SPICED RAISIN BREAD
I have two bread machines, and one is often busy baking this soft chewy loaf. The bread's nutmeg, cloves and orange peel fill my home with a wonderful aroma. Slices are great for peanut butter sandwiches.

- In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. , Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons water or flour if needed).

- Preheat oven to 350°. In a large bowl, combine flour, 1-1/2 cups sugar, soda and salt. In a small bowl, whisk eggs, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in raisins. Combine cinnamon and remaining sugar; set aside. , Spoon half the batter into 2 greased 8x4-in. loaf pans. Sprinkle with half of the reserved cinnamon sugar; repeat layers. Cut through batter with a knife to swirl. , Bake 55-60 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans to wire racks. Freeze option: Wrap cooled bread in foil and freeze for up to 3 months. To use, thaw at room temperature.

SPICY RAISIN QUICK BREAD
Fragrant with allspice and lightly sweetened with brown sugar and raisins, this is a delightful little quick bread! (Slightly adapted from an Arrowhead Mills recipe.)

Steps:
- Preheat oven to 350 degrees.
- Lightly grease an 8 x 4 inch loaf pan.
- In a large mixing bowl, whisk together whole wheat pastry flour, oat flour, baking powder, ground allspice, ground cinnamon, and salt.
- In a medium mixing bowl, whisk together egg, nonfat milk, light brown sugar, melted butter, and vanilla extract.
- Add wet ingredients to dry, and mix until just combined; then gently stir in dark seedless raisins.
- Spoon batter into prepared loaf pan, and level the top.
- Bake for 45 to 50 minutes, or until a wooden toothpick inserted into the center comes out clean.
- Let bread cool in pan for 10 minutes; then remove from pan and transfer to a wire rack to cool completely before serving.

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
- Place butter, sugar, and 1 egg in large bowl. Beat well. Beat in second egg. Stir in milk and vanilla.
- In another bowl measure in flour, baking powder, and salt. Stir in raisins. Pour all at once into batter. Stir to moisten only. Spoon into greased loaf pan.
- Bake in 350 degree F (175 degree C) oven for 1 hour or until it tests done. Cool 10 minutes. Turn out of pan. Cool on rack. Wrap to store. Allow to ripen a day or two to improve flavor. Serve buttered.

- Soak raisins in coffee until plump. Do not drain.
- Cream together the shortening, sugar and eggs. Blend in molasses and vanilla.
- In a large bowl mix together the cinnamon, nutmeg, cloves, ginger, flour, baking soda, and salt. Make a well in the center of the bowl.
- Add the liquid ingredients to the well in the dry ingredients. Stir in coffee with raisins and nuts. Pour batter into a greased 9x5 inch loaf pan.
- Bake in a preheated 350 degree F(175 degrees C) oven for one hour.

- Sift together flour, baking powder, and salt in a large bowl.
- Add brown sugar and raisins. Stir well.
- Now add the eggs, milk, sour cream and melted butter. Stir well, but don't overmix.
- Pour batter into a well greased 8x4 laof pan.
- Bake at 350* for 1 hour.
- Cool 20-30 minutes in the pan. Turn out onto wire rack to completely cool.
- This is wonderful served with butter.
