Peruvian green sauce (Aji Verde) is a fresh, spicy green condiment from Peru and it's fabulous, drizzled on anything from the grill.

1 head Romaine lettuce, stem trimmed and discarded
1 cup fresh cilantro, stems removed
4 green onions
2 jalapenos, seeded*
2 garlic cloves
fresh juice from 2 limes
1 teaspoon white vinegar
1/2 cup mayonnaise
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Combine lettuce, cilantro, green onion, jalapenos, garlic, lime juice, and vinegar in a blender. Blend on high until smooth.
  • Add the mayonnaise and cumin. Blend until completely incorporated.
  • Season with salt and pepper to taste.
  • Serve with grilled chicken, veggies, and/or rice.
  • Store sauce in a jar with a tight-fitting lid in the refrigerator for up to 1 week.

Peruvian green sauce also known as Aji Verde is a spicy bright green condiment typically found in any Peruvian restaurant.

2 tablespoons olive oil
1/4 cup chopped red onion
1/2 cup light Hellman's mayonnaise (use compliant mayo for whole30)
2 tablespoons white vinegar
4 teaspoons yellow mustard (Guldens)
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3 jalapeños (roughly chopped seeded but keeping the ribs (about 1 cup/3 oz))
2 cups chopped fresh cilantro leaves and stems (2 oz rinsed well)
3 medium cloves garlic (crushed through a press)

Steps:

  • Saute the onion in a small skillet with 1 teaspoon of the oil until soft, 3 to 4 minutes.
  • Transfer to the blender then add the remaining oil, mayo, vinegar, mustard, salt and pepper.
  • Then add the chopped jalapeno, cilantro and garlic and blend on high speed until the sauce is smooth and creamy, about 30 seconds.

1 whole lime (juiced)
2 tablespoons olive oil
1/2 cup good-quality mayonnaise ((such as Hellmann's) )
3 ounces queso fresco or blanco
2 serrano peppers (ends trimmed )
1 bunch cilantro (with the leaves removed and stems discarded*)
4 garlic cloves (peeled )
2 green onions ( ends trimmed and roughly chopped)
2 teaspoons huacatay paste ((optional))
1 tablespoon aji amarillo paste ((optional))
1/4 teaspoon kosher salt

Steps:

  • To a blender, add the lime juice, olive oil, cheese, mayonnaise, serrano peppers, cilantro leaves, garlic cloves, green onions, huacatay paste, aji amarillo and salt. Blend for about 1 to 2 minutes, until very smooth. At first the cilantro leaves won't be totally smooth, but keep the blender running and it will eventually become cohesive and smooth.
  • Give it a taste and adjust the salt according to your liking. Keeps in the fridge for up to a week.

1/2 cup mayonnaise
2 cups lightly packed fresh cilantro, mostly leaves but small stems are ok (from 1 big bunch of cilantro or 1 1/2 medium)
2 medium jalapeños, seeds and membranes removed but reserved, roughly chopped
2 cloves garlic, roughly chopped
1/3 cup (1 ounce) grated Cotija or Parmesan cheese
1 tablespoon lime juice
1/4 teaspoon fine sea salt

Steps:

  • In a food processor or blender, combine all of the ingredients. Blend until the cilantro has broken into very tiny pieces and the sauce is green and mostly smooth (no matter how long you blend it, it will still have some texture to it).
  • Taste, and adjust if necessary. This sauce is intentionally bold and spicy and I usually think it's just right as written. However, if the flavor is too overwhelming, blend in 1 tablespoon of olive oil while running the food processor. If it's not spicy enough, add some of the reserved jalapeño seeds and blend again. If it doesn't have enough zip, add another tablespoon of lime juice and/or a pinch of salt.
  • Aji verde keeps well in the refrigerator, covered, for about 1 week.

salt to taste

Steps:

  • Combine olive oil, cilantro, jalapenos, mayonnaise, and garlic in a blender and puree. Slowly add as little water as needed to create a smooth, creamy consistency. Season with white wine vinegar and salt.

This Roasted Peruvian Chicken takes you on a venture to Peru for tonight's dinner with its flavorful, juicy, tender Chicken and spicy, delicious creamy green sauce.

1 Whole Chicken (spatchcock)
¼ cup Aji Panca paste
2 tbsp Aji Amarillo paste
¼ tsp Cumin
1 tbsp Paprika
1/2 tbsp Chile seasoning
¼ cup Liquid aminos
¼ cup Brown sugar
¼ cup Green seasoning
1 tsp Lime juice
1 tbsp Adobo
1 tsp Oregano
1 tsp Salt
1 lb Potatoes
1 tbsp Adobo
1 ½ tbsp Italian seasoning
2-4 Jalapeños (remove seeds and stem if not wanting heat)
1 bunch Cilantro
½ tsp Ginger
4 Garlic Cloves
¼ cup Cucumbers (remove seeds )
¼ cup Sour cream
¼ cup Parmesan
2 tsp Honey
½ tsp Lime juice
2 tbsp Olive oil

Steps:

  • Rinse and clean chicken with lemon and vinegar, pat dry.
  • In a medium bowl, combine all chicken marinate ingredients. Aji Panca Paste, aji Amarillo paste, cumin, paprika, chile seasoning , liquid aminos, brown sugar, green seasoning ,lime juice, adobo, oregano and salt.
  • Add the chicken to a large bowl with the marinade. Marinate for 30 minutes the least, inside the refrigerator or overnight.
  • While chicken is marinating. Season your potatoes with left over marinade, about 2 tbsp. Next add adobo and Italian seasoning to the potatoes.
  • On a large baking tray, add chicken and potatoes. Bake at 400F for 60 minutes or until it reaches a temperature of 165F.
  • Enjoy!

  • I use a small blender for this sauce. Start by cleaning jalapenos, chopping cilantro and mincing garlic. When chopping cilantro I remove any large stems but I'm not too picky, I just chop as fine as I can on a cutting board.
  • Blend mayonnaise, lime juice, jalapenos and garlic first. Make sure it's a fine blend. It took me about a minute or two to get a very smooth consistency.
  • Then add aji amarillo, huacatay, olive oil, salt and chopped cilantro. Continue blending until all the cilantro has been blended and there are no large pieces. If the sauce is too thick, add 2 tbsps of water, blend few more seconds and add to a serving bowl.
