SPICY MANGO CHUTNEY - RECIPE



Spicy Mango Chutney - Recipe image

A recipe for homemade mango chutney made with fresh chopped mangoes, sweet and spicy chili peppers and plenty of seasonings. It is sweet and savory and ready to add big flavor to your meals.

2 tablespoons vegetable oil
1 small sweet onion (chopped)
1 medium red bell pepper (chopped)
2 serrano peppers (chopped)
1 teaspoon chopped fresh ginger
1 tablespoon yellow curry powder
1 teaspoon turmeric
1 teaspoon paprika
3 cups fresh chopped mango
Juice from half an orange
1 tablespoon apple cider vinegar
1 tablespoon sugar
Pinch of sea salt

Steps:

  • Heat a pot to medium heat and add the olive oil.
  • Add the onion, peppers and ginger and cook until they soften up, about 5 minutes.
  • Add the seasonings and cook another minute, stirring.
  • Add the mango, orange juice, apple cider vinegar, sugar and a pinch of salt. Reduce the heat and simmer the pot for 20 minutes, until the mango chutney is nicely softened and flavorful.
  • Enjoy!

With its sweet, spicy flavour and generous chunks of juicy fresh mango, this traditional chutney is as good as any you'll get in your local Indian restaurant. Serve it alongside all kinds of curries or with cold ham, chicken or game. It's fantastic in cheese sandwiches, too.

2 kg mangos (firm, but ripe)
8 cardamom pods
2 cloves of garlic
1 fresh red chilli
500 ml white wine vinegar
400 g granulated sugar
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon chilli powder
2 teaspoons nigella seeds
8cm piece of ginger

Steps:

  • Peel, stone and roughly chop the mangos; set aside.
  • Remove the cardamom seeds from the pods. Peel and finely chop the garlic, then trim and finely chop the chilli.
  • Add the vinegar and sugar to a large pan over a medium heat, stirring until the sugar dissolves. Bring to the boil and reduce by a couple of centimetres.
  • Gently toast the cumin, coriander and cardamom seeds until aromatic, then crush with the chilli powder using a pestle and mortar. Add to the vinegar pan, along with the chopped mango, nigella seeds and 2 teaspoons of sea salt.
  • Finely grate in the ginger, add the garlic and bring to a boil. Reduce the heat and simmer for 45 minutes to 1 hour until it has a thick, syrupy consistency, adding the chopped chilli for the last 10 minutes.
  • Divide among sterilised jars, seal and keep for up to 6 months.

Not only is this pretty, but it's versatile and delicious on so many things, from something as simple as tortilla chips to fancier things like seared prawns. You can't beat this sweet heat on spicy meat!

½ mango
2 teaspoons finely chopped cilantro
2 teaspoons Asian chile pepper sauce (such as sambal oelek)
2 teaspoons rice wine vinegar
1 tiny pinch salt

Steps:

  • Peel mango using a vegetable peeler. Continue to use the peeler on the flesh of the mango down to the pit, creating thin slices of mango. Stack the mango strips and slice into thin strips; cut crosswise to make very finely diced mango. Transfer mango to a small bowl.
  • Stir cilantro, Asian chile pepper sauce, rice vinegar, and salt into mango.

½ red bell pepper, chopped
2 green onion, thinly sliced
1 tablespoon chopped cilantro
1 lime, juiced
¼ teaspoon salt
1 pinch cracked black pepper
1 teaspoon honey

Steps:

  • Combine the mango, oil, bell pepper, scallions, cilantro, and lime juice in small bowl. Stir to combine. Season to taste with salt, black pepper, and honey. Refrigerate, or serve immediately.

  • Dry roast the mendiyam/ methi/ fenugreek seeds for 10 seconds or just till they darken in colour, stirring so that they don't burn/ char.Remove from the stove and transfer immediately to a bowl or to the processor, so that it stops roasting. Powder the roasted methi seeds and set aside till required. If using a processor to powder the seeds, wait till they cool.
  • Heat the oil in a frying pan / kadai, add the mustard seeds. Keep the stove on low flame.When the mustard has sputtered and burst, add the mango pieces. Add the turmeric. Stir well.
  • Sauté till the mango is soft and cooked (about 10 -15 minutes on a low flame), stirring frequently to ensure the mango doesn't catch at the bottom of the pan. Check that the mango has cooked (remove a piece and smash with a spoon. If it crushes easily, it is done).
