Most people don't think about grapes when creating a canned pickle recipe. The pickling liquid for these grapes includes red wine, vinegar, and common pickling spices like coriander, mustard seeds and hot pepper; it also contains warm spices like cinnamon and star anise along with brown sugar. Number Of Ingredients 12

5 cups seedless red grapes
4 jalapeno peppers, seeded and sliced
2 tablespoons minced fresh gingerroot
2 cinnamon sticks (3 inches), halved
4 whole star anise
2 teaspoons coriander seeds
2 teaspoons mustard seed
2 cups packed brown sugar
2 cups white wine vinegar
1 cup water
1 cup dry red wine
1-1/2 teaspoons canning salt

Steps:

  • Pack grapes into four hot 1-pint jars to within 1-1/2 in. of the top. Divide jalapenos, ginger, cinnamon, star anise, coriander seeds and mustard seed among jars., In a large saucepan, combine brown sugar, vinegar, water, wine and canning salt. Bring to a boil; cook until liquid is reduced to 3 cups, 15-18 minutes., Carefully ladle hot liquid over grape mixture, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot liquid. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

1 pound seedless red grapes
1 ½ cups apple cider vinegar
1 cup water
1 cup raw sugar
½ small red onion, cut into slivers
2 teaspoons yellow mustard seeds
1 teaspoon whole black peppercorns
1 cinnamon stick
1 bay leaf
1 star anise pod
1 whole allspice

Steps:

  • Remove stems and discard any grapes that aren't firm and unblemished. Place grapes in a quart-size mason jar and set aside.
  • Combine vinegar, water, sugar, red onion, mustard seeds, peppercorns, cinnamon stick, bay leaf, star anise pod, and allspice in a saucepan; bring to a boil. Reduce heat to low and simmer until onion is softened, about 10 minutes. Remove saucepan from heat and cool for 15 minutes.
  • Carefully pour cooled liquid over grapes and gently swirl jar to incorporate spices. Cover jar and refrigerate 1 day before eating.

1/2 cup sugar
1/2 cup white vinegar
1/2 cup cider vinegar
1 banana pepper, sliced
2 jalapeno peppers, sliced
1 red chili pepper, sliced
4 cinnamon sticks (3 inches)
2 inches fresh gingerroot, peeled and thinly sliced
1 tablespoon coriander seeds
1 teaspoon whole allspice
4 drops hot pepper sauce
1-1/2 pounds green grapes, halved
1-1/2 pounds seedless red grapes, halved

Steps:

  • In a large saucepan, bring the first 11 ingredients to a boil. Reduce heat; simmer until sugar is dissolved, 3-5 minutes. Remove from heat and cool slightly. Place grapes in a large bowl; add pickling liquid. Refrigerate, covered, at least 12 hours before serving.

½ cup water
½ teaspoon Chinese five-spice powder
1 pound seedless grapes

Steps:

  • Combine sugar and water in a saucepan; simmer over medium heat until sugar is dissolved, about 2 minutes. Remove saucepan from heat and stir Chinese five-spice powder into sugar mixture.
  • Pierce each grape all the way through using a fork. Add grapes and sugar mixture to a resealable bag; refrigerate, turning every few hours, until grapes are marinated, about 24 hours.

1 teaspoon ground cinnamon
10 whole cloves
1/4 cup crystallized ginger
2 medium jalapenos, diced
1 bunch green or red seedless grapes, plucked from stems

Steps:

  • Mix the vinegar, sugars, coriander, cinnamon and cloves together in a saucepan. Boil over medium heat for 2 to 3 minutes. Remove the saucepan from the heat and stir in the ginger and jalapenos. Add the grapes and allow to sit at least 1 hour or preferably, overnight. Use the grapes in your next chicken or fruit salad.

  • Prepare the grapes: pluck them from the stem and either cut off a small portion of the top for smaller grapes, or cut in half for large grapes. This cut is important for allowing the pickling liquid to infuse. Place the cut grapes into a clean 1 quart glass jar.
  • In a small pot add the remaining ingredients. Bring to a boil, and let boil for about 1 minute. Then turn off the heat and let cool for at least 15 minutes. Take the cinnamon stick and bay leaves and nestle them into grapes so they don't just float on top, then pour the pickling liquid into the glass jar. If needed add a little extra water or vinegar to fully cover the grapes. Let cool to room temperature before putting the lid on, then transfer to the refrigerator. Give them at least a day to pickle before eating (if you can!) and they should last a week.
