SPICY CHEESE PUFFS
They have bacon .. need I say more!!

Steps:
- 1. Preheat the oven to 375 f
- 2. Line a baking sheet with parchment paper or a silpat.
- 3. In a medium saucepan over medium heat, bring the milk, butter, and the 1/4 teaspoon salt to a boil. When the butter has melted, remove from heat and add the flour all at once. Using a wooden spoon, beat the mixture vigorously until it forms a ball. Return to medium heat and continue stirring for 1 minute, or until the mixture dries. .
- 4. Remove the mixture from the saucepan and spoon it into a food processor. Let cool for 5 minutes. After it has cooled slightly, process for a few seconds.
- 5. Add the eggs and cayenne and process for another 15 seconds, or until it is well combined. Transfer the mixture to a mixing bowl and let cool for 10 minutes. Stir in the cheese and bacon until they are just mixed in.
- 6. Drop heaping tablespoons of dough onto your prepared baking sheet spacing the mounds 2 inches apart. Sprinkle the tops of the puff with fleur de sel. Bake for 30 minutes, or until browned and crisp. Serve warm.

- Add 650ml of warm (but not hot!) water to a mixing bowl. Add ½ Tbsp of salt, 200g of sugar, and 1 pack or 2 ¼ tsp of active dry yeast to the bowl. Whisk these ingredients together and let them sit for 5 minutes while the yeast activates.
- Add 700g of plain flour and ½ tbsp of nutmeg and 1/4-1/2 tbsp of pepper to the mixture and mix it all together. At this point, your puff puff batter should look a lot like pancake batter. Put the mixture aside again, this time with a clean cloth over the top of the bowl, and let it rise for 1-2 hours. Keep it in a warm place while it rises.
- Once 1-2 hours have passed and your batter has risen, heat up some vegetable oil (or sunflower oil) in a saucepan. You should have enough oil that it will cover all of the puff puffs that you add to it.
