Tre's Bloody Mary Pickled Green Beans image

I love these in my Bloody Marys They aren't the same without at least two of these beans in the glass.

Number Of Ingredients 8

2 lbs green beans, bush (round slim bean not flat)
2 1/2 cups vinegar
2 1/2 cups water
1/4 cup canning salt
1 cayenne pepper (per jar) or 1 jalapeno pepper, with seeds no stems (per jar)
4 garlic cloves, peeled
4 heads fresh dill
2 canning jars, one quart (sterilized)

Steps:

  • Trim ends of green beans. Set lids of jars to boil in water in a small pan. Combine vinegar and water and salt in a large saucepot. Bring to a boil.
  • Pack beans lengthwise into hot jars, Add 1/4 teaspoon cayenne pepper, or the jalapenos slices, 2 cloves garlic and 2 heads of dill to each quart.
  • Ladle the boiling vinegar solution over beans. leaving 1/4 inch headspace. Place caps (still hot from the boiling water) on jars. Invert jars till cool.
  • You can place them in a hot water bath for 10 minutes, if desired. Store in a cool dry place for 4-6 weeks before opening.
  • After opening keep refrigerated. These are delicious! and non FAT!

Unlike the wan concoction found at your airport lounge, this mix packs a punch with a good slug of hot sauce and tangy pickle juice.

3 cups low-sodium vegetable juice
1 ½ cups dill pickle juice plus 8 pickle spears (from a 24-ounce jar)
1 ½ cups vodka
Juice of 1 large lemon, plus 1 lemon cut into 8 slices, divided
1 tablespoon hot sauce
1 teaspoon prepared horseradish
1 teaspoon Worcestershire sauce
½ teaspoon ground pepper
8 pitted olives
8 spicy pickled string beans
Ice and lime wedges for serving
8 stalks celery

Steps:

  • Mix vegetable juice, pickle juice, vodka, lemon juice, hot sauce, horseradish, Worcestershire and pepper in a large pitcher.
  • Thread 1 olive, 1 pickled bean and 1 lemon slice onto each of 8 skewers.
  • Fill 8 glasses with ice. Stir the mix in the pitcher to make sure it is well combined, then divide among the glasses. Garnish each with 1 vegetable skewer, 1 celery stalk, 1 pickle spear and a lime wedge, if desired. Serve immediately.

3 large celery stalks, plus additional stalks for serving
3 teaspoons prepared horseradish
2 teaspoons grated yellow onion
1/2 cup freshly squeezed lemon juice (2 lemons)
1 teaspoon Worcestershire sauce
1 teaspoon celery salt
1/2 teaspoon kosher salt
1/2 teaspoon Tabasco, or to taste
1 (46 ounce) can Sacramento tomato juice
2 cups vodka

Steps:

  • Cut the celery in large dice, including the leaves, and puree in the bowl of a food processor fitted with the steel blade. Add the horseradish, onion, lemon juice, Worcestershire sauce, celery salt, kosher salt, and Tabasco and puree it again. Pour the tomato juice into a 2 1/2-quart container, stir in the celery and seasonings mixture, then add the vodka and chill. Place a few ice cubes in each glass, pour in the Bloody Mary mixture, and garnish with a celery stick.
