Lime juice, cilantro, butter and a healthy dose of crushed red peppers, make these shrimps amazingly delicious!

2-3 Tablespoon Butter
2-3 cloves Garlic (chopped)
7 ounces Shrimp
½ Teaspoon Salt
¼ Teaspoon Black Pepper
2 Tablespoon Lime Juice
1 Tablespoon Cilantro (aka Coriander)
½ Tablespoon Red Chili Pepper Flakes
Lime Wedges (to decorate, optional)

Steps:

  • Heat up a skillet and melt your butter. Keep over a medium to low heat setting.
  • Stir in chopped garlic and sauté over a lower heat setting. The garlic shouldn't turn brown.
  • Stir in fresh shrimp and spread out in the pan. Keep on a medium heat setting.
  • Sauté shrimps for about 2 minutes and season with salt and black pepper.
  • Turn all the shrimps so that they get evenly cooked on all sides.
  • Finish cooking shrimp over a medium heat setting. Cook them until they look cooked through but still juicy. Don't overcook!
  • Take the pan from the heat and stir in lime juice.
  • Top with chopped fresh cilantro/coriander and crushed red pepper flakes.
  • You can garnish it too with lime wedges. The dish will look all the more delicious!

Few people I know have gone food hunting in Cambodia, so I was curious when Deb Winson, a New York-based food stylist, came back with an ecstatic report. ''Everything was so fresh and beautiful, and everything was so simple,'' she said. When I asked her to describe her favorite dish, she told me about a great preparation for shrimp cooked in lime. The ingredients were much as I expected: limes, sugar, salt, chiles and garlic, all common in Southeast Asian cooking. But the technique sounded unusual. The shrimp were not stir-fried, as you might expect, but instead were simmered in a very pungent sauce so that they took on strong flavor and still stayed juicy. This is my version.

About 1/2 cup lime juice (4 to 6 limes)
1/4 cup sugar
1 1/2 teaspoons salt, more to taste
2 tablespoons neutral oil, like canola or grape seed
1 teaspoon minced garlic
1/2 teaspoon crushed red chile flakes, or to taste
1 1/2 pounds peeled shrimp, or 3 pounds head-on shrimp, left unpeeled
Minced cilantro, for garnish

Steps:

  • In a small bowl, combine the lime juice, sugar and salt. Place oil in a 10- or 12-inch skillet, and turn the heat to high. A minute later, add the garlic and chile flakes and cook the garlic until it just begins to brown. Immediately add the lime juice mixture all at once, and cook until it reduces by half, or even more, 3 to 5 minutes. There should be only about 1/4 cup of liquid in the skillet, and it should be syrupy.
  • Add the shrimp, and cook over high heat. The shrimp will give off liquid of their own and begin to turn pink almost immediately. After about 2 minutes, stir contents of pan. Continue cooking, stirring occasionally until all the shrimp are pink, about 4 minutes total. Taste, adjust seasoning, garnish with cilantro and serve with rice.

1 avocado (split and pitted)

1/4 cup oil
1/4 cup water
1/2 cup chopped green onion
1/2 cup cilantro leaf
2 -3 garlic cloves (less if you're sensitive to garlicky things)
1/2 teaspoon salt
2 limes, juice of
1/2 cup sour cream
1 lb shrimp, peeled and deveined, tails removed
1 teaspoon chili powder, cumin, and southwestern seasoning
1/4 teaspoon cayenne pepper (more or less to taste)
2 -3 cups shredded green cabbage
8 small corn tortillas
1 -2 avocado
1 cup Cotija cheese, and additional cilantro for topping
8 lime wedges, for serving

Steps:

  • Pulse all the sauce ingredients except the sour cream in a food processor. When mostly smooth, add the sour cream and pulse until combined. Taste and adjust as needed. Set aside.
  • Heat a drizzle of oil a large skillet over medium high heat. Pat the shrimp dry with paper towels and sprinkle with the spices. Add the shrimp to the hot pan and saute for 5-8 minutes, flipping occasionally, until the shrimp are cooked through.
  • Toss some of the sauce (not all) with the cabbage until it the cabbage is coated to your liking. It should resemble a coleslaw - you want it to be enough sauce so the cabbage is weighed down a little bit. Use leftover sauce on top of the tacos or in other recipes.
  • To serve tacos, smash a spoonful of avocado on the tortillas, top with a few pieces of shrimp, top with coleslaw, and finish with Cotjia cheese, cilantro, and lime wedges.

2½ teaspoons chili paste
1½ tablespoons minced garlic
½ cup roughly chopped cilantro, (washed and dried)
1 pound medium-large raw shrimp ((about 31 to 35 per pound), peeled and deveined )
salt and freshly ground black pepper

Steps:

  • Make the sauce. Add the oil to a large sauté pan and place it over low heat. Add the chili paste, garlic and cilantro to the pan and let it simmer for about 2 minutes. Then turn the heat to high.
  • Prep shrimp. While the pan is heating, place the shrimp on a baking sheet or large plate and season both sides with salt and pepper.
  • Sauté. Once the pan is hot, add the shrimp, with at least a couple inches between them -- you should hear a sizzling sound. If you don't, your pan's not hot enough. Wait until the pan is very hot and listen for the sizzle!Sauté the shrimp just until cooked through, about 1 to 1½ minutes per side.Make sure you serve the shrimp with any bits of the sauce that have stuck to the bottom of the pan.
