MEXICAN COWBOY BEANS WITH LONGANIZA SAUSAGE RECIPE
Steps:
- Gather the ingredients.
- Pick through the beans and remove any rocks or debris.
- Then throughly rinse and place in a large pot. Pour in enough water to cover by 3 inches.
- Partly cover and simmer until cooked through. You will most likely need to add more water to the pot, do not let them dry out and always keep plenty of water in the pot.
- Once the beans are cooked, separate them from the broth and reserve the broth. (Please make sure you have all of the ingredients ready to go because the following process moves fast.)
- In a large pot heat a splash of oil, then add the longaniza and sauté until it begins to brown slightly.
- Drain the sausage, but leave a bit of the oil in the pan, set the sausage aside.
- Next add the onion and sauté until soft.
- Then add the Poblanos and sauté them for about 4 minutes.
- Add the garlic and Serrano chilies and sauté for about 3 minutes - be careful not to breathe in the chile smoke, it will make you cough.
- Now add the salt, ground cumin, and bay leaves.
- Then gently pour in the drained-cooked beans.
- Finally, very carefully, pour in the broth and give the stew a gently stir.
- Then place the epazote inside the pan.
- Partially cover and simmer under medium-low heat for about 45 minutes or longer if desired. The amount of broth that will be left in the pot is entirely up to you. Some people like their beans more soupy while others chunkier. Taste and adjust seasoning if desired.
- Allow to cool slightly before serving.
- Serve as a main dish topped with finely chopped cilantro and with warm corn tortillas on the side. Alternatively, these beans may be served as a side dish to grilled meats like steak -- or arranchera is my favorite.

Steps:
- Preheat a grill pan over medium heat.
- In a large pot over medium heat, stir together the lager, chili sauce, vinegar, brown sugar, curry powder and hot sauce. Cook until reduced by half, 3 to 5 minutes.
- While the sauce is reducing, grill the sausages on the grill pan until browned and cooked through, turning every so often, about 12 minutes. Set aside.
- Brush the onions with olive oil, season with salt and pepper and grill on the same pan you grilled the sausages. Cook until brown and golden, about 10 minutes.
- Put the grilled sausages in the pot with the sauce, then add the onions. Cook together for 1 to 2 minutes.
- Serve the sausages on crusty rolls topped with the onions and lots of sauce.

- Chill all grinder parts, including die with ¼" holes, in freezer until very cold, about 1 hour. Chill a large stainless-steel bowl in refrigerator until cold. Place pork in a single layer on 2 plastic wrap–lined baking sheets; cover and freeze until meat is very firm but not frozen, about 1 hour.
- Combine salt, fennel seeds, black pepper, cayenne, paprika, smoked paprika, and red pepper flakes in a small bowl; set aside.
- Grind pork on high speed, 3–4 pieces at a time, into chilled bowl (keep second baking sheet in freezer until ready to use). If grinder clogs (meat will look pink, not red and white), clean die and cutter before continuing.
- Add garlic and mix gently with your hands just to begin to distribute, about 20 seconds. Sprinkle reserved spice mixture evenly over pork and knead, rotating bowl, until spice mixture is evenly distributed and a light film has formed on the side of the bowl, about 1 minute.
