SPICY CORN AND SHISHITO SALAD
In this recipe, shishito peppers are sliced, lightly sautéed, then tossed with raw summer corn and a cumin-lime vinaigrette for a summer salad that's crunchy, smoky and a little spicy. Traditionally used in Japanese and Korean cooking, shishitos are small, thin-skinned green peppers that have become increasingly popular in the United States. They are typically mild in flavor, but the occasional pepper packs a spicy punch. If you can't find them, use diced green bell peppers in their place. Finally, cilantro-averse cooks can substitute fresh mint.

- In a small bowl, whisk 2 tablespoons olive oil with the lime juice, cumin and 3/4 teaspoon salt. Stir in the red onion and garlic and set aside until ready to use. (Do this step first so the onions and garlic have time to mellow slightly in the dressing.)
- Place the corn kernels in a large bowl and set aside. In a medium (10-inch) sauté pan, heat the remaining 1 1/2 tablespoons olive oil over medium heat. Add the shishitos, jalapeño and a pinch of salt and cook, stirring occasionally, until the peppers are tender and beginning to brown, 4 to 6 minutes.
- Add the peppers and dressing to the bowl with the corn and toss well. Add the cheese, if using, and toss. Garnish with cilantro.

- Melt the butter in a large cast iron skillet over medium heat. Add the cream cheese and cook until softened and spreadable, about 3 minutes.
- Add the pickled jalapeños, jalapeño brine, and red and green bell peppers. Sauté for 3 minutes, until the peppers are tender.
- Add the corn, paprika, and salt and sauté until fully combined, about 5 minutes.

Baby corn pepper fry is a delicious appetizer which can be prepared with minimal ingredients. You can have this as a side for fried rice, noodles or as a starter.

- Wash the baby corn and chop them into small pieces. Now, boil water in a pan and put chopped baby corn in it.
- Cook baby corn for 3 to 5 minutes. Remove it from the stove once it becomes soft. Drain all the water and let it cool down a bit. Then add all purpose flour, corn flour, pepper powder and enough salt.
- Mix it till all the flour coated in baby corn. Water is not needed though you can add water very little if it is too dry. Then heat oil, fry baby corn over medium flame.
- Once baby corn is nice crispy and golden in color, remove and keep it in a tissue.
- Fry remaining baby corn. Heat a pan, add oil. Now, add in the chopped garlic.
- Then add in the chopped onion, add little salt only for onion. Saute till it is transparent, then add tomato ketchup. Give a mix.
- It is time to add fried baby corn and pepper powder. Mix everything.
- Finally, add chopped coriander leaves. Give a quick mix, turn off the stove. Baby corn pepper fry is ready!! Enjoy!!

- Grill corn to desired doneness, I like mine charred a little. And cut from cob.
- Melt butter in skillet and brown onion, bell pepper, jalapeno and half of basil.
- When onions and pepper are tender, add corn and heat all the way through. mix in remaining basil.
CHIPOTLE CORN SALAD
Steps:
- Stir together all dressing ingredients in a small bowl. Cover and refrigerate until needed.Can be made 24 hours in advance.
- Remove the husks and silk from the corn. Drizzle corn with olive oil. Grill corn for 10 to 15 minutes, turning every 3 to 4 minutes. Place the poblano peppers on the grill and grill until skin is black in spots on all sides.
- Remove corn from grill and let cool. When cool, cut kernels from the cob and place in a large bowl. Season with salt and pepper.Remove peppers from grill and place in a plastic ziptop bag for 5 minutes. Remove peppers from bag. Scrape the skin off. Cut them open, discard the seeds and dice the peppers. Add diced peppers to bowl with corn.
- Cook bacon in a nonstick skillet until crispy. Let cool and then crumble the bacon.
- Add bell pepper and green onions to bowl with corn. Add bacon.Add dressing to bowl and stir to mix everything. Add salt and pepper to taste.
- Serve immediately or refrigerate until ready to serve.
