SPICY-SWEET BAKED CHICKEN DRUMSTICKS RECIPE

- Preheat the oven to 450 degrees F. Line two rimmed baking sheets with foil, spray with non-stick cooking spray, and set aside.
- Mix the flour, corn starch, and salt together in a bowl. Using paper towels, dry each drumstick and roll them in the flour mixture for a light dusting. Then lay them out on the baking sheets, evenly spaced.
- Bake the drumsticks for 30 minutes, flipping once.
- In the meantime, pour the pineapple juice and all remaining ingredients in a sauce pot. (If you are sensitive to heat, add 1/4 cup Sriracha; if you really like spicy food, add 1/2 cup.) Bring the sauce to a boil, reduce the heat and simmer for 30 minutes.
- Then pour the sauce over the drumsticks evenly. Roll the drumsticks around in it to coat, and place back in the oven, uncovered.
- Bake another 20 minutes, until the sauce is thick and sticky and the drumsticks are well coated. Serve warm.

- Preheat your oven to 400 degrees F. Line a rimmed baking sheet with high-heat-resistant parchment paper.
- Wipe the chicken drumsticks dry with paper towels. Arrange them in a single layer on the baking sheet.
- Prepare the rub: In a small bowl, combine the olive oil, kosher salt, chili powder and cayenne pepper to create a paste. Pour the paste over the chicken pieces and, using your hands or a pastry brush, coat the chicken on all sides.
- Bake the drumsticks until cooked through (their internal temperature should reach 165ºF) and juices run clear, about 40 minutes. Check them after the first 30 minutes and loosely cover them with foil if they seem to be darkening too fast on top.
- If you wish, garnish with chopped parsley and red pepper flakes, then serve.

PIONEER WOMAN'S SPICY ROASTED CHICKEN LEGS
Great recipe from PW. I couldn't find any hot salt so I tried a recipe for it that I found on the internet but next time I will just use salt and Cajun seasoning. PW says if you don't want to use hot salt use any seasoning you like. I didn't bother with broiling the legs, they looked just fine right out of the oven.

- Preheat oven to 400 degrees. Place a rack on a baking sheet. Rinse the chicken legs and pat dry.
- Melt butter in a medium saucepan. Add the lemon juice and hot salt to the butter. Using tongs, dip chicken legs one at a time into the butter mixture, coating all sides. (You may need to tip the pan to get all the legs coated towards the end.) Place legs on the baking rack. Brush the remaing butter mixture on the legs with a pastry brush. Sprinkle with more hot salt.
- Place in the oven and bake for 30 minutes or until done. If you would like them to look more brown you can turn on the broiler for a few minutes but be sure to watch closely so they don't burn. Remove to a platter and serve.

- Melt 2 sticks of butter in a saucepan. Pour ½ cup of lemon juice (fresh or bottled). Now add your seasonings. In this case, 1 tablespoon of Morton's Hot Salt. - Combine beer, mustard, garlic, pepper flakes, salt, and pepper in a 1-gallon resealable plastic bag. Add chicken drumsticks; turn to coat evenly. Seal bag, squeezing out all the air.

- Preheat the oven to 350 degrees F. Lay the chicken legs out in a foil-lined baking dish with high sides (the foil is to make clean up easier — it’s not essential but helps a whole lot). A high-sided sheet pan is the best option because it has sides to keep everything in, but is big enough that the chicken isn’t drowning in the sauce. - Chicken ... First, remove the chicken from the refrigerator, pat dry; then, add all the seasonings to a small bowl - and, mix to combine. Season the chicken on all sides; and, let it rest on the counter to take the chill off (a good 30-40 minutes). You don't want to bake COLD chicken.
- Bake ... Now, I love to use a sheet pan lined with parchment paper or foil, and top with a baking rack. Now, it is recommended; but, not necessary. You can add the chicken directly on the parchment or foil. However, the backing rack allows the chicken to brown evenly on both sides without flipping. If you don't use a baking rack; spray the paper or foil with a non stick spray.
- Cook in a 425 oven, on the middle shelf; until you get an internal temperature of 165 degrees which is safe; But, I like to go a bit higher temp for the legs. They will actually remain a bit PINK; yet, if they are 165, they are done. I usually will let legs go to 170 for my tastes ... and they still are very juicy. I also flip them once during cooking; especially if you do not use a baking rack. Total cooking time is between 25 and 40 minutes, depending on the size of the drumsticks/legs. Once, I got small legs ... the next time, 'monster' legs. So, you just have to be aware - size does matter, when it comes to cooking times.
- Sauce ... Add all the ingredients to a large bowl; and, mix to combine. Then, add the chicken legs; and toss in the sauce. I simply melted the butter in the microwave.
