SPICED WHITE SANGRIA
I've been making this recipe for more than 20 years. My husband and I are in the wine and spirit business and we served it at one of our first dinner parties after we were married. It's a refreshing change from traditional red sangria. -Ellen Folkman, Crystal Beach, Florida

- Combine first 7 ingredients in a large pitcher. Refrigerate, covered, stirring occasionally, about 4 hours. Discard cinnamon sticks. Refrigerate, covered, 2 hours longer. Just before serving, stir in chilled club soda. Serve over ice with fruit slices in each glass.

- Put the Spicy Salt on a plate. Dip the rim of a chilled margarita glass into the mixture to coat the edge. Fill a cocktail shaker with ice. Add the tequila, lime juice, Simple Syrup and orange liqueur. Cover and shake until mixed and chilled, about 30 seconds. (In general, the drink is ready by the time the shaker mists up.) Strain the margarita into the prepared glass.

- MAKE THE SUGAR SYRUP In a small saucepan, combine the water, sugar, star anise, peppercorns, cloves, cinnamon sticks and ginger. Bring to a simmer over moderately high heat, stirring to dissolve the sugar. Boil until reduced by one third and slightly syrupy, about 15 minutes. Let the spice syrup cool, then strain into a glass jar. MAKE THE SANGRIA Pour the red wine into a 3-quart pitcher. Stir in the orange juice, rum, brandy, Cointreau, club soda and 1/4 cup of the spice syrup; add more syrup if you prefer a sweeter sangria. Add the diced oranges, lime, apple and pear and refrigerate overnight. Serve the sangria in tall glasses over ice. Garnish with a tablespoon of the diced fruit.
