SPICY GRILLED TOFU
Be sure to use extra firm tofu and press out as much of the water as you can. To prevent sticking, give the tofu slices and the grill rack a generous coat of nonstick cooking spray. Cooking time includes marinading the tofu for 4 hours. This is from VT May/June 2006.

Steps:
- Place the tofu slices on several layers of paper towels and cover with additional paper towels. Let stand 20 minutes, pressing down occasionally with your hands to squeeze out the water.
- Place the tofu in a single layer in the bottom of a 13x9 glass baking dish.
- In a small bowl, whisk together the lime juice, maple syrup, tamari, chile paste, garlic, and pepper.
- Pour mixture over the tofu, stirring to coat all the slices.
- Cover the baking dish with plastic wrap and place in the refrigerator for at least 4 hours or overnight.
- When the tofu is marinated and ready to cook: Spray grill rack or pan with nonstick cooking spray. Heat grill or grill pan to medium heat.
- Place tofu slices on the grill. Reserve the marinade.
- Grill tofu 3 or 4 minutes on each side, or until the outside is browned and crisp.
- Return tofu to the baking dish and toss the slices with the reserved marinade.
- Serve immediately.

PERFECT GRILLED TOFU
This recipe is very easy to double, though you don't need quite double the marinade: About 1 1/2 times the marinade is perfect for four packages of tofu.

Steps:
- Wrap tofu in a clean dish towel and weight it with something heavy such as a large can; leave it to drain for 30 minutes.
- Meanwhile, mix together remaining ingredients in a bowl.
- Cut each piece of tofu crosswise into 6 thick slices and put it all in a baking dish. Pour marinade over tofu, turning to coat, and chill, covered, turning occasionally, at least 30 minutes or up to 48 hours. Longer is better, but shorter is totally fine.
- Preheat a gas grill on high heat (450 degrees F to 650 degrees F) 10 minutes, then reduce heat to medium (325 degrees F to 375 degrees F)--or do whatever the equivalent is if you're using charcoal. Oil grate.
- Transfer tofu from marinade (letting excess drip off and reserving marinade) to grill with a spatula. Cover grill and cook tofu, turning once, until well browned but before grill marks get black, 10 to 15 minutes total. Transfer tofu to a platter and cover with foil to keep warm.
- Bring reserved marinade to a boil in a saucepan and boil until it reduces to about 1 cup, about 2 minutes. Pour over tofu and serve hot, warm, or at room temperature.

SWEET AND SPICY GRILLED TOFU
Steps:
- Drain liquid from the tofu and press to remove all excess water. Wrap with a clean towel or paper towels and place a skillet or heavy plate on top. Cut tofu into large cubes** and place into a gallon ziplock bag or large bowl to marinate.
- In a mason jar or small bowl, mix together maple syrup, tamari, olive oil, and sriracha until well-combined.
- Save 2 Tablespoons of the marinade for later, then pour the rest over the tofu. Toss to coat. Seal the bag or bowl up tightly and refrigerate for at least 30 minutes.
- Add tofu cubes to skewers and set aside.
- Preheat grill to medium high, spritz the grate with oil, and place tofu skewers on the heat. Grill 15-20 minutes, rotating every 4-5 minutes. Remove from heat and drizzle remaining marinade over the tofu. Serve and enjoy!
SPICY GRILLED TOFU SALAD WITH BALSAMIC VINAIGRETTE

- In a small pan, toast the cayenne, garlic powder, cinnamon, and paprika until fragrant (about 1 minute).
- While the spices are toasting, mix the sriracha, soy sauce, and canola oil in a small bowl, then add in the toasted spices. Season with salt, to taste.
- Add the tofu to a large zippered plastic bag and drizzle in the spiced marinade. Press the air out, seal, and let the tofu marinate in the refrigerator for at least 4 hours and up to 2 days.
- When ready to prepare, heat a grill or grill pan over high heat and oil it well to prevent the tofu from sticking.
- Once hot, place the tofu on the grill and cook until thoroughly colored, about 3 to 4 minutes on each side. Remove from the heat.
- In a large bowl, whisk together the mustard, balsamic vinegar and lemon juice. Slowly drizzle in the olive oil, whisking constantly. Season with salt and pepper, to taste.
- Add the salad mix, walnuts, and raisins to the bowl with your vinaigrette. Toss well to thoroughly coat.
- Plate the salad (or arrange in a serving bowl), and fan out the tofu on top to serve.
SPICY TOFU MARINADE
This is inspired by a recipe by Andrea Chesman, who has some wonderful grilling ideas for tofu in her book "The Vegetarian Grill." It makes enough marinade or dipping sauce for a pound of tofu.

GRILLED SPICY ASIAN TOFU
This is really good - no leftovers, even carnivorous children went back for seconds. The marinade provides subtle heat while the teriyaki glaze is sweet & smoky. Serve with Asian Grilled Vegetables (search for the recipe) and steamed rice or udon noodles. I use Sriracha Sauce for the marinade - green top, rooster on the bottle - stuff is the best and HOT! - Place the Garlic Cloves and Ginger in the bowl of a small food processor or dice and place in a blender. Process until chopped fine and add the Cilantro. Process until chopped fine. - For the tofu: once the tofu is pressed, cut the block into 8 long sticks. Or for an appetizer, you can cut the sticks in half to make 16 small sticks. Add the soy sauce, water, agave, smoked paprika, and garlic powder to a sealable bag or dish and mix. Add the tofu to the mixture and let marinate covered in the fridge for a minimum of 30 minutes or up to 3 days.
- For the spicy peanut sauce: mix together all the ingredients in a small bowl. This can be made ahead of time and stored in the fridge.
- To grill the tofu: If using wooden skewers, soak them in water for 30 minutes before using so they don't burn. Thread the tofu onto the skewers lengthwise. - Drain the package of tofu and wrap the tofu block around a layer of paper towels. Press the tofu by placing it between 2 large plates. Weigh down the top plate with something heavy, like a bag of flour. Let the tofu sit for 15 to 20 minutes.

- Wrap Tofu in paper towel to soak water and pat it dry. I prefer to grill whole piece of Tofu about 4 ounce because large steak like piece handles hot grill very well.
