"As a working mom of two daughters, I'm always looking for a quick meal," notes Christine Weimar from New Britain, Pennsylvania. "I make these hearty sandwiches when I'm in a hurry. Serve them with tomato soup, chips and pickles," she suggests.

1/2 cup chopped onion
1/2 teaspoon minced garlic
1 tablespoon butter
1 pound thinly sliced deli roast beef
1 jar (12 ounces) beef gravy
6 slices Italian bread (1 inch thick), toasted
1 tablespoon prepared horseradish
6 slices provolone cheese

Steps:

  • In a large skillet, saute onion and garlic in butter until tender. Add beef and gravy; cook and stir until heated through. Place bread on an ungreased baking sheet. , Spread each with horseradish; top with beef mixture and cheese. Broil 4 in. from the heat for 1-2 minutes or until cheese is melted.

Slow Cooker Shredded Italian Beef image

Tangy, slightly spicy Italian beef is slow cooked all day until it's fall apart tender, and then shredded. Perfect on it's own, on a bun, or a baked potato!

1/2 cup white vinegar
1 Tbsp dried minced onion
1/2 Tbsp garlic powder
1 - 1 1/2 tsp crushed red pepper flakes
7 pepperoncini peppers, chopped ((I use the mild jarred ones))
7-10 banana pepper rings ((I use mild))
2-3 lb beef chuck roast
1 tsp kosher salt
1/2 tsp black pepper
4 Tbsp butter

Steps:

  • Spray slow cooker insert with cooking spray. Add vinegar, dried onion, garlic powder, red pepper flakes, chopped pepperoncini peppers, and banana pepper rings to bottom of slow cooker. Stir to combine.
  • Add beef chuck roast on top of spice mixture, season both sides with salt and black pepper. Top with butter.
  • Place lid on slow cooker and cook on LOW for 8 hours. Remove beef from slow cooker and shred. Return to slow cooker to soak up any residual juice and serve.

1 boneless beef chuck roast (3 to 4 pounds)
1 jar (12 oz) pepperoncini
1 can (14 oz) beef broth
1 (12oz) beer
1 med. onion, minced
2 Tbls Italian seasoning
French Bread or Focaccia
slices Provolone cheese (optional)

Steps:

  • 1. Trim fat from beef and discard. Cut beef to fit in 4.5 quart slow cooker, if necessary. 2. Use about 10 pepperoncini, pull off stems, discard. ADD pepperoncini, broth, beer, onion and herb blend to slow cooker, do not stir. Cover cook on LOW 8 to 10 hours. 3. Remove beef from cooker, shed with 2 forks. Return shredded beef to cooking liquid mix well. 4. Slice bread to desired thickness. Butter one side and toast butter side down in heavy pan on medium heat until crisp. 5. Preheat broiler. Place toast soft side up on oven proof plate. Top with beef, sauce, pepperoncini and cheese slices. Broil until cheese melts. Serve immediately.
