Spicy Peanut Thai Vegetable Salad image

This is a very easy, amazingly tasty vegetable salad that takes minutes to make. The combination of all the greens, reds, orange and yellows in the vegetables make a wonderful presentation. It's the vinaigrette that brings all the veggies together. You can use any veggies you happen to have on hand; I think it would be great with tomatoes and lightly cooked asparagus. I made it at the last minute for a picnic with the veggies I had in my vegetable bin - everyone raved. I made it the next day for a work luncheon and had the same reviews.

Number Of Ingredients 8

12 ounces trader joe's asian spicy peanut vinaigrette (refrigerator section)
2 cups broccoli, slaw
2 cups shredded carrots
2 cups sugar snap peas
1 red bell pepper, cut match stick slices
1 cup cooked corn
1 cup cooked edemane soybeans
1/2 cup salted peanuts

Steps:

  • Place all vegetables and peanuts in a bowl.
  • Add vinaigrette to taste (I used about 3/4 of the bottle for all the above ingredients).
  • Wait and add the vinaigrette just prior to serving to prevent ingredients from becoming soggy.

  • Prepare the vegetables: spiralize (or thinly shred) the carrot and cucumber and place in a large bowl. Finely slice the spring onions, red pepper, mange tout peas and chilli and add to the bowl. Add the beansprouts, then finely chop the coriander and peanuts and add to the salad. Toss everything together.
  • Place all the ingredients for the dressing into a blender or mini-chopper - juice the lime, and finely slice the chilli, (you may prefer to remove the seeds for less heat). Blitz until completely smooth.
