SMOKEY SPICY MASHED POTATOES



Smokey Spicy Mashed Potatoes image

Classic mashed potatoes are given a smokey and spicy twist with canned chipotle chilies in adobo.

Number Of Ingredients 5

2 pounds Idaho or Yukon gold potatoes, unpeeled
Kosher salt and freshly ground black pepper
1 cup whole milk
8 tablespoons (1 stick) unsalted butter
1 to 2 tablespoons chopped canned chipotle chilies in adobo

Steps:

  • Put the potatoes in a medium pot, cover with cold water and add 2 tablespoons salt. Bring just to a simmer and cook the potatoes, uncovered, until tender, about 45 minutes. Drain.
  • Peel the potatoes and return them to the pot (if desired, pass them through a ricer or food mill after peeling). Mash the potatoes with the milk and butter using a fork or potato masher. Stir in the chopped chipotles, 2 teaspoons salt and freshly ground pepper to taste.

8 plantains (green or only slightly ripe)
2 tablespoons lemon juice
1 tablespoon ghee
2 onions, sliced thinly
1 teaspoon cilantro, fresh, minced
1/4 teaspoon bird chile, minced
2 cups stock (beef or vegetable)

Steps:

  • Peel the plantains and slice in 1-inch pieces.
  • Place them in a bowl with the lemon juice and enough lukewarm water to cover.
  • In a large skillet, heat the ghee.
  • Fry onions, cilantro, and chile until onion is translucent.
  • Drain the plantain pieces. Add to the skillet with the stock.
  • Simmer, uncovered, about 30 minutes, until the plantains are done.

Steps:

  • In a 5-quart Dutch oven, heat the oil over medium-high heat. Sprinkle the beef with the salt and pepper. In batches, add the beef and cook, turning occasionally, until browned on all sides, 8 to 10 minutes. Using a slotted spoon, transfer the browned beef to a plate and set it aside. Add the onion and chile pepper to the Dutch oven. Reduce the heat to medium and cook, stirring often, until the onion has softened, about 3 minutes. Add the curry powder and coriander, and stir for 1 minute. Return the beef to the Dutch oven, and stir in the water. Reduce the heat to low and cook, covered, until the meat is tender and the liquid has almost com- pletely evaporated, about 1 hour. (If the stew looks as if it's drying out, add a little more water.) Preheat the oven to 350℉ (180℃). Lightly butter a 9-inch square baking dish . In a large bowl, combine the plantains and spinach, and mash together with a fork until fairly smooth. Stir in the beef stew. Spread the mixture evenly in the prepared baking dish, and dot the top with the butter. Bake until the top is golden brown, about 30 minutes. Sprinkle with the grated coconut if desired, and serve immediately.

My family loves this slightly spicy marinade, we've even cooked it down and added tomato sauce and made it into a type of basting/barbeque sauce. Place steaks in a resealable plastic bag and pour marinade over the top. Allow to rest for at least 2 hours, preferably overnight for best flavor and tenderness.

Matoke (or Matooke) refer to the plantain or plantain banana in Uganda, where plantains are a staple crop. In Uganda, plantain bananas are often wrapped in plantain leaves and steamed until tender. This dish can be made with or without the meat.

8 -10 plantains
1 lemon, juice of (optional)
oil (for frying)
1 onion, chopped
2 -3 tomatoes, chopped (or canned whole tomatoes, drained)
1 green bell pepper, chopped
3 -4 garlic cloves, crushed
1 chili pepper, chopped (optional)
cayenne pepper (to taste) or red pepper (to taste)
1 lb ground beef (optional) or 1 lb beef stew meat, cut in bite-sized pieces (optional)
1 cup beef broth (optional) or 1 cup beef stock (optional)

Steps:

  • Peel the plantains, cut into cubes, sprinkle with lemon juice, and set aside.
  • Heat oil in a large pan. Fry the Onion, tomatoes, green pepper, hot pepper, and garlic together. Add spices to taste. Add meat or broth. Continue frying and stirring until the meat is nearly done or until the broth is starting to boil.
  • Reduce heat. Add plantains. Cover and simmer over low heat until plantains are tender and meat is done. Serve matoke (matooke, if you prefer) hot.

Matoke, also known as plantains or green bananas, are eaten daily in Uganda. They are often wrapped in their own leaves and steamed.

4 medium tomatoes
1 medium onion, finely chopped
1 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1 tablespoon canola oil
2 garlic cloves, minced
3 to 4 red chili peppers, seeded and finely chopped
2 teaspoons grated fresh gingerroot
1-1/2 teaspoons ground cumin
1-1/2 teaspoons ground coriander
1 teaspoon salt
1/2 teaspoon ground turmeric
4 yellow plantains, cut into 1/2-inch slices
2 cups water
1/2 cup finely ground peanuts
1 teaspoon minced fresh cilantro

Steps:

  • In a large saucepan, bring 8 cups water to a boil. Add tomatoes; cover and boil for 30 seconds. Drain and immediately place tomatoes in ice water. Drain and pat dry. Peel and chop tomatoes; set aside., In a large skillet, saute the onion, cumin seeds and mustard seeds in oil until onion is tender. Add garlic; cook 1 minute longer. Stir in the peppers, ginger, ground cumin, coriander, salt, turmeric and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 5-7 minutes or until slightly thickened., Add plantains and water. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes or until plantains are tender, stirring occasionally. Stir in peanuts. Sprinkle with cilantro.

¼ cup cornstarch
4 teaspoons baking powder
½ teaspoon salt
2 teaspoons ground ginger
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground allspice
½ teaspoon ground cloves
1 cup milk
3 large eggs
2 teaspoons vanilla extract
1 cup unsalted butter, softened until easily spreadable
2 cups dark brown sugar

Steps:

  • Adjust oven rack to middle position and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9-by-13-inch pan. Whisk dry ingredients and spices in a large bowl. Mix milk, eggs and vanilla extract in a 2-cup measuring cup.
  • Beat softened butter into dry ingredients, first on low, then medium, until mixture forms pebble-sized pieces. Add about 1/3 of the milk mixture and beat on low until smooth. Add remaining milk mixture in two stages; beat on medium speed until batter is just smooth. Add the sugar; beat until just incorporated, about 30 seconds. Pour batter into cake pan.
  • Bake until a cake tester or toothpick inserted into the cake's center comes out clean, about 40 minutes. Set pan on a wire rack; let cool for 5 minutes. Run a knife around the pan perimeter and turn cake onto rack. Let cool.
