These spicy meatballs are boldly flavored with garlic, cumin, paprika, and cayenne.

1 tablespoon olive oil
1 tablespoon minced fresh garlic
1 teaspoon Diamond Crystal kosher salt
1 teaspoon sweet paprika
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
26 oz Pomi chopped tomatoes (or two 15 oz cans diced tomatoes, undrained)
1 lb. 85% lean ground beef
1 teaspoon Diamond Crystal kosher salt
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
2 tablespoons finely chopped fresh cilantro

Steps:

  • In a wide, heavy saucepan, heat the olive oil over medium heat, about 3 minutes. Add the garlic and cook for 1 minute.
  • Add the spices and cook, stirring, for 30 seconds. Add the chopped tomatoes. Bring to a boil, then lower the heat to medium-low and simmer, covered, for 10 minutes, while you're preparing the meatballs.
  • In a medium bowl, use your hands to gently mix the meat and the spices. Divide the mixture into 24 equal portions (each weighs about 20 grams) and shape them into small, 1-inch meatballs.
  • Add the meatballs to the sauce. Turn the heat to medium-high and bring to a boil, then lower the heat back to medium-low, cover, and simmer until the meatballs are cooked through, about 30 minutes. Sprinkle the dish with cilantro and serve.

This classic oven baked Italian meatball recipe features ground beef, pork, and veal to make the most delicious meatballs that are perfect for simmering in a rustic tomato sauce.

1 pound ground beef chuck
1 pound ground veal
1 pound ground Italian sausage
1 cup breadcrumbs (regular or panko)
½ cup whole milk (or 2%)
6-7 cloves garlic (minced)
1 tablespoon Italian seasoning
2 large eggs
1 cup grated parmesan cheese
3 tablespoons fresh chopped parsley
Salt and pepper
112 ounces tomato sauce (4 large cans)
¾ cup butter
2 large red onions (cut into wedges)

Steps:

  • Set a large 7-8 quart saucepot over medium heat. Add the butter to the pot. Once melted, add the onion wedges. Sauté the onion wedges for 5-8 minutes, to caramelize, soften, and release their juices.
  • Add the tomato sauce. Partially cover the pot and simmer on medium-low for 45-60 minutes.
  • Meanwhile, set out a large mixing bowl. Combine the breadcrumbs and milk in the bowl. Then add in the minced garlic, Italian seasoning, eggs, grated parmesan, parsley, 2 ½ teaspoons salt, and ½ teaspoon ground black pepper. Mix well.
  • Add in the ground beef, veal, and Italian sausage. Gently break the ground meat into small chunks with your fingers. Then toss it with the milk and herb mixture to coat the meat chunks. This pre-mixing process helps to get the ingredients evenly distributed, without overmixing.
  • Now mix the meatball mixture with your hands until evenly combined, but not a moment longer. (Overmixing meatballs makes them tough! You want the mixture to be even, but not packed down.)
  • Preheat the oven to 400 degrees F. Set out a large rimmed baking sheet and line it with parchment paper.
  • Use a 2 ½ - 3 tablespoon scoop to portion out the meatballs. Roll them well, but do not press and pack them tightly. If needed, use your fingers to pinch any cracks together. Set them on the baking sheet. (At this point, you could cover and chill the meatballs for up to 2 days. Or you could freeze them.)
  • Bake the meatballs for 20 minutes to set. (The meatballs will finish cooking in the tomato sauce. If you plan to use the meatballs in a different way, bake them for 25 minutes to fully cook.)
  • Now use tongs to pull the chunks of onion out of the tomato sauce. Discard the onions. Then use tongs to move the meatballs into the tomato sauce. Pour the pan juices into the sauce and gently stir. Simmer for 10-15 minutes. Serve warm.

1/2 cup finely chopped onion

1 pound ground turkey
1 pound bulk Italian sausage
SAUCE:
3 tablespoons cornstarch
1 tablespoon sugar
3/4 cup beef broth
2 cans (28 ounces each) crushed tomatoes
3 medium carrots, diced
1 can (6 ounces) tomato paste
1 envelope onion soup mix
3 garlic cloves, minced
1 teaspoon dried basil
1/2 teaspoon crushed red pepper flakes
Hot cooked pasta

Steps:

  • In a large bowl, combine the egg, croutons, onion, green pepper, garlic powder, cumin, oregano and pepper. Crumble turkey and sausage over mixture and mix well. Shape into 1-in. balls. Place in a 5-qt. slow cooker., In a large bowl, combine the cornstarch, sugar and broth until smooth; stir in the tomatoes, carrots, tomato paste, soup mix, garlic, basil and pepper flakes. Pour over meatballs. Cover and cook on low for 5-6 hours or until meatballs are cooked through. Serve with pasta., Serve immediately or cool before placing in a freezer container. 2 cans (28 ounces each) crushed tomatoes
2 cans (14-1/2 ounces each) diced tomatoes, undrained
3/4 pound sliced fresh mushrooms
5 garlic cloves, minced
4 teaspoons Italian seasoning
1 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1 large sweet onion
1 large green pepper
1 medium sweet red pepper
1 medium sweet orange pepper
1 medium sweet yellow pepper
10 hot Italian sausage links (4 ounces each), casings removed
1/4 cup all-purpose flour
2 tablespoons canola oil
Hot cooked pasta

Steps:

  • Place first eight ingredients in a 6-qt. slow cooker. Chop onion and peppers; stir into tomato mixture., Shape sausage into 1-3/4-in. balls; roll in flour to coat lightly. In a large skillet, heat oil over medium-high heat; cook meatballs in batches until lightly browned, 5-8 minutes, turning occasionally. Drain on paper towels. Add to slow cooker, stirring gently into sauce., Cook, covered, on low 5-6 hours or until meatballs are cooked through and vegetables are tender. Serve with pasta. Freeze option: Freeze cooled meatball mixture in freezer containers. To use, partially thaw in refrigerator overnight. Place meatball mixture in a large skillet; heat through, stirring occasionally and adding a little water if necessary.

  • Remove the skins from the sausages (discard the skins), then break each sausage into thirds. Heat 1 tbsp oil in a sauté pan and, when hot, add the sausages. Brown all over, then remove and set aside. Chop the onion, crush the garlic, then add to the pan with the paprika and a splash more oil. Reduce the heat and fry gently for 5-6 minutes until the onion has softened.
  • Add the chopped tomatoes and red wine vinegar and bring to a gentle simmer. Return the sausages to the pan and cook, stirring frequently, until the sauce reduces and thickens. Taste and adjust the seasoning.
  • Meanwhile cook the rice. Put it in a pan and fill with cold water to just over 1cm above the top of the rice. Add some salt and put over a high heat until boiling. Simmer the rice for 1 minute, then turn the heat to low. Cover the pan and cook for 15-20 minutes until tender.
  • Stir the herbs into the rice along with some seasoning. To serve, add another splash of oil to the sausage pan, then divide the sausages and rice among 4 plates.
