Spaghetti Squash topped with a spicy meat sauce made from ground turkey is a healthy, flavorful, gluten free and low carb meal.

1 large spaghetti squash or two smaller
1 1/2 tablespoons olive oil, (divided)
1 medium sweet onion, (diced)
1 carrot, (peeled and finely diced)
2 garlic cloves, (minced)
1 pound ground turkey breast
1 tablespoon tomato paste
1 28- ounce can crushed tomatoes
2 teaspoons Italian seasoning
1/2 teaspoon crushed red pepper
salt and pepper
freshly grated Parmesan cheese

Steps:

  • Heat oven to 400 degrees. Slice spaghetti squash in half lengthwise and scrape out the seeds. Rub 1/2 tablespoon olive oil onto the cut side of squash and season with salt and pepper. Place cut side down on a large, rimmed baking sheet and cook for 45 to 60 minutes, until tender all the way through.
  • Heat 1 tablespoon olive oil in a large nonstick skillet over medium heat. Add onion and carrot and cook for 2 minutes. Add turkey and garlic and cook until turkey is cooked through, breaking into pieces with a wooden spoon. Season with salt and pepper and add Italian seasoning.
  • Add tomato paste and crushed tomatoes and stir well to combine everything. Reduce heat and simmer 5-10 minutes. Add red pepper flakes and more salt and pepper if necessary.
  • Scrape out insides of spaghetti squash with a fork. Serve topped with meat sauce and Parmesan cheese.

500g minced chicken , turkey, lamb, beef or pork
1 medium onion
2 garlic cloves , crushed or chopped
2 tsp mild or medium curry powder
2 tsp ground cumin
1 tsp garam masala
½ tsp paprika or cayenne pepper
2 tbsp fresh coriander , chopped
1 egg , beaten
50g fresh breadcrumb
1 tbsp olive oil

Steps:

  • Heat oven to 180C/fan 160C/gas 4.
  • Put the mince into the mixing bowl. Add the onions, garlic, curry powder, cumin, garam masala, paprika or cayenne pepper and coriander, then mix well. By adding these spices, you'll get a delicious flavour without having to add any salt.
  • Add the beaten egg and breadcrumbs, then mix again.
  • Divide the meat mixture into 15-18 evensized pieces and shape into balls (they should be about the size of a walnut). Always wash your hands thoroughly after handling raw meat so you don't transfer any germs that may be on the meat to other food or equipment.
  • Heat the oil in the frying pan over a medium heat and add the meatballs using a spoon. Cook them for 5 mins, turning until golden brown. Remove from the pan and place them on to the tray. Bake in the oven for 15-20 mins.
  • Remove from the oven. Remember to use oven gloves! Allow to cool slightly and serve with a fresh, crisp green salad, some pitta bread and tomato salsa.

2 tablespoons unsalted butter
1 cup finely chopped onion
½ cup finely chopped green onions
1 carrot, finely chopped
1 rib celery, finely chopped
1 tablespoon minced garlic
⅔ cup ketchup, divided
2 teaspoons Worcestershire sauce
2 teaspoons salt
1 ½ teaspoons ground black pepper
1 ½ pounds ground beef
¾ pound spicy ground pork sausage
1 cup bread crumbs
⅓ cup minced fresh parsley
2 large eggs, slightly beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat butter in a large heavy skillet over medium heat; cook and stir onion, green onions, carrot, celery, and garlic until fragrant, about 5 minutes. Cover skillet with a lid and cook, stirring occasionally, until carrot is tender, about 5 more minutes. Stir 1/3 cup ketchup, Worcestershire sauce, salt, and pepper into vegetable mixture; cook until warmed through, about 1 minute.
  • Mix ground beef, sausage, vegetable mixture, bread crumbs, parsley, and eggs in a large bowl; form into a loaf and place in a rectangular baking pan with 2-inch high sides. Cover loaf with remaining 1/3 cup ketchup.

1 large sweet onion, chopped
1 tbsp. extra virgin olive oil
4 cloves of fresh garlic, pressed or minced
1 lb. 93% lean ground beef
1 tbsp. ground cumin
1 tbsp. chipotle chili powder
1 tbsp. chili powder
1 tsp. sea salt
2 tsp. crushed red pepper
1 tsp. black pepper
1 tbsp. fresh spicy oregano, chopped

2 (14.5 oz.) cans of fire roasted tomatoes
1 (14.5 oz.) can tomato sauce
2 tbsp. tomato paste
½ cup reduced-sodium beef broth

Steps:

  • Cook your pasta according to package instructions, reserving ½ cup of the starchy cooking water before draining.
  • Sauté the onion in a large skillet over medium-high heat in the extra virgin olive oil.
  • Add your garlic to the pan and continue to sauté, stirring frequently so that the garlic doesn't burn.
  • Cook for 4-5 minutes, or until the onions have sweated out a bit and start to turn translucent, add ground beef.
  • Cook the ground beef for approximately 5 minuets, breaking up the beef as it cooks.
  • Once it has browned add all the spices both dried and fresh. Stir to combine.
  • Add the tomatoes, tomato sauce, tomato paste and beef broth and simmer for 10 minutes so the flavors develop. Add the cooked pasta and starchy cooking water; tossing to combine.
  • Serve with parmesan cheese for topping.

2 teaspoons minced garlic

1 cup chicken broth
1/3 cup hoisin sauce
1/4 cup soy sauce
1/4 cup dry sherry
2 tablespoons cornstarch
1 (16 ounce) package vermicelli, cooked
2 tablespoons sesame oil
1/2 cup sliced green onion

Steps:

  • Heat oil in a large skillet or wok.
  • Add garlic, ginger root, and pepper flakes and saute about 5 seconds.
  • Add onions and stir fry until translucent, about 5 minutes.
  • Stir in ground meat, breaking it up with a spoon or spatula.
  • Cook until meat has lost pink color.
  • Combine 1/2 cup chicken broth, hoisin sauce, soy sauce and sherry.
  • Stir into meat mixture.
  • Cover, reduce heat and simmer 10 minutes, stirring once or twice.
  • Meanwhile, dissolve the cornstarch in the remaining 1/2 cup of chicken broth.
  • Slowly stir into meat mixture and cook and stir until sauce thickens.
  • In a big bowl, toss warm cooked vermicelli with sesame oil.
  • Pour sauce over top and toss gently to combine.
  • Sprinkle with sliced green onions.

Steps:

  • Cook the pasta according to the package directions.

1/2 pound ground pork
4 cups diced onion
2 garlic cloves, (minced)
2 tablespoons Vegetable oil
1 (28-ounce) can crushed tomatoes
1 (8-ounce) cans tomato sauce
1 (6-ounce) can tomato paste
1 bay leaf
1 teaspoon salt
1 teaspoon sugar
1 teaspoon dried oregano
1/2 teaspoon chili powder
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon rubbed sage
1/4 teaspoon onion powder
1/4 teaspoon red pepper flakes

Steps:

  • In a large skillet, brown the ground beef and pork. Drain and set aside. Wipe skillet clean. (You can use a Dutch oven instead of a skillet.)

4 tablespoons corn, peanut or vegetable oil
1 1/3 cups cored, seeded sweet red pepper, cut into half-inch cubes
1 1/3 cups cored, seeded sweet green pepper, cut into half-inch cubes
2 pounds ground pork, preferably not too lean and not too finely ground, as found in Chinese meat markets, grocery stores and supermarkets
1/2 cup brown bean sauce
4 teaspoons bottled chili paste with garlic
4 teaspoons sugar
4 tablespoons dry Sherry
2 cups plus 3 tablespoons chicken broth
4 tablespoons cornstarch
12 Chinese bean curd, each cut into 16 pieces
1 cup finely chopped scallions, green and white parts combined
1 teaspoon ground roasted Sichuan peppercorns
1 1/2 teaspoons sesame oil
Hot chili oil, optional, available in Chinese markets

Steps:

  • Heat half of the oil in a wok and, when it is hot but not quite smoking, add half of the red and green peppers. Cook, stirring and pressing them against the side of the wok so that they blacken a bit without burning. Using a slotted spoon, remove them while they are still crisp and set aside. Leave the oil in the wok.
  • To the wok add half of the pork and cook over high heat, stirring and chopping down to break up any lumps. Cook only until the pork loses its raw look.
  • Add half of the bean sauce, half of the chili paste with garlic, half of the sugar and one tablespoon of the Sherry, blending thoroughly. Add one cup of the chicken broth and bring to the simmer.
  • Blend half of the cornstarch with one tablespoon of Sherry and one and one-half tablespoons chicken broth.
  • Stir this into the simmering meat sauce. When thickened, spoon and scrape the sauce into a large mixing bowl.
  • Wipe out the wok. Repeat the procedure using the remaining oil, peppers, pork, bean sauce, chili paste with garlic, sugar, Sherry, chicken broth and cornstarch. Add the second batch of peppers to the first batch and let cool. Add the second batch of meat sauce to the first batch and let cool. Refrigerate overnight or until ready to use. Refrigerate the peppers separately.
  • When ready to serve, return the meat sauce to room temperature. Return the sauce to large saucepans or casseroles and bring to the boil.
  • Carefully add the bean-curd pieces to the meat sauce. Stir and heat gently so as not to break up the bean-curd pieces more than necessary. Add the cooked red and green pepper cubes. Heat briefly.
  • Add the chopped scallions, ground peppercorns and sesame oil. Stir gently and serve. Serve with hot chili oil on the side, if desired, to be added by those who enjoy very spicy foods.

  • In a large Dutch oven over medium-high, heat the sesame oil until shimmering. Add the ground beef and pork, then cook, stirring and breaking the meat into small pieces with a wooden spoon, until browned, 4 to 5 minutes. Add the mushrooms, bamboo shoots (if using), garlic and ginger; cook, stirring, until fragrant, 1 to 2 minutes. Stir in the broth, sake, chili-bean sauce, miso, soy sauce and mirin. Steps:

  • Heat the olive oil in a large pot over medium heat. Add the onions, ground pork, red pepper flakes, and salt and cook, stirring constantly, until the meat is thoroughly cooked and the onions are soft and beginning to brown, about 15 minutes.
  • Add the tomato paste and continue cooking for 5 minutes. Add the tomatoes and stir constantly until the sauce begins to boil. Continue cooking for 35 minutes, stirring every 5 minutes or so to prevent the sauce on the bottom of the pot from burning. Taste and season with additional salt, if desired.

Spicy Meatloaf with Chipotle Sauce image

Yield 8 servings

Number Of Ingredients 14

1 ounce dried chipotle chilies, stemmed
2 ripe Italian Roma tomatoes, cored
3 garlic cloves, peeled
2 cups water
2 tablespoons olive oil
1 onion, diced
3 celery stalks, diced
1 teaspoon ground cumin
1/8 teaspoon ground nutmeg
11/4 pounds ground beef
11/4 pounds ground pork
1/2 cup fresh white bread crumbs
11/2 teaspoons salt
3 large eggs, beaten to blend

Steps:

  • Combine chipotles, tomatoes, garlic and water in medium saucepan. Season with salt and pepper. Bring to boil. Reduce heat and simmer until reduced by 1/3, about 20 minutes. Cool. Transfer to processor. Puree until smooth. Strain.
  • Heat oil in heavy large skillet over medium high heat. Add onion and celery and saute until tender, about 10 minutes. Add cumin and nutmeg and stir 1 minute. Remove from heat. Transfer to large bowl. Cool.
  • Preheat oven to 375 degrees F. Add beef, pork, bread crumbs and salt to onion mixture. Add 1/2 cup chipotle sauce. Mix until well blended. Add eggs and mix well. Press mixture into 9x5-inch loaf pan. Brush top with some of remaining chipotle sauce. Bake meatloaf until thermometer inserted into thickest part registers 160 degrees F, about 1 hour. Transfer to rack. Cool slightly. Drain off any oil. Turn meatloaf out onto platter. Serve with remaining salsa.
