1 small onion, chopped
1 jalapeno pepper, seeded and chopped
1 garlic clove, minced
2 teaspoons vegetable oil
1 can (16 ounces) refried beans
2 tablespoons water
1 teaspoon hot pepper sauce
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
1/8 teaspoon cayenne pepper
1/2 cup shredded Monterey Jack cheese

Steps:

  • In a large skillet, saute the onion, jalapeno and garlic in oil for 2-3 minutes or until tender. Stir in the beans, water, hot pepper sauce, cumin, chili powder and cayenne. Cook and stir over medium-low heat until heated through. Transfer to a serving bowl; sprinkle with cheese.

1 (15 ounce) can black beans, rinsed and drained
¾ cup sour cream
1 cup salsa
1 (4 ounce) can diced jalapeno peppers
1 ½ cups shredded Colby cheese
¼ cup sliced black olives

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Combine refried beans and black beans in the bottom of baking dish. Top with sour cream, salsa, jalapenos, and cheese. Sprinkle with black olive slices, if desired.
  • Cover dish, and bake in preheated oven for 15 minutes. Uncover, and bake until hot and bubbly, about 15 additional minutes.

1 cup shredded cheddar cheese (4 ounces )
3/4 cup sour cream

1 jalapeno (stems and seeds removed, finely diced)
1 Tablespoon chili powder
1/4 teaspoon ground cumin
2 green onions (chopped, for garnish)
Tortilla chips (for serving)

Steps:

  • Preheat oven to 375 degrees F.
  • Combine all of the ingredients except for the green onions in a large bowl. Mix with a hand mixer until combine, then pour into a large skillet or square baking dish.

2 small shallots (or 1/4 white onion)
2 jalapeños
2 (14 oz) cans of refried beans
juice of 1 lime
1 tsp smoked paprika
1/2 tsp chili powder
2/3 cup fresh cilantro leaves
salt & pepper to taste

Steps:

  • Combine garlic, shallots, and jalapeños together in a food processor. Pulse until finely chopped.
  • Add the remaining ingredients and blend until smooth.
  • Add spices to your desired flavor (sometimes I add garlic powder, or olive oil for a thinner consistency).
  • Serve with tortilla chips.

1 serrano chile, whole
One 15-ounce can pinto beans, preferably organic, rinsed and drained
1/4 cup low-sodium chicken broth
Salt and freshly ground black pepper

Steps:

  • Melt the butter with the olive oil in a saucepan over medium-high heat. Add the serrano chile and cook until the chile begins to brown, about 1 minute. Add the beans and chicken broth. Cook over medium heat, frequently mashing only the beans (not the chile), until the beans are a thick paste, about 10 minutes. Season with salt and pepper. Remove the chile and serve.

4 oz cream cheese (softened)
½ cup sour cream
4 teaspoon taco seasoning
¼ cup mild green chilies (drained and chopped)
¼ cup jalapenos (deseeded and chopped - adjust quantity according to your taste preference)
2 green onion (white and green part separately chopped)
1 ½ cup Monterey Jack cheese (freshly grated, divided)
1 ½ cup sharp cheddar cheese (freshly grated, divided)
Fresh cilantro
Green onion
Pico De Gallo (optional)
Few Jalapeno slices

Steps:

  • Preheat the oven to 350°F. In a bowl add refried beans, softened cream cheese, sour cream, and taco seasoning. Using a stand mixer or a hand blender or whisk beat it together until combined. You want to have a smooth mix.
  • Add mild green chilies (drained and chopped), jalapenos (if using), the white part of green onion, and half of both Monterey Jack and sharp cheddar cheese.
  • Mix it all.
  • Use any baking dish such as an 8x8 inch square dish or 2qt baking dish. Grease it with cooking spray (optional).
  • Spread bean dip mix on the dish.
  • Sprinkle the remaining cheese on top evenly.
  • Bake in preheated oven at 350°F for 18 to 20 minutes or until hot and cheese is melted and bubbly.
  • Serve hot with tortilla chips. You can also use protein-rich refried bean dip in other Mexican dishes such as tacos, enchiladas, and burritos. Also, spread them on a quesadilla or on top of a tostada. It's delicious any way you serve it!

1/2 tsp garlic powder
2 tbsp cotija cheese (crumbled)

  • In a food processor pulse the bell pepper, onion and chipotle pepper until chopped. Add the beans, vinegar, hot sauce, cumin, salt, chili powder, and garlic powder.

1 pound dried pinto beans
½ large sweet onion, (peeled and cut into wedges)
4-6 cloves garlic (smashed)
1 cup pico de gallo
1 cup shredded Mexican blend cheese
1 teaspoon salt

Steps:

  • To make on the stovetop, soak the beans in cold water overnight.
  • Then pour off the water and place the soaked beans in a large 6 quart sauce pot. Pour fresh water into the pot, covering the beans by 3-4 inches.
  • Turn the heat to medium. Add the onion, garlic, and salt. Cover and simmer for 2-4 hours. *The older the dried beans are, the longer they will take to cook.
  • You do not have to soak the beans if pressure cooking them. Place them in the Instant Pot, with the onions, garlic, salt, and 5 cups water.
  • Set on Pressure Cook High for 35 minutes. Then preform a Natural Release. Once the steam button has dropped it is safe to open the lid. *If the beans are too firm, pressure cook for 5-10 more minutes, then perform a quick release.
  • Once the beans are very soft, drain off the liquid and reserve for later use.
  • Pour the beans into a large food processor. Add the pico de gallo and 1 cup of reserved liquid. Pulse until mostly smooth. Then add the shredded cheese and pulse a few more times to melt the cheese into the beans. If you like your bean dip to be looser, add another ¼ to ¾ cups of cooking liquid.
  • Top with a fresh scoop of pico de gallo on top, and serve with tortilla chips or veggies.

Steps:

  • 1. Finely chop jalapeno and shred cheese. Sqeeze one fresh lime.
  • 2. Mix refried beans and sour cream.
  • 3. Add all ingredients together and mix.
  • 4. Microwave on high for one minute intervals until all cheese is melted.
  • 5. Serve with your favorite chips, my favorite chips are Juanitas! You can also add some salsa for flavor. My favorite (after many tested) salsa is Herdez! Next to homemade Herdez is the best!
