A friend shared this recipe for marvelously flavorful pork years ago. It really sparks up a barbecue and has been popular whenever I've served it. I guarantee you'll get many requests for the recipe. -Diana Steger, Prospect, Kentucky

1 to 3 tablespoon chili powder
1 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground thyme
1/4 teaspoon pepper
2 pork tenderloins (about 1 pound each)

Steps:

  • Combine the first five ingredients; rub over tenderloins. Cover and refrigerate for 2-4 hours. , Grill, covered over medium-hot indirect heat for 25-40 minutes or until thermometer reads 160°.

1 teaspoon salt
¼ teaspoon ground ginger
¼ teaspoon dried thyme

2 (1 pound) pork tenderloins

Steps:

  • In a small bowl, mix together chili powder, salt, ginger, thyme, and black pepper. Rub spice mix into pork tenderloins. Place meat in a baking dish, cover, and refrigerator for 2 to 3 hours.
  • Preheat grill for medium heat.
  • Brush oil onto grill grate, and arrange meat on grill. Cook for 30 minutes, or to desired doneness, turning to cook evenly.

1 pork tenderloin, cut into strips
1 clove of garlic, chopped
1/2 red onion, sliced
3-4 tbsps of olive oil
1-2 tbsps red wine vinegar
1 tbsp dried oregano
1 tbsp dried thyme
1 tbsp dried rosemary
1/2 tbsp of honey
1 cucumber
2 cloves of garlic
1/4 of a cup extra virgin olive oil
500g of yogurt (18 ounces)
1-2 tbsps of red wine vinegar
salt and freshly ground pepper to taste
4 pita breads
1 red onion, sliced
1 tomato, sliced
fried potatoes (optional)
some lettuce

Steps:

  • To prepare this souvlaki recipe start by preparing the pork gyros. Mix into a large bowl the tenderloin (cut into strips), the garlic, the red onion, 3-4 tbsp of olive oil, 1-2 tbsp of red wine vinegar, some thyme, some rosemary, and mix with your hands. Squeeze the ingredients together, so that all the flavours blend and add 1/2 tbsp of honey. Wrap the bowl and put it into the fridge. Leave the marinade in the fridge for at least 2 hours, before using it (ideally leave it over night).
  • In a (very hot) large non-sticking pan, add the tenderloin along with the ingredients of the marinade, and sauté for 1 minute on each side, without stirring, until the meat is nicely coloured, crispy and tender inside.
  • To prepare the tzatziki sauce for the pork gyros, pour in a food processor the olive oil and garlic and blend until the garlic is diluted (don't leave any large pieces of garlic). Into a large bowl, grate the cucumber, season with salt and pepper and leave it aside for 10 minutes. Wrap the grated cucumber into a towel and squeeze, in order to get rid of most of the water. Into a bowl, add the cucumber, the blended garlic and oil, the yogurt, 1-2 of red wine vinegar, salt and pepper and mix. (This recipe is for 5-6 servings. Store in the fridge and always serve cold.)
  • Use a cooking brush to oil the pita breads on both sides and season with salt, pepper and oregano. Place a large pan (upside down) at the bottom of the oven, place the pita breads on top, and bake in preheated oven at 250C for about 1 minute.
  • Pork gyros is usually served wrapped, like a sandwich. To serve, spread some tzatziki sauce on the pita breads and top with the pork gyros, some slices of red onion, some sliced tomato and wrap.
  • For an easier version, you can substitute the tzatziki sauce with some fresh yogurt or some mustard and mayonnaise sauce.

1 ½ pounds ground pork sausage
1 medium head cabbage, shredded
1 small onion, chopped
1 tablespoon crushed red pepper
1 tablespoon white sugar
salt to taste
½ cup water
⅓ cup sour cream
1 (8 ounce) package pitas, halved

Steps:

  • In wok or skillet, brown pork sausage, drain and set aside.
  • Combine in wok or skillet: Shredded cabbage, onion, crushed red pepper, sugar, salt, and water. Steam covered for approximately 20 minutes or until cabbage is tender; stirring occasionally.
  • Return pork sausage to wok or skillet with cabbage mixture and add sour cream; mix well. Serve stuffed inside warmed pita bread.

1 cucumber, peeled and diced
1/2 teaspoon dill, dried
1 cup fat free sour cream
8 ounces pork tenderloin
2 teaspoons Dijon mustard
1 tablespoon olive oil
1 tablespoon lemon juice
1 garlic clove, minced
1/2 teaspoon oregano, dried
1 green pepper, thinly sliced
1 red onion, thinly sliced into rings
4 pita breads, halved
1 cup spinach, shredded
8 cherry tomatoes, halved

Steps:

  • In a small bowl, combine the cucumbers, sour cream, and dill. Refrigerate until needed.
  • Cut the pork across the grain into 1/2-inch cutlets; then slice each piece into thin strips.
  • In a large bowl, combine the mustard, oil, lemon juice, garlic, and oregano. Add the pork and toss well to coat all the pieces. Let stand about 10 minutes.
  • Coat a large no-stick frying pan with no-stick spray, and place over medium heat for 3 minutes.
  • Working in bunches to avoid overcrowding in the pan, add the pork and sauté for about 3 minutes or until cooked through. Transfer to a plate.
  • Place peppers and onions in a 9-inch glass pie plate. Cover with vented plastic wrap, and microwave on high for 3 minutes or until soft.
  • Add the onions and peppers to the pan; sauté for 3 minutes, or until lightly browned. Top pork mixture with peppers and onions.
  • Line the pita pockets with the spinach. Add the pork mixture. Top each sandwich half with a tomato and some cucumber sauce.

This is from Every Day w/ Rachael Ray. It's inexpensive, easy and tastes great. I'm not a fan of bell peppers, so I used a bit of petite diced tomatoes for color and flavor.

3 garlic cloves, finely chopped
1 tablespoon olive oil
1 red bell pepper, chopped
1/2 onion, chopped
1 1/2 teaspoons habanero peppers, finely chopped
1 teaspoon ground cumin
1 lb ground beef
4 pita bread
salt and pepper, to taste

Steps:

  • preheat oven to 500 degrees.
  • In a small bowl, combine the yogurt and 2 garlic cloves and season with salt and pepper.
  • In a large skillet, heat the olive oil over medium heat. Add the bell pepper and onion and cook, stirring occasionally, until softened, about 5 minutes.
  • Stir in the remaining garlic, the chile and cumin and cook for 30 seconds.
  • Add the beef and cook, breaking up with a spoon, until no longer pink, about 5 minutes and season with salt and pepper.
  • Place pitas on a baking sheet and bake for apx 5 minutes until a little brown.
  • Top with ground beef mixture and serve with garlic yogurt.
