- Heat oven to 350 degrees F. Spray 13x9 glass baking dish with nonstick cooking spray. In very large bowl stir together fiesta cheese soup, cream of chicken soup, sour cream and 1/4 cup melted butter; mix well. Stir in Simply Potatoes and ham. Spread into baking dish.
- In small bowl stir together remaining 1/4 cup melted butter and crushed crackers. Sprinkle crackers evenly over top of Simply Potatoes.
- Bake, uncovered, 50 to 55 minutes or until edges are bubbly and center is heated through.

- Preheat oven to 425 degrees. Grease a large baking sheet with one tablespoon olive oil.
- Place the potatoes in a large bowl. Add 1-2 tablespoons more olive oil, along with chili powder, paprika, cumin, cayenne and salt and pepper. Toss well to coat potatoes in oil and seasonings.
- Spread the potatoes in an even layer on prepared baking sheet. Bake for 30-40 minutes (depending on size of potato pieces), turning once halfway through cooking. Garnish with fresh cilantro before serving.

- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with nonstick cooking spray. Place spreadable cheese in medium bowl. Gradually stir in half-and-half and chiles; blend well. Set aside.
- In sprayed baking dish, layer potatoes, broccoli and ham. Pour spreadable cheese mixture over top; sprinkle with Cheddar cheese. Cover with foil.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Bring a large pot of water to a boil. Add sliced potatoes and cook until almost tender, 5 to 10 minutes. Transfer to a colander and rinse with cold water until cool enough to handle. Drain well.

- Heat oven to 350°F. Spray 2-quart casserole with cooking spray.
- In 2-quart saucepan, melt 3 tablespoons of the butter over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper.
