OVEN ROASTED SAUSAGE PEPPERS AND POTATOES

Oven Roasted Sausage Peppers and Potatoes image

During the winter months you can't beat tossing a few things together in a little extra virgin olive oil and seasoning and letting them roast! The flavors really deepen and you get a beautiful char on everything. This dish reminds me of the summer I spent in Calabria at a villa near the town of Tropea where everything had a spice to it. The oil, the sausage and especially the peppers! I wanted to make a dish with a little calabrese flair and the first thing that came to mind was sausage and peppers. I started by pan frying the sausage a bit for a nice sear on the outside. This also makes it easier to cut the sausage into pieces. I used mini sweet peppers because they're bursting with flavor and I love the contrast against the spicy hot sausage. I threw in some sliced baby red potatoes which take on a wonderful buttery quality when cooked and really absorb flavor well. I also added some sweet red onions which remind me of the famous red onions of Tropea and have more flavor than the white or yellow variety.

Provided by rossella rago

Yield 4 Person(s)

Number Of Ingredients 7

hot Italian sausage links
+ 1 tablespoon extra virgin olive oil, divided
baby red skinned potatoes cut into 1/4 inch slices
sweet mini peppers, seeds removed and cut into 1 inch strips
medium red onion cut into thin slices
garlic cloves cut in half
salt and pepper as desired

Steps:

  • Put a large saute` pan over a medium-high flame and heat 1 tablespoon of the oil. Using a fork prick the sausage links all over. Place the links in the saute pan and cook until browned on all sides, about 5-7 minutes. Transfer to a plate and slice the links in half. Set aside. Preheat the oven to 450 degrees. In a large mixing bowl toss together 1/2 cup of the oil, sliced potatoes, peppers, onions and garlic. Season with salt and pepper as desired. Spread the mixture in a large roasting pan or a 13x18 inch baking sheet. Top with the sausage and roast for 30-40 minutes turning halfway though.

CHICKEN, SAUSAGE, PEPPERS, AND POTATOES

Chicken, Sausage, Peppers, and Potatoes image

You'll need a large, heavy-duty roasting pan (or a couple of smaller ones) and a very hot oven for this delicious dish. The long oven time makes everything beautifully caramelized and the chicken fork tender.

Provided by Chef John

Categories     Meat and Poultry Recipes     Chicken     Chicken Thigh Recipes

Time 1h30m

Yield 6

Number Of Ingredients 11

4 large links hot Italian sausage
2 tablespoons olive oil, divided
6 bone-in, skin on chicken thighs
½ pound assorted sweet peppers, seeded
1 small red onion, sliced
½ yellow onion, sliced
4 large Yukon Gold potatoes, quartered
2 teaspoons dried Italian herbs
2 teaspoons kosher salt, plus more as needed
Freshly ground black pepper to taste
1 tablespoon Chopped fresh Italian parsley

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Heat olive oil in a skillet over medium heat. Cook sausage links until browned and oil begins to render, about 3 minutes per side. While sausages are cooking, pierce them lightly here and there with the tip of a sharp knife so some fats and juices are released. Remove from heat and let cool slightly.
  • When sausages are cool enough to handle, cut them into serving pieces, about 2-inch slices. Transfer back to pan along with any accumulated juices from the cutting board.
  • Cut two slashes down to the bone on the skin side of each chicken thigh.
  • Depending on the size of the peppers, halve or quarter them and place in a large mixing bowl. Add the sliced red and yellow onions and potato chunks. Add chicken thighs and sausage pieces with pan juices.
  • Season with kosher salt, black pepper, and Italian herbs. Drizzle with a tablespoon of olive oil.
  • Mix with your hands until all ingredients are coated in oil, 3 or 4 minutes. Transfer to large, heavy-duty roasting pan. Evenly space the chicken thighs skin side up. Position potatoes near the top.
  • Place in preheated oven until chicken is cooked through and everything is caramelized, about 1 hour. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Sprinkle with chopped fresh Italian parsley, if desired.

ITALIAN SAUSAGE, POTATOES, PEPPERS AND ONIONS

Italian Sausage, Potatoes, Peppers and Onions image

Are you looking for an Italian sausage dinner idea? This Italian Sausage, Potatoes, Peppers, and Onions will quickly become your go-to recipe.

Provided by Maria Vannelli RD

Categories     Main Course

Time 1h10m

Number Of Ingredients 12

4 large potatoes (peeled and quartered, yellow or russet, about 2 pounds)
3 tablespoons olive oil (extra virgin, separated )
3-4 cloves garlic (coarsely chopped)
2 medium onions (sliced)
pinch red pepper flakes (optional)
4 Italian sausages (cut into thirds)
1 red pepper (trimmed and sliced)
1 yellow pepper (trimmed and sliced)
4-5 green onions (sliced)
1-1½ teaspoons paprika
salt and pepper to taste
3-4 tablespoons Italian flat-leaf parsley (fresh and finely chopped)

Steps:

  • Preheat oven to 425° F (220° C).
  • Place oven grate on the lower center rack, that is the second from the bottom.
  • Add the potato wedges to a large pot of cold salted water.
  • Bring to a boil, reduce the heat and then simmer until tender or a knife can pierce through. This takes about 8-10 minutes all depending on how thick your wedges are.
  • Add 2 tablespoons of olive oil to a large skillet, over medium-high heat.
  • Lower the heat to medium, add 3-4 chopped garlic cloves and stir for about 30 seconds.
  • Add the 2 sliced onions and cook for about 5-7 minutes.
  • Add salt and pepper to taste. If you like a little heat, go ahead and add a pinch or two of red pepper flakes.
  • Add the Italian sausages to the pan and combine with the onions. Saute for about 10 minutes.
  • Check the potatoes for doneness.
  • If a knife can easily be inserted, they are done. With a slotted spoon, transfer the parboiled potatoes to a large bowl.
  • Add 1 teaspoon of paprika and 1 tablespoon of olive oil. Combine with the parboiled potatoes and set aside.
  • Add the sliced red and yellow peppers and the green onions to the pan. Saute for about 5 minutes or until they just begin to soften
  • Transfer both the sausage and the potato mixture to a large deep baking dish (approximately 9 x 13 inches).
  • Toss gently together.
  • If desired, sprinkle with a little more paprika, about ½ teaspoon or so.
  • Cover with aluminum foil and bake for about 20 minutes.
  • Uncover and bake for another 15-20 minutes or until most of the moisture has evaporated and the top layer appears to be nicely roasted.
  • Transfer to a serving dish, garnish with fresh chopped parsley and serve.

  • Cut the potatoes into small 1" x 1/2 inch pieces. These take the longest to cook so cutting them small ensures everything cooks evenly.
  • Spray one large non-stick baking sheet, or two small ones with olive oil spray to prevent the potatoes from sticking.
  • In a large bowl, combine potatoes, onions, peppers, olive oil, salt, pepper, rosemary and garlic powder. Mix well to be sure everything is coated with oil and seasoned evenly. Pour onto the prepared baking sheet and place in the center of the oven; bake for 15 minutes.

  • Spread the onions, peppers, fennel, garlic, oregano, 1 tbsp (15 ml) salt and 1 ½ tsp (7.5 ml) black pepper in single layers on 2 large sheet pans. Toss the vegetables with ¼ cup olive oil . Don’t crowd everything in a smaller pan; the vegetables won’t brown.
  • Separately, on a sheet pan, toss the sausages with 2 tbsp olive oil and spread them out in one layer. Roast the vegetables & the sausages for 20 minutes.
  • (If you do not have 3 sheet pans, use a roasting pan for one set of vegetables or the sausage, or, simply roast the vegetables first, then the sausages next, and then continue on with the recipe.)
