SPICY CHIPOTLE SHRIMP WITH JALAPENO GREEN RICE



Spicy Chipotle Shrimp with Jalapeno Green Rice image

2 cups medium-grain rice
1 1/2 cups chicken broth
1 cup loosely packed fresh cilantro, chopped
1 small onion, chopped
3 tablespoons Dijon mustard
2 tablespoons olive oil
1 to 2 jalapenos, seeded and chopped
2 cloves garlic, chopped
Salt
Zest of 1 lime
One 15-ounce can crushed fire-roasted tomatoes
2 chipotle chiles in adobo sauce
2 tablespoons olive oil
3 cloves garlic
Salt
1 pound medium shrimp, peeled and deveined
Chopped fresh cilantro, for sprinkling

Steps:

  • For the rice: Combine the rice and enough cold water to cover by 1 inch; let soak 30 minutes.
  • Meanwhile, in a medium saucepan, stir together the chicken broth, cilantro, onion, mustard, oil, jalapeno(s), garlic, 3/4 teaspoon salt and 3/4 cup water; bring to a boil over medium-high heat. Using an immersion blender, blend until finely chopped.
  • Drain the rice. Return the broth mixture to a boil and stir in the rice. Cover tightly and simmer over medium-low heat until the rice is tender, about 15 minutes. Remove the pan from the heat and let the rice stand, covered, 5 minutes. Add the lime zest and fluff with a fork.
  • For the shrimp: Meanwhile, combine the tomatoes, chipotles, oil, garlic and 1/2 cup water in a blender and puree until smooth; season with about 1 teaspoon salt. Transfer the tomato mixture to a large skillet and cook until heated, about 5 minutes. Add the shrimp and simmer, stirring occasionally, until cooked through, about 4 minutes. Serve with the rice and sprinkle with cilantro.

Taking a cue from the Venetian risi e bisi, a soupy rice-and-peas, this version with shrimp highlights sweet, crunchy sugar snap peas with Southeast Asian ingredients: the heat of chiles and ginger, the freshness of basil and cilantro, and the salty depth of fish sauce.

1 clove garlic
3 tablespoons minced fresh ginger (from a 4-inch piece)
1 to 2 Thai chiles, or 1 small serrano chile, chopped
1 cup packed tender fresh basil leaves, plus more for serving
1 cup packed fresh cilantro, plus more leaves for serving
2 teaspoons fish sauce
1/2 teaspoon sugar
1/4 cup vegetable oil
1 large or 2 small leeks, thinly sliced and well washed (2 cups)
1/2 cup long-grain white rice
3 cups homemade or low-sodium store-bought chicken broth
1 pound large shrimp, peeled and deveined
4 ounces sugar snap peas, tough strings removed, trimmed and cut into 1-inch pieces (1 1/2 cups)
Kosher salt
Lime wedges, for serving (optional)

Steps:

  • Turn a food processor on; drop garlic through feed tube and process until finely chopped. Add 2 tablespoons ginger, chile, basil, cilantro, fish sauce, and sugar; process until finely chopped. Add 1 tablespoon oil and 3 tablespoons water; process to a fine paste. (You should have 2/3 cup.)
  • Heat remaining 3 tablespoons oil in a medium saucepan over mediumâ??high until shimmering. Add leek and remaining 1 tablespoon ginger; cook until leek is translucent, 3 to 4 minutes. Stir in rice and broth, along with 1 cup water. Bring to a boil, then reduce heat to mediumâ??low and simmer, covered, until rice is very soft, 17 to 18 minutes.
  • Add shrimp; simmer, stirring once or twice, until opaque, 1 to 2 minutes. Stir in peas and herb paste. Remove from heat; season with salt. Serve immediately, with more cilantro and basil and lime wedges.

Arroz Verde Recipe (Mexican Green Rice) image

This arroz verde recipe is the most vibrant and flavorful green rice made with roasted poblano peppers, jalapenos and fresh cilantro. Easy to make and the perfect side dish!

2 poblano peppers
1 jalapeno pepper (chopped)
1 small onion (chopped)
4 cloves garlic (chopped)
1/2 cup fresh chopped cilantro
3 cups chicken stock
2 tablespoons olive oil
1-1/2 cups long grain rice
Salt to taste
For Serving - fresh squeezed lime wedges, chopped cilantro, sliced peppers, spicy chili flakes

Steps:

  • Set your oven to broil. Slice the poblano peppers in half lengthwise and place them on a lightly oiled baking sheet, skin sides up.
  • Broil the poblanos about 15 minutes, until the skins char and blacken. They should puff up.
  • Remove, cool slightly, then peel off the skins and discard them along with the seeds and stems.
  • Rough chop the poblanos and set them aside.
  • Add the roasted poblanos, jalapeno, onion, garlic, cilantro, chicken stock and salt to taste to a food processor. Process until smooth. Set Aside.
  • While the poblanos are roasting, rinse and drain the rice 3 times, or until the water runs clear.
  • Heat the oil in a large pan or pot to medium heat. Add the rice and cook, stirring, until it begins to brown, about 5 minutes.
  • Pour in the reserved green puree. Bring to a boil, then reduce the heat. Cover and simmer on low for 25 minutes, or until the rice absorbs all of the liquid, fluffing the rice a bit with a wooden spoon a few minutes before it is done.
  • Remove from heat. Fluff up the rice with a fork, then garnish and serve. Great with fresh squeezed lime.

2 tablespoons vegetable or olive oil
1 white onion, cut into 1/4-inch dice
2 garlic cloves, minced
1 1/2 cups long-grain rice
2 1/2 cups homemade or low-sodium canned chicken or vegetable stock, or water
1/2 cup finely chopped fresh cilantro
1 poblano chile, seeded and finely chopped
Coarse salt and freshly ground pepper

Steps:

  • Heat oil in a large saucepan over medium heat. Add onion; cook until it is soft and translucent, about 8 minutes. Add garlic; cook 2 minutes. Add rice, and stir to coat. Add stock, and bring to a boil; reduce heat to a simmer. Cover, and cook until rice is tender, about 15 minutes.
  • Turn off heat; let stand, covered, until liquid is absorbed, 5 to 10 minutes. Fluff with a fork; stir in cilantro and poblano. Season with salt and pepper. Serve hot.

  • Rinse rice through running water a few times until water runs clear. I used a nut milk bag. Shake to remove excess water and let dry a bit.
  • Add avocado oil to a large dutch oven or heavy bottomed pot (make sure you have a lid) over medium heat and let get hot. Add rice, stir, and toast for 10 minutes, stirring occasionally, until fragrant and some pieces are slightly browned.
  • While rice toasts, make the pepper and herb mixture. Add poblano, jalapeno, onion, garlic, cilantro, parsley, salt and pepper, and 1/4 of the measured broth into a Vitamix or high powered blender and blend until smooth.
  • When rice is toasted, add green mixture from blender and the rest of the broth and mix well to combine. Bring to a boil. Once boiling, stir well to combine, turn down heat to low, and cover with lid. Let cook untouched for 15-17 minutes. Turn off heat and let rice rest for 15 minutes to absorb any excess moisture. Do not open the lid as the heat will escape.
