Guava Dipping Sauce - is a Sweet , Spicy and Tang Dip that can be served with Tortilla Chips for party snacks.

3 no's Over Ripened Guava ,medium size
1/8 cup Water
1/2 Tbsp Apple Cider Vinegar
1/2 Tsp Red Chili Powder
1/4 Tsp Black Pepper Powder
1.5 Tbsp Extra Virgin Olive oil
1/2-3/4 Tsp Salt or as required
1.5 Tbsp Coriander leaves / celery chopped

Steps:

  • Take 3 medium size , fully ripe guava. Place it in a blender / chutney jar and blend into a smooth paste to get about 1,25 to 1.5 cups of guava pulp puree.
  • Transfer the blended guava puree into a mixing bowl , add in 1/8 cup water.
  • Also add 1/2 to 1 Tbsp of Apple cider vinegar and mix well everything.
  • Now add 1/4 tsp chilli powder , 1/4 tsp pepper powder , salt and 1.5 Tbsp of Extra virgin Olive oil
  • Add in 2 Tbsp of chopped celery , with a spoon , mix well everything.
  • Serve with Nachos / Tortilla chips.

1/4 cup red wine
1/2 cup orange juice
1/4 cup lime juice
2 tablespoons Dijon mustard
1/2 teaspoon garlic, minced
5 tablespoons honey
1 teaspoon Tabasco sauce, sweet & spicy sauce
1 teaspoon salt

Steps:

  • Cut the guava paste into cubes.
  • Combine all ingredients and simmer on low heat, stiring ocacionally for 15-20 minutes until guava paste dissolve.
  • Let cool.

FRIED SHRIMP + SPICY GUAVA SAUCE



Fried Shrimp + Spicy Guava Sauce image

1lb large shrimp, peeled and deveined
1 tbsp green seasoning
1/2 tsp black pepper
1/2 tsp paprika
pinch salt
1 tbsp olive oil
1 cup cornstarch
2 large eggs, beaten + 3 tbsp water
1 cup all-purpose flour
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1 tsp curry powder
1 tsp paprika
1/2 tsp cayenne pepper (optional)
1/2 cup plain panko breadcrumbs (optional)
6 tbsp guava paste
1 cup pineapple juice
1 red chili pepper or 1/2 habanero pepper
2 cloves garlic
3 tbsp rice wine vinegar
1/2 tsp salt
2 sprigs scallions
1 tbsp cornstarch + 1 tbsp cold water

Steps:

  • Make the guava sauce. Add all ingredients to a food processor or blender and pulse until smooth. Transfer to a sauce pot, boil for about 10 minutes until sauce reduces by 1/4. Remove froth with a spoon. Mix cornstarch plus 1 tbsp cold water, stir into sauce until it thickens. Remove from heat and allow to cool.
  • Season shrimp with green seasoning, black pepper, paprika, salt, and olive oil. Set aside.
  • Heat oil for frying.
  • Arrange your dredging station. Set up three bowls. In the first bowl add 1 cup cornstarch. In the second bowl add egg plus water, beat. In the third bowl add flour and spices, mix thoroughly. Add panko if using.
  • One at a time, dip shrimp in cornstarch, then egg mixture, then into seasoned flour. Batter all shrimp. Fry until golden brown just a couple of minutes.
  • Best served hot.

  • In a large saucepan over low heat, stir together the guava, tomato sauce, tomato paste, water, and brown sugar until well blended. Stir in liquid smoke, fresh lemon juice, Worcestershire sauce, habanero sauce, and molasses. Season with garlic powder, onion powder, salt, and black pepper. Cover, and cook 30 minutes, stirring occasionally, until thickened.

Taste for seasoning and adjust as necessary. Let the sauce cool to room temperature, then transfer to a storage container and refrigerate until ready to use. Sauce will last two weeks in the refrigerator.
