ASIAN SEAFOOD SALAD WITH SPICY SESAME DRESSING
Inspired by salsa, this seafood salad combines many ingredients tried together with a sweet and spicy sesame seed dressing.

Steps:
- PREPPING THE SALAD-
- Wash, slice/cut, and combine your choice of lettuce. Set aside.
- Slice and combine optional celery, cucumber, and green mango. Set aside.
- HOW TO MAKE SEAFOOD MIX-
- Wash shrimp. Set aside.
- Wash crab. Cut into 3 cm pieces. Unroll and separate into thin pieces. Set aside.
- Dice and combine red onion, tomatoes, cilantro, and optional jalapeño. Set aside.
- In a bowl-combine everything.
- Add sugar, vegetable seasoning, mushroom seasoning, fish sauce, and chili garlic sauce. Mix evenly.
- HOW TO MAKE SESAME DRESSING-
- In a bowl-combine everything except sesame seed oil.
- Using a whisk-mix until seasonings dissolve.
- While still whisking, slowly add in sesame seed oil.
- SERVING-
- In a salad bowl-combine and mix desirable-amount of lettuce, seafood mix, optional celery, cucumber, green mango, and dressing.
- Top salad with optional hard boil eggs.
- Enjoy!

- Cut 1/2 English cucumber, 1/2 small jicama, 1 large carrot and 1 celery stalk into matchsticks. Drain and rinse a 15-ounce can baby corn; quarter the corn lengthwise. - In a large (12-inch) skillet, heat 1 tablespoon sesame oil over medium-low. Add the chicken, 1/2 teaspoon salt and 1/2 teaspoon pepper, and cook, breaking up into small pieces, until opaque and just cooked through, 3 to 6 minutes. (You're not looking to brown the meat here, which would risk drying it out.) Remove from heat to cool.
- In a large bowl, stir together the miso, lemon zest and juice, ginger and 1 1/2 teaspoons sesame oil.
- When the chicken is no longer hot (warm or cool both work), use a slotted spoon to add it to the bowl with the dressing, leaving any chicken juices behind. Stir to combine. Add the sliced celery, celery leaves, basil and sesame seeds; stir to combine. Taste, and if it needs more spice, add black pepper; if it's bland, add salt; if it's dry, add sesame oil. Eat warm or at room temperature. (Leftovers will keep for up to 2 days in an airtight container in the refrigerator.)
SPICY NOODLES WITH SESAME DRESSING

- Bring six quarts water to boil. Add the peanut oil and cook the noodles for three to four minutes, or until al dente. Drain and refresh under running cold water.
- Place the noodles in a large serving bowl and add one tablespoon sesame oil. Toss to prevent them from sticking together and set them aside.
- Mix together the remaining ingredients until you have a smooth sauce. If necessary, thin with a little olive oil. Correct seasoning and pour the dressing over the noodles. Toss thoroughly and serve at room temperature.
