TEQUILA MOSCOW MULE WITH JALAPENO
A Mule Cocktail made with tequila and jalapeno- aka Mexican Mule. Tequila, Ginger Beer, Lime, and a little jalapeno make this a refreshing Tequila Cocktail with just a kiss of heat.

Steps:
- In a copper mug muddle 2 lime wedges until they are completely juiced. Add 1 inch jalapeno chunk to the mug, remove the seeds and ribs/pith for less heat, muddle lightly to just bruise the skin. NOTE: if you like more heat, leave in the seeds and ribs/pith, and give it a really good muddle.
- Add ice to the mug, about 3/4 full.
- Add 2 ounces of tequila.
- Float in about 3 ounces of ginger beer.
- Give the cocktail a stir and taste. Add more tequila or ginger beer as desired.

- Fill a copper mug with ice.
- Add mezcal, lime juice and cayenne pepper to the mug.
- Stir well to combine.
- Top with chilled ginger beer.
- Give it one more stir.
- Serve.

- Add all ingredients to a cocktail shaker and dry shake. Careful-the bubbles in the soda water will give a little pushback, but don't sweat it! Strain into a copper mule mug and add fresh rocks. Garnish with a sprig of mint and a quartered lime (optional).

- for the jalapeno mezcal: Pour mezcal into a pint jar or other glass container. Add jalapeno slices and cover. Refrigerate overnight and then remove jalapeno slices. Leave jalapenos in longer for a spicier mezcal. This will keep well in the refrigerator for a couple months.
- for the chili salt rim: In a small bowl, whisk together all ingredients. Transfer to a small plate. Run the cut side of a fresh lime wedge around the rim of a 10 ounce glass. Dip wet rim into chili salt. Set glass aside. Chili salt will keep well in an airtight container for a few months.
- to create the jalapeno mezcal margarita: To your prepared glass, add jalapeno mezcal, lime juice, Cointreau, orange bitters, and honey. Stir vigorously with a mini whisk until honey is incorporated. Add chopped ice to fill glass and a give a little stir to combine. Garnish with a lime wedge and jalapeno slice. Enjoy!
