This Baked Chicken Drumstick Recipe is a sweet and spicy one! Sticky and addictive, these baked drumsticks are perfect for parties and mid-week meals!

20 chicken drumsticks
1/3 cup flour ((any variety for GF))
3 tablespoons corn starch
1 tablespoon salt
3 1/2 cups pineapple juice
1 cup brown sugar
1/4 cup soy sauce
1/4 cup rice vinegar
2 tablespoons fresh grated ginger
3 cloves garlic, (minced)
1/4-1/2 cup Sriracha sauce

Steps:

  • Preheat the oven to 450 degrees F. Line two rimmed baking sheets with foil, spray with non-stick cooking spray, and set aside.
  • Mix the flour, corn starch, and salt together in a bowl. Using paper towels, dry each drumstick and roll them in the flour mixture for a light dusting. Then lay them out on the baking sheets, evenly spaced.
  • Bake the drumsticks for 30 minutes, flipping once.
  • In the meantime, pour the pineapple juice and all remaining ingredients in a sauce pot. (If you are sensitive to heat, add 1/4 cup Sriracha; if you really like spicy food, add 1/2 cup.) Bring the sauce to a boil, reduce the heat and simmer for 30 minutes.
  • Then pour the sauce over the drumsticks evenly. Roll the drumsticks around in it to coat, and place back in the oven, uncovered.
  • Bake another 20 minutes, until the sauce is thick and sticky and the drumsticks are well coated. Serve warm.

8 medium chicken drumsticks (4 oz each)
2 tablespoons olive oil
1 teaspoon Diamond Crystal kosher salt ((not fine salt))
2 teaspoons chili powder
1/2 teaspoon cayenne pepper
2 tablespoons chopped parsley
Pinch red pepper flakes

Steps:

  • Preheat your oven to 400 degrees F. Line a rimmed baking sheet with high-heat-resistant parchment paper.
  • Wipe the chicken drumsticks dry with paper towels. Arrange them in a single layer on the baking sheet.
  • Prepare the rub: In a small bowl, combine the olive oil, kosher salt, chili powder and cayenne pepper to create a paste. Pour the paste over the chicken pieces and, using your hands or a pastry brush, coat the chicken on all sides.
  • Bake the drumsticks until cooked through (their internal temperature should reach 165ºF) and juices run clear, about 40 minutes. Check them after the first 30 minutes and loosely cover them with foil if they seem to be darkening too fast on top.
  • If you wish, garnish with chopped parsley and red pepper flakes, then serve.

¼ cup butter, cubed
½ teaspoon garlic powder
½ teaspoon onion powder
salt and pepper to taste
1 ½ cups blue cheese salad dressing

  • Place the drumsticks in a slow cooker, and sprinkle evenly with pieces of butter. Pour the hot sauce over the chicken, then season with garlic powder, onion powder, salt and pepper. Cover, and cook on High for 3 hours, or until tender. Serve chicken legs with blue cheese dressing on the side.

Great recipe from PW. I couldn't find any hot salt so I tried a recipe for it that I found on the internet but next time I will just use salt and Cajun seasoning. PW says if you don't want to use hot salt use any seasoning you like. I didn't bother with broiling the legs, they looked just fine right out of the oven.

24 whole chicken legs
1 cup butter
1/2 cup lemon juice
1 tablespoon hot salt

Steps:

  • Preheat oven to 400 degrees. Place a rack on a baking sheet. Rinse the chicken legs and pat dry.
  • Melt butter in a medium saucepan. Add the lemon juice and hot salt to the butter. Using tongs, dip chicken legs one at a time into the butter mixture, coating all sides. (You may need to tip the pan to get all the legs coated towards the end.) Place legs on the baking rack. Brush the remaing butter mixture on the legs with a pastry brush. Sprinkle with more hot salt.
  • Place in the oven and bake for 30 minutes or until done. If you would like them to look more brown you can turn on the broiler for a few minutes but be sure to watch closely so they don't burn. Remove to a platter and serve.

2 sticks Butter
1 tbsp. Hot Salt (or You Favorite Seasonings)
1/2 c. Lemon Juice (or To Taste)

Steps:

  • Melt 2 sticks of butter in a saucepan. Pour ½ cup of lemon juice (fresh or bottled). Now add your seasonings. In this case, 1 tablespoon of Morton's Hot Salt. You can use whatever seasonings makes your skirt fly up, be it minced garlic, salt and Cayenne pepper ... let your imagination run wild. Stir it together until combined.Rinse and pat your chicken legs dry. With metal tongs, transfer them one by one into the butter mixture and place on a baking sheet. Once all of the chicken legs are coated and on the baking rack, take a pastry brush and give them one last coating of the butter mixture. Sprinkle them with some more of your seasonings.Place them into a 400-degree oven for 30 minutes. If they need a bit more color, turn on the broiler for a couple minutes and watch them closely. Remove them when they are nice and golden brown.

½ cup light beer
⅓ cup prepared yellow mustard
2 cloves garlic, chopped
½ teaspoon red pepper flakes
½ teaspoon salt
½ teaspoon black pepper
2 pounds chicken drumsticks

Steps:

  • Combine beer, mustard, garlic, pepper flakes, salt, and pepper in a 1-gallon resealable plastic bag. Add chicken drumsticks; turn to coat evenly. Seal bag, squeezing out all the air.
  • Let chicken marinate in the refrigerator, at least 2 hours and preferably overnight.
  • Preheat oven to 425 degrees F (220 degrees C). Place drumsticks and sauce into a baking dish, discarding the plastic bag.
  • Transfer drumsticks and marinade to a baking dish and cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Check chicken and remove cover if desired. Continue to bake until chicken is no longer pink at the bone and the juices run clear, about 15 more minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

Juice of 2 to 3 lemons
1/2 teaspoon salt
1 teaspoon black pepper
1 teaspoon cayenne pepper
4 cloves garlic, minced
24 whole chicken legs

Steps:

  • Preheat the oven to 450 degrees F. Line baking sheets with foil.
  • Melt the butter in a saucepan. Add the lemon juice, salt, black pepper, cayenne and garlic, and stir. Set aside.
  • Rinse and pat the chicken legs dry. With metal tongs, dip them one by one into the butter mixture and place on the prepared baking sheets.
  • Once all of the chicken legs are coated and on the baking sheet, take a pastry brush and give them one last coating of the butter mixture.

6 tbsp of ketchup
Salt to taste
1-2 tsp chilli flakes
1-2 tsp of cayenne
1/2 onion chopped
2 garlic cloves chopped
A pinch of thyme
1/4 tsp of pimento (optional)
A few drops of tobasco (optional)
Vegetable oil

Steps:

  • Preheat the oven at 400F/200C.
  • Add marinade ingredients to a bowl and mix until well combined. Reserve 1/4 of the marinade for basting later.
  • Next, add drumsticks to the marinade and mix until well combined. Option: If you have extra time then feel free to cover the drums with cling film in a bowl and leave them to marinate for 30 minutes in the fridge. This will intensify the flavors of the chicken.
  • Add marinated chicken drums to a greased oven tray and bake for 30 minutes. Flip drums over and baste with marinade every 5 minutes.

  • Preheat the oven to 350 degrees F. Lay the chicken legs out in a foil-lined baking dish with high sides (the foil is to make clean up easier — it’s not essential but helps a whole lot). A high-sided sheet pan is the best option because it has sides to keep everything in, but is big enough that the chicken isn’t drowning in the sauce. It will caramelize best if half of the chicken is poking out of the sauce while cooking.
  • In a glass measuring cup, measure out the honey, soy sauce, ketchup, garlic, and Sriracha, and stir together. If the mixture doesn’t combine well, microwave it on high for 30 seconds and stir again. Pour the honey mixture over the chicken legs.

  • Bake ... Now, I love to use a sheet pan lined with parchment paper or foil, and top with a baking rack. Now, it is recommended; but, not necessary. You can add the chicken directly on the parchment or foil. However, the backing rack allows the chicken to brown evenly on both sides without flipping. If you don't use a baking rack; spray the paper or foil with a non stick spray.
  • Cook in a 425 oven, on the middle shelf; until you get an internal temperature of 165 degrees which is safe; But, I like to go a bit higher temp for the legs. They will actually remain a bit PINK; yet, if they are 165, they are done. I usually will let legs go to 170 for my tastes ... and they still are very juicy. I also flip them once during cooking; especially if you do not use a baking rack. Total cooking time is between 25 and 40 minutes, depending on the size of the drumsticks/legs. Once, I got small legs ... the next time, 'monster' legs. So, you just have to be aware - size does matter, when it comes to cooking times.
  • Sauce ... Add all the ingredients to a large bowl; and, mix to combine. Then, add the chicken legs; and toss in the sauce. I simply melted the butter in the microwave.
