SPICED SALMON WITH TRAYBAKED SAG ALOO



Spiced salmon with traybaked sag aloo image

Spice up a salmon fillet with the classic Indian side dish, sag aloo, for an easy midweek meal that's packed with omega-3 and ideal for feeding a crowd

1kg floury potatoes, such as Maris Piper, peeled and cut into 2cm chunks
olive oil, for roasting
1 tsp turmeric
2 tsp ground cumin
1 tsp chilli flakes
200g spinach
1 x 500g salmon fillet
2 tbsp tandoori or tikka spice paste
100ml double cream
lemon wedge, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Cook the potatoes in a large pan of boiling salted water for 6 mins. Drain in a colander and leave to steam dry for a few mins. Toss the potatoes in a roasting tin with 1 tbsp oil, the turmeric, ground cumin and chilli flakes and plenty of seasoning. Roast for 20 mins, tossing halfway through. Boil the kettle.
  • Put the spinach in a colander and pour over boiling water until wilted. Use the back of a wooden spoon to squeeze out most of the water. Rub the salmon generously with the spice paste and drizzle with oil. Stir the spinach through the potatoes and top with the salmon, skin-side down. Increase the heat to 220C/200C fan/gas 7. Return to the oven for 20-25 mins or until the salmon is just cooked. Remove the salmon to stir the cream into the potatoes, then replace the salmon and serve with lemon wedges for squeezing over.

This simple combination of salmon, potatoes and veg never tasted so good - and all in a mere 30 minutes. The key to unlocking plenty of flavour lies in the gochujang chilli paste, but you can always use miso paste if you can't get hold of it. Fancy something else? 750g new potatoes, cut into 1cm thick slices
2 tbsp sunflower oil
4 sustainable salmon fillets
2 tbsp Korean gochujang chilli paste (widely available; see tip)
2 limes, zested (then 1 juiced and 1 cut into wedges to serve)
4 garlic cloves, crushed
4 tbsp soy sauce
Bunch spring onions, trimmed and halved
300g pak choi or tenderstem broccoli, quartered or halved

Steps:

  • Heat the oven to 220°C/200°C fan/ gas 7. Line a large baking tray with compostable baking paper, add the potatoes, then drizzle with 1 tbsp of the oil. Season with salt and black pepper, toss well, then bake for 15 minutes.
  • Meanwhile, coat the top of each salmon fillet with ½ tsp of the chilli paste. Put the remaining chilli paste in a medium bowl with 1 tbsp oil, the lime zest and juice, garlic and soy sauce. Mix, add the spring onions and pak choi, then toss to coat.
  • Remove the potato tray from the oven and use a spatula to turn the potatoes over, making room on the tray. Add the salmon fillets and scatter the veg around them, drizzling with any dressing from the bowl. Return to the oven and bake for 12-15 minutes more until the salmon is cooked to your liking and the vegetables are tender. Serve with lime wedges for squeezing.

Creamy salmon, leek & potato traybake image

Nestle leeks, potato and capers around salmon fillets to make this easy traybake for two. It's great as an midweek meal, or for a more romantic occasion

250g baby potatoes , thickly sliced
2 tbsp olive oil
1 leek , halved, washed and sliced
1 garlic clove , crushed
70ml double cream
1 tbsp capers , plus extra to serve
1 tbsp chives , plus extra to serve
2 skinless salmon fillets
mixed rocket salad , to serve (optional)

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Bring a medium pan of water to the boil. Add the potatoes and cook for 8 mins. Drain and leave to steam-dry in a colander for a few minutes. Toss the potatoes with ½ of the oil and plenty of seasoning in a baking tray. Put in the oven for 20 mins, tossing halfway through the cooking time.
  • Meanwhile, heat the remaining oil in a frying pan over a medium heat. Add the leek and fry for 5 mins, or until beginning to soften. Stir through the garlic for 1 min, then add the cream, capers and 75ml hot water, then bring to the boil. Stir through the chives.
  • Heat the grill to high. Pour the creamy leek mixture over the potatoes, then sit the salmon fillets on top. Grill for 7-8 mins, or until just cooked through. Serve topped with extra chives and capers and a salad on the side, if you like.

Enjoy this healthy spiced salmon and tomato traybake with a mild curry flavour for a quick and easy midweek meal. Serve with naan bread and lemon wedges

1 red onion , sliced
200g cherry tomatoes
3 tbsp mild or madras curry paste
400g can chickpeas , drained and rinsed
2 skinless salmon fillets
1 large or 2 small naan breads
2 tbsp fat-free yogurt
lemon wedges and a few coriander leaves, to serve (optional)

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Toss the onion, tomatoes, 2 tbsp curry paste, the chickpeas and 200ml water together in a deep 20 x 25cm roasting tin. Roast for 15 mins until the onions are tender and the tomatoes are just bursting.
  • Stir everything, then season. Brush the remaining curry paste over the salmon fillets and season. Nestle the salmon into the veg in the tin and roast for another 8-10 mins, or until cooked to your liking.
  • Meanwhile, warm the naan breads - you can do this by putting them directly on the oven rack below the roasting tin. Cut the warmed naan breads into wedges. Swirl the yogurt into the veg in the tin, then serve with the naan wedges for dunking, a few coriander leaves sprinkled over, if you like, and the lemon wedges, if using, for squeezing over.

  • Scrub your potatoes but leave them unpeeled. Halve or quarter bigger ones and leave the really small ones whole trying to keep them similar size so that they roast evenly.
  • Put them in the roasting tray with olive oil, thyme and good amount of salt and pepper. Give them a mix with your hands making sure they are evenly covered with oil and seasoning and put into preheated oven for 20 min.
