My Spicy Orange Chicken has the same flavor profile as its take-out counterpart, Orange Chicken: the sweet orange, the spicy chilies, and the Asian condiments. I make this without oil, making something much lighter and very tasty.

1 cup orange juice
⅓ cup brown sugar
⅓ cup rice vinegar
2 tablespoons fish sauce
1 tablespoon soy sauce
1 tablespoon fresh ginger root, grated
1 teaspoon crushed red pepper flakes
2 pounds skinless, boneless chicken thighs, cut into chunks
1 bunch green onions, sliced, white parts and tops separated
1 fresh jalapeno pepper, sliced into rings
1 red bell pepper, cut into 2 inch pieces
½ cup sugar snap peas
4 cloves garlic, minced
2 tablespoons grated orange zest
1 bunch cilantro leaves, for garnish

Steps:

  • Whisk orange juice, brown sugar, rice vinegar, fish sauce, soy sauce, ginger, and crushed red pepper flakes in a large bowl.
  • Mix in chicken pieces and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 1 hour.
  • Remove chicken from refrigerator and drain thoroughly in colander, reserving marinade.
  • Heat a large non-stick skillet over high heat. Cook and stir chicken for 2 minutes; spoon out any excess liquid.
  • Continue to cook and stir until chicken caramelizes, 6 to 7 minutes.
  • Stir in white portions of green onions, garlic, and orange zest; cook and stir 2 to 3 minutes.
  • Pour in half of reserved marinade. Simmer until reduced and thickened, 3 to 4 minutes.
  • Stir in jalapeno pepper, bell pepper, and sugar snap peas; cook and stir until vegetables are warmed, about 2 minutes.
  • Stir in green portions of green onions; cook and stir 1 minute.
  • Remove from heat. Garnish with cilantro and serve.

2 tablespoons all-purpose flour
2 tablespoons cornstarch
¼ teaspoon baking soda
¼ teaspoon baking powder
2 tablespoons low-sodium soy sauce
1 tablespoon dry sherry
2 tablespoons water
1 teaspoon vegetable oil
1 dash sesame oil
1 pound skinless, boneless chicken breast meat - cubed
1 cup chicken broth
1 cup white sugar
2 tablespoons distilled white vinegar
2 tablespoons dark soy sauce
2 tablespoons sesame oil
1 teaspoon chile paste
1 clove garlic, minced
¼ cup cornstarch
½ cup water
1 quart olive oil for frying
2 tablespoons toasted sesame seeds

Steps:

  • Sift flour, 2 tablespoons cornstarch, baking soda, and baking powder into a bowl. Pour in low-sodium soy sauce, sherry, 2 tablespoons water, vegetable oil, and a dash of sesame oil; stir until smooth. Stir in chicken until coated with the batter, then cover, and refrigerate for 20 minutes.
  • Meanwhile, bring chicken broth, sugar, vinegar, dark soy sauce, sesame oil, chile paste, and garlic to a boil in a saucepan over high heat. Dissolve 1/4 cup cornstarch into 1/2 cup of water, and stir into boiling sauce. Simmer until the sauce thickens and turns clear, about 2 minutes. Reduce heat to low, and keep sauce warm.
  • Heat olive oil in a deep fryer or large saucepan to a temperature of 375 degrees F (190 degrees C).
  • Drop in the battered chicken pieces, a few at a time, and fry until they turn golden brown and float to the top of the oil, 3 to 4 minutes. Drain on a paper towel lined plate. To serve, place fried chicken pieces onto a serving platter, and pour the hot sauce overtop. Sprinkle with toasted sesame seeds to garnish.

Large pinch of dried crushed red pepper

Steps:

  • Cook rice according to package directions. Cover to keep warm; set aside.
  • Meanwhile, whisk juice, soy sauce, and cornstarch in medium bowl until cornstarch dissolves. Mix in orange peel.
  • Heat oil in large wok or nonstick skillet over high heat. Add onion and crushed red pepper. Stir-fry 30 seconds. Sprinkle chicken with salt and pepper. Add to wok and stir-fry until onion is crisp-tender and chicken is just cooked through, about 4 minutes. Add sugar snap peas and juice mixture. Toss until sauce thickens and comes to boil and peas are crisp-tender, about 2 minutes. Season with salt and pepper. Serve with rice.

About 3lbs of boneless skinless chicken breast, cut into chunks and/or strips
oil for frying
CHICKEN SEASONING (ALL TO TASTE)
salt
ground ginger
onion powder
garlic powder
cayenne pepper
small amount of cinnamon
4 cloves of garlic, minced
COATING
1 1/3c corn starch
SAUCE
1 18oz jar(s) orange marmalade
2 Tbsp sriracha (less or more to taste)
1/4 tsp cayenne pepper
1/2 Tbsp red pepper flakes
2 jalapeno's diced
1/2 white onion diced
few drops orange food coloring (optional)
sesame seeds, for garnish

Steps:

  • 1. Season the chicken with the spices listed. And allow to marinate for about 10 mins. Once fully seasoned, coat each piece in a thorough coating of cornstarch.
  • 2. Heat your oil to 375, once the chicken is fully coated, fry once for 3-5 minutes, until the semi crunchy. The chicken isn't suppsoed to be fully cooked yet, so don't worry. Allow to cool, then fry again until a golden brown color is achieved. Your chicken should be fully cooked and extra crunchy by then!
  • 3. (Optional Step) In a small sauce pot, heat the Orange marmalade until a looser consistency has formed. And pass through a fine sieve to get rid of any rind/pith. Then add the rest of the "Sauce" ingredients listed above, and set aside to cool
  • 4. In a large wok or high sided skillet, take about 3 tablespoons of the hot oil, and transfer it into the skillet. Sautee the pepper and onions. Once translucent, add the sauce mixture and stir to combine. If your sauce is too thin, take 1 tablespoon of the cornstarch and a bit of water, mix to combine, and add some to the sauce until desired consistency is achieved. Add your chicken, and toss to coat in the sticky glaze, and heat through. Garnish with sesame seeds, and enjoy with a side of rice

1/2 lb chicken breast, cut into 1-inch cubes
peanut oil, for frying (about 3 cups)
1 cup cornstarch
1 teaspoon toasted sesame seeds
1 cup orange juice
2 teaspoons light soy sauce
3 drops sesame oil
1/2 teaspoon salt
1 cup orange juice
1/2 cup chicken stock
2 tablespoons sugar
2 teaspoons light soy sauce
3 drops sesame oil
1 few teaspoons oil
1 garlic clove, minced
1 tablespoon apple cider vinegar
2 teaspoons cornstarch, dissolved in 1 tablespoon water
salt

Steps:

  • Combine the ingredients for the marinade. Add chicken and marinate for 15 to 20 minutes.
  • In a separate bowl, mix together the sauce ingredients: orange juice, chicken stock, sugar, soy sauce, salt, and sesame oil. In a small to medium sized pot, heat up a few teaspoons oil and sauté minced garlic until fragrant, about 1 minute. Add apple cider vinegar, then the combined sauce ingredients. Simmer until liquid is reduced by three fourths, about 15 minutes. Stir in cornstarch and water mixture until sauce thickens, then season with salt to taste. Set sauce aside and keep warm.
  • Drip excess marinade off the chicken, and toss cubes in 1 cup of cornstarch. Shake off excess before frying.
  • Meanwhile, heat up the 3 cups oil in a wok. When oil just begins to smoke, add the first batch of chicken cubes and deep-fry until cooked through, about 4 to 5 minutes. Remove chicken with a slotted spoon and drain on paper towels. Repeat with the rest of the chicken.
  • Reheat orange sauce and add drained chicken cubes. Mix until well-coated. Plate and sprinkle sesame seeds on top.

Steps:

  • In a glass bowl, whisk orange juice, orange zest, soy sauce, ginger, garlic, 1-tablespoon olive oil, Sriracha sauce, rice vinegar, brown sugar, and black pepper.
  • Place the chicken in a ziplock bag and pour 1/3 of the mixture in the bag. Seal the bag and place it in the fridge. Let it marinade for an hour.
  • Heat 1-tablespoon olive oil on a large non-stick skillet over high heat. Remove chicken from the bag and discard the marinade.
  • Add chicken, in 2 batches, and cook each batch for 6-7 minutes. Place the cooked chicken on a clean plate. Set aside.
  • Pour the rest of the marinade into the now-empty skillet and cook until boiling over medium high heat.
  • In the mean time, whisk together the cornstarch and water in a small bowl. It will be like a white paste. Whisk it into the marinade and let it boil for a minute.
  • Return chicken into the skillet and cook for 5 minutes or until chicken registers 160 F when a thermometer is inserted in some of the pieces of chicken.
  • Serve it immediately over rice. Sprinkle it with scallions and black sesame seeds.

Working over the small bowl with orange peel to catch juices, cut along the membrane of each segment to remove fruit; set sectioned oranges aside. Stir cornstarch, broth, vinegar, honey, soy sauce, lemon juice, jalapeno and pepper flakes into orange juice and peel., Sprinkle chicken with salt and pepper. In a large skillet, heat 1 teaspoon oil over medium-high heat. Add half of the chicken; stir-fry 5-7 minutes or until no longer pink. Remove from pan. Repeat with remaining oil and chicken., Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir 1-2 minutes or until sauce is thickened. Stir in reserved orange sections. Serve with rice. Sprinkle servings with sesame seeds and green onions.
