SAUSAGE SQUARES
An easy 3-ingredient breakfast bake made with sausage, cream cheese, and crescent roll dough.

Steps:
- Preheat oven to 375 F. Spray or grease a 9 x 13 baking sheet or baking pan.
- Brown sausage in a skillet. Drain. Stir in cream cheese until well mixed. Set aside.
- Spread one roll of crescent dough out from edge to edge onto a non-stick baking sheet (or baking sheet coated with non-stick spray).
- Top with sausage mixture, spreading it out evenly until ¼ in. from the edge.
- Cover with the second sheet of crescent roll dough. Spread the dough out to cover the sausage and press to seal up the ends.
- Bake uncovered until golden brown, about 10 minutes. Cut into squares. Garnish with green onions before serving, if desired.

- Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In 8-inch skillet, cook sausage over medium heat 8 to 10 minutes, stirring occasionally, until no longer pink.
- In baking dish, layer half of the thawed potatoes, half of the Colby-Monterey Jack cheese, the cooked sausage, thawed asparagus, remaining potatoes and cheese.
- In medium bowl, beat eggs and milk until well blended. Pour evenly over potato mixture.
- Cover tightly with foil; bake 1 hour. Uncover dish; sprinkle with Parmesan cheese. Bake uncovered 15 to 20 minutes longer or until knife inserted in center comes out clean. Let stand about 5 minutes before serving.

- Preheat oven to 400º. On a lightly floured surface, roll half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Repeat with remaining dough. Refrigerate 30 minutes. Line unpricked crusts with a double thickness of heavy-duty foil. Bake for 10 minutes. Remove the foil; bake 5 minutes longer. Cool on wire racks., Meanwhile, in a large skillet, cook pork over medium heat until no longer pink, 7-9 minutes; drain. In a large bowl, whisk eggs, milk, mayonnaise, salt and pepper. Stir in cheese, jalapenos, green onions and cooked pork. Pour into crusts., Bake until a knife inserted in center comes out clean, 30-35 minutes. Cover edges loosely with foil during the last 15 minutes if needed to prevent overbrowning. Remove foil. Let stand 10 minutes before cutting., Freeze option: Cover and freeze unbaked quiches. To use, remove from freezer 30 minutes before baking (do not thaw). Preheat oven to 400º. Place quiches on baking sheets. Bake as directed, increasing time to 40-45 minutes. SPICY CHEESY SAUSAGE BREAKFAST CASSEROLE

- Cook the sausage until browned well, crumble; set aside.
- In the same pan, sauté the mushrooms, onion, garlic, and green chiles.
- Combine the sausage with the mushroom mixture; set aside and let cool.
- Grease a 9x13-inch glass baking dish and fill the bottom with the prepared bread cubes; top with sausage mixture then the cheese.
- Beat together the eggs, milk, sundried tomatoes, basil, sage, dry mustard, salt, pepper, and Tabasco; pour over sausage and cheese in the baking pan.
- (This dish can be prepared a day ahead- at this point you'd cover it with plastic wrap and put it in the refrigerator.) In the morning, remove the casserole from the refrigerator and set it out on the counter for 30 minutes.
- Preheat oven to 350 degrees F.
- Uncover and bake casserole until it's golden and puffy and the center is set, about 50 to 60 minutes.
- Cut into squares and serve.
- If you want it especially spicy, chop up a jalapeno and sauté it along with the onion and mushrooms; you can also substitute O'Brien potatoes for the bread; you can even substitute vegetarian sausage for the meat!

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
- Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain and crumble. Spread into bottom of baking dish.
