1 lb bulk hot sausage
1 small onion, chopped
2 garlic cloves, minced
4 (15 1/2 ounce) cans great northern beans, undrained
2 (14 1/2 ounce) cans ready-to-use chicken broth
1 (14 1/2 ounce) can diced tomatoes, undrained
1 teaspoon dried basil
1/2 teaspoon black pepper

Steps:

  • In a large soup pot, heat the oil over medium-high heat.
  • Add the sausage, onion, and garlic; cook for 5 to 6 minutes, or until no pink remains in the sausage, stirring frequently to break up the meat.
  • Add the remaining ingredients and bring to a boil.
  • Reduce the heat to medium-low and simmer, uncovered, for 30 minutes.

2 (15 ounce) cans garbanzo beans (chickpeas)
2 tablespoons olive oil
1 lb hot Italian sausage, casings removed
4 teaspoons chopped fresh rosemary
2 cloves garlic, chopped
1/4 teaspoon dried crushed red pepper flakes
1/4 cup tomato paste
5 cups canned low sodium chicken broth
8 ounces orecchiette (or other small pasta)
1 1/2 cups grated romano cheese

Steps:

  • Strain liquid from canned beans into blender.
  • Add 1 cup beans and puree until smooth.
  • Heat oil in large pot over medium heat.
  • Add sausages, rosemary, garlic, and crushed red pepper.
  • Sauté until sausages are cooked through, breaking up with fork, about 8 minutes.
  • Mix in tomato paste.
  • Add bean puree, remaining beans, broth, and pasta.
  • Simmer until pasta is tender and mixture is thick, stirring occasionally, about 30 minutes.
  • Mix in 1/4 cup cheese.
  • Season with salt and pepper.
  • Serve, passing remaining 1 1/4 cups cheese.
  • Makes 4 to 6 (main-course) servings.

Qt. Chicken broth
3 cans garbanzo beans, rinsed and drained
1 cup water
Handful of chopped fresh cilantro
Drizzle of Olive Oil

Steps:

  • Drizzle olive oil in soup pan; heat. Add onions and fry until translucent. Add sausage to onions; break up the sausage while cooking. Add a little bit of chicken broth to deglaze the pan. Add remaining chicken broth, cup of water, garbanzo beans and cilantro. Bring to a boil. Reduce heat to a simmer and cook for 45 minutes.

4 tablespoons olive oil
3 1/2-inch-thick French bread slices (each about 3 x 5 inches)
2 tablespoons minced garlic
3 14 1/2-ounce cans low-salt chicken broth
10 ounces fully cooked smoked garlic sausage (such as kielbasa or linguiça), thinly sliced into rounds
1 cup drained canned garbanzo beans (chickpeas)
2 teaspoons paprika
6 tablespoons chopped fresh parsley
1 large egg, beaten to blend

Steps:

  • Heat 2 tablespoons oil in heavy large pot over low heat. Add bread. Cook until brown, about 2 minutes per side. Transfer bread to paper towels and cool. Cut into 1/2-inch croutons.
  • Heat remaining 2 tablespoons oil in same pot over medium heat. Add garlic and stir 30 seconds. Add broth, sausage, garbanzo beans and paprika. Bring soup to simmer. Mix in parsley and egg; stir constantly to break egg into strands as it cooks. Season with salt and pepper. Ladle into bowls. Top with croutons.

1 cup canned diced peeled tomatoes with juices
2 tablespoons thinly sliced seeded jalapeño chili
1 teaspoon ground cumin
1 teaspoon chopped fresh rosemary or 1/2 teaspoon dried
3 15- to 16-ounce cans garbanzo beans (chick-peas), undrained
2 cups canned chicken broth or beef broth
2 tablespoons fresh lemon juice
Chopped fresh cilantro
1 avocado, peeled, sliced

Steps:

  • Heat olive oil in heavy large Dutch oven over medium-high heat. Add turkey sausage and chopped garlic and sauté until sausage is golden brown and cooked through, breaking up sausage with back of fork, about 5 minutes. Reduce heat to medium. Add tomatoes with their juices, sliced jalapeño chili, ground cumin and chopped fresh rosemary and simmer 10 minutes, stirring frequently. Add garbanzo beans with their liquid and chicken broth and bring to boil. Reduce heat and simmer soup 15 minutes. Stir in fresh lemon juice. Season soup to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium heat before continuing.)
  • Ladle soup into bowls. Sprinkle soup with chopped fresh cilantro and top with sliced avocado. Serve immediately.

1 (6-ounce) can tomato paste
1 (3-inch) piece Parmesan cheese rind, optional
2 teaspoons salt, plus more to taste
8 cups vegetable or chicken broth
2 (15 1/2-ounce) cans garbanzo beans, drained and rinsed
2 (15-ounce) cans cannellini beans, drained and rinsed
1/2 cup dried green lentils

Steps:

  • Heat the oil in a heavy large stockpot over medium-high heat. Add the onions, celery, carrot, bell pepper, and garlic, and saute until the onions are translucent, about 15 minutes. Stir in the tomatoes with their juices, tomato juice, tomato paste, cheese rind, and 2 teaspoons of salt. Add the broth, garbanzo beans, cannellini beans, and lentils. Stir in the broccoli, zucchini, and yellow squash. Bring to a simmer over high heat. Decrease the heat to medium. Simmer, uncovered, until the lentils are tender and the mixture thickens slightly, stirring often, about 20 minutes. Season the stew to taste with more salt, if desired.
  • Ladle the stew into bowls. Sprinkle with the shredded cheese and basil, and serve.

2 carrots, thinly sliced

⅓ cup chopped fresh parsley, divided

2 cubes beef bouillon
½ teaspoon dried sage
salt and ground black pepper to taste

Steps:

  • Heat a pot over medium heat. Cook and stir turkey sausage in the hot pot until browned and crumbly, 5 to 7 minutes.
  • Stir carrots, onion, mushrooms, 1/4 cup parsley, and garlic into sausage. Cook and stir until onion is soft, 7 to 10 minutes.
  • Pour water, garbanzo beans with liquid, beef bouillon cubes, and sage into sausage mixture. It was pouring rain today and cold; perfect soup weather, but not having a full pantry this is what i came up with using leftovers from Easter. Most of the ingredients were already cut and sausage was cooked. (bagged cut carrots from the grocery store) Also having my toddler daughter literally clinging to me all day it had to be super quick and simple. This is a very thrown together recipe and im sure could use improvements and / or changes but for as simple as it was it tasted very good to me. prep time doesnt include cooking the sausage.

1/2 lb hot Italian sausage, cooked and cut into small pieces (use mild sausage if you don't like spicy soup)
1 tablespoon olive oil
1 tablespoon garlic powder
1/2 medium vidalia onion (no need to cut it up)
1 cup pre-cut carrot
2 (8 ounce) cans beef broth
2 tablespoons tomato paste
1 (8 ounce) can cannellini beans, drained and rinsed
1 teaspoon crushed red pepper flakes (optional for added heat)
1/2 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups water

Steps:

  • In a large soup pot, put olive oil and garlic powder.
  • Cook on low for about 3 minutes.
  • Add everything else to the pot.
  • Bring to boil.
  • Simmer for 25 minutes.
  • Using a slotted spoon, take out all veggies meats and most of the beans and place in blender to puree. you may need to put some of the broth in the blender too to help it along.
  • Return puree back to soup pot.
  • Simmer 10 minutes more stirring well to blend puree and liquid well.
