HONEY-BOURBON GLAZED BACON

Number Of Ingredients 4

1/4 cup clover honey
2 tablespoons bourbon
12 slices double-smoked, thick-cut bacon
Coarsely ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Combine the honey and bourbon in a small saucepan and bring to a boil over high heat. Remove from heat and let cool slightly.
  • Lay the bacon on the prepared baking sheet and roast for 10 minutes. Brush with some of the honey-bourbon syrup. Continue roasting until deeply caramelized and crispy, another 10 to 15 minutes--the bacon will really crisp as it cools. Sprinkle with 1/4 teaspoon pepper and serve.

Rounded 1/4 teaspoon cayenne
Rounded 1/4 teaspoon black pepper
1 lb thick-cut bacon (about 12 slices)

Steps:

  • Put oven rack in middle position and preheat oven to 350°F.
  • Stir together brown sugar, cayenne, and black pepper in a small bowl.
  • Arrange bacon slices in 1 layer (not overlapping) on rack of a large broiler pan. Bake 20 minutes. Turn slices over and sprinkle evenly with spiced sugar. Continue baking until bacon is crisp and deep golden, 20 to 35 minutes more (check bacon every 5 minutes). Transfer to paper towels to drain.

1 cup firmly packed light-brown sugar
1 cup honey
1/2 dry white wine
1/4 cup dijon-style mustard
1 tablespoon toasted and ground cumin
2 teaspoons toasted and ground coriander
1/2 teaspoon red pepper flakes

Steps:

  • Preheat oven to 350°F.
  • Arrange bacon in a jellyroll pan and bake in oven until almost crisp, about 18 minutes.
  • Process remaining ingredients in a food processor until smooth, about 10 seconds.
  • Drain fat from bacon pan and then brush one side of bacon with the glaze and return to oven for 10 minutes.
  • Turn bacon over, brush other side with glaze and bake 10 minutes more.
