6 minutes or until all the moisture's evaporated.
  • Serve on a serving plate and enjoy! I recommend to serve with my Zesty Prime Ribs and Honey Butter Smashed Potato!

10 ounces mushrooms (shiitake, white or cremeni)
1 pound green beans
1 clove fresh garlic
1 tablespoon crushed red pepper
FOR THE SAUCE
2 cloves garlic
1 tablespoon fresh diced ginger root
1 1/2 teaspoons sesame oil
2 tablespoons rice vinegar
3 tablespoons tamari sauce
1/ 4 cup filtered water
1 tablespoon arrowroot powder

Steps:

  • clean and trim the ends off of green beans, and clean and slice the mushrooms.
  • combine the sauce ingredients together - a small mason jar works well for this.
  • heat the oil in a wok or skillet over high heat. Once the pan is hot, add the pork and cook until it begins to turn brown approximately 5 to 8 minutes.
  • while the meat is cooking, bring a small saucepan of water to a boil and add the green beans. Turn the heat off and let them cook in the water for 3 to 5 minutes they will turn bright green. At this point drain them and rinse them in cold water.
  • add the mushrooms to the pan and cook them with the meat until they soften.
  • stir in the sauce and cook until everything is heated (about 2 minutes), add the red pepper flakes.
