Inspired by salsa, this seafood salad combines many ingredients tried together with a sweet and spicy sesame seed dressing.

15 grams (3 tsp) vegetable seasoning

hard boil eggs (optional)
1 jalapeño (optional)

SESAME SEED DRESSING-
60 ml (4 tbsp) sesame seed oil
120 ml (8 tbsp) soy sauce
60 ml (4 tbsp) vinegar
30 ml (2 tbsp) honey
75 grams (5 tbsp) sugar
15 grams (1 tbsp) vegetable seasoning
5 grams (1 tsp) mushroom seasoning
5 grams (1 tsp) pepper
5 ml (1 tsp) red chili pepper
10 grams (1/2 tbsp) white sesame seed

Steps:

  • PREPPING THE SALAD-
  • Wash, slice/cut, and combine your choice of lettuce. Set aside.
  • Slice and combine optional celery, cucumber, and green mango. Set aside.
  • HOW TO MAKE SEAFOOD MIX-
  • Wash shrimp. Set aside.
  • Wash crab. Cut into 3 cm pieces. Unroll and separate into thin pieces. Set aside.
  • Dice and combine red onion, tomatoes, cilantro, and optional jalapeño. Set aside.
  • In a bowl-combine everything.
  • Add sugar, vegetable seasoning, mushroom seasoning, fish sauce, and chili garlic sauce. Mix evenly.
  • HOW TO MAKE SESAME DRESSING-
  • In a bowl-combine everything except sesame seed oil.
  • Using a whisk-mix until seasonings dissolve.
  • While still whisking, slowly add in sesame seed oil.
  • SERVING-
  • In a salad bowl-combine and mix desirable-amount of lettuce, seafood mix, optional celery, cucumber, green mango, and dressing.
  • Top salad with optional hard boil eggs.
  • Enjoy!

  • Stir sugar and apple cider vinegar together in a small saucepan; cook over medium-low heat until sugar is dissolved, scraping sides of the pan to include all sugar granules, 3 to 5 minutes; remove from heat and let cool 2 to 3 minutes.

1 1/2 inches thick slice fresh ginger, peeled
7 tablespoons Chinese sesame paste (I prefer sesame paste) or 7 tablespoons smooth peanut butter, stirred well to blend (I prefer sesame paste)
5 tablespoons toasted sesame oil
5 tablespoons soy sauce
1/4 cup chinese rice wine or 1/4 cup sake
1 1/2 tablespoons chinese black vinegar or 1 1/2 tablespoons Worcestershire sauce
1 1/2 tablespoons sugar
6 tablespoons water

Steps:

  • In a food processor fitted with the metal blade, or in a blender, finely chop the garlic and ginger.
  • Add the remaining ingredients in the order listed and process to blend. The dressing should be the consistency of heavy cream. If it is too thin, add up to 2 tablespoons additional sesame paste.
  • Refrigerated, in a covered container, the dressing will keep for up to a week.

This main-dish salad is inspired by chicken larb, which is a dance of contrasts: light but rich, with tender meat, crunchy vegetables and seasonings that span sour, sweet, spicy and savory. This recipe dresses lean-but-juicy ground chicken or turkey with sesame oil, fresh lemon, miso, ginger, basil and celery, but there are many ways to adapt it: You could sauté crumbled tofu or cubed salmon instead of the chicken; or add yuzu kosho, wasabi paste or fried garlic. It's good on its own, or with roasted potatoes, grains, salad greens, soba noodles or wrapped in nori.

1 tablespoon plus 1 1/2 teaspoons toasted sesame oil, plus more for serving
1 pound ground chicken or turkey
Kosher salt (such as Diamond Crystal)
Freshly ground black pepper
1/4 cup white or yellow miso
1 large lemon, zested and juiced (about 1 tablespoon zest and 3 tablespoons juice)
1 1/2 inches fresh ginger, peeled and chopped (about 2 tablespoons)
3 celery stalks, thinly sliced, leaves reserved
1 cup basil leaves, large ones torn in half
2 tablespoons black or white sesame seeds, or a combination (or furikake)

Steps:

  • In a large (12-inch) skillet, heat 1 tablespoon sesame oil over medium-low. Add the chicken, 1/2 teaspoon salt and 1/2 teaspoon pepper, and cook, breaking up into small pieces, until opaque and just cooked through, 3 to 6 minutes. (You're not looking to brown the meat here, which would risk drying it out.) Remove from heat to cool.
  • In a large bowl, stir together the miso, lemon zest and juice, ginger and 1 1/2 teaspoons sesame oil.
  • When the chicken is no longer hot (warm or cool both work), use a slotted spoon to add it to the bowl with the dressing, leaving any chicken juices behind. Stir to combine. Add the sliced celery, celery leaves, basil and sesame seeds; stir to combine. Taste, and if it needs more spice, add black pepper; if it's bland, add salt; if it's dry, add sesame oil. Eat warm or at room temperature. (Leftovers will keep for up to 2 days in an airtight container in the refrigerator.)

1 pound thin egg noodles (fresh if possible)
1 tablespoon peanut oil
3 tablespoons Chinese sesame oil
4 tablespoons sesame seed paste (tahini)
3 tablespoons dark soy sauce
2 tablespoons brewed tea
1 tablespoon chili oil
1 teaspoon sugar
6 scallions, chopped
1 clove garlic, minced
2 teaspoons fresh ginger root, minced
Coarse salt and freshly ground pepper to taste

Steps:

  • Bring six quarts water to boil. Add the peanut oil and cook the noodles for three to four minutes, or until al dente. Drain and refresh under running cold water.
  • Place the noodles in a large serving bowl and add one tablespoon sesame oil. Toss to prevent them from sticking together and set them aside.
  • Mix together the remaining ingredients until you have a smooth sauce. If necessary, thin with a little olive oil. Correct seasoning and pour the dressing over the noodles. Toss thoroughly and serve at room temperature.
