SPICY PIMENTO CHEESE SPREAD

10 ounces cream cheese, softened
3/4 cup mayonnaise
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon celery seed
1 cup pickled jalapenos, chopped
6 ounces piquillo pepper, chopped (regular pimentos can be substituted)
5 cups shredded Cheddar (approximately 1 1/4 pounds)
1 to 2 tablespoons Sriracha

Steps:

  • Combine the cream cheese, mayonnaise, garlic powder, onion powder and celery seed. Mix in the pickled jalapenos, piquillo peppers and grated Cheddar. Add the Sriracha and combine. Taste and add more mayonnaise and Sriracha, if necessary. Chill before serving.

1 tbsp sesame seed
1 tbsp skinned hazelnut
1 tsp cumin seed
1 tsp coriander seeds
200g soft rindless goat's cheese , such as Pant-Ysgawn
3-4 tbsp milk
few mint leaves
radishes and toasted bread or pittas to serve

Steps:

  • Put the seeds and nuts in a frying pan, then gently heat to toast them, removing them from the heat when the seeds start to pop and give off their aroma. Grind fairly coarsely using a pestle and mortar, then season with a little salt.
  • Beat the goat's cheese with the milk to soften it, then add a little seasoning if needed. Tip half into a small bowl (glass, if you have one, to show off the layers) and scatter with half the seeds and a few torn mint leaves. Repeat the layer and serve with a bowl of cold radishes and toasted pittas or bread.

This came from having two or three of each kind of gourmet olive left. I ended up with a few almond stuffed, garlic stuffed and jalapeno stuffed after a party and decided to go for it.

6 ounces cream cheese, softened
1/2 cup mayonnaise
1/8 teaspoon ground black pepper
1 teaspoon Tabasco sauce
1/2 cup toasted chopped pecans
3 -4 tablespoons chopped jalapeno stuffed olives (add whatever kind of goumet olives you may have on hand)
1 cup chopped pimento stuffed olive

Steps:

  • Combine cream cheese, mayonnaise, black pepper and Tabasco in food processor or by hand.
  • When smooth add remaining ingredients.
  • Pulse if using processor.
  • DO NOT OVERPROCESS!
  • The olives and pecans should still be identifiable.
  • Refrigerate till ready to use.

1-2 cloves garlic, (grated)
1/2 tsp kosher salt
2-3 tbsp chopped fresh herbs, (such as parsley, thyme, and/or chives)

Steps:

  • In a bowl combine the goat cheese, olive oil, and milk. Using a hand mixer and beat until smooth and light. (Or use a standing mixer and the whisk attachment.)
  • Mix in 1 clove grated garlic, salt, and fresh herbs. Taste and add more garlic or salt as needed.
  • Serve immediately.

  • Serve as-is or refrigerate for at least one hour for a firmer consistency. This can be stored in the refrigerator for up to one week.

  • Peel the beets with a vegetable peeler. Carefully use a mandolin or a sharp knife to slice the beets into super thin (like less than 1/8 inch) rounds. Place all the rounds in a large bowl and drizzle on olive oil. You don’t want to over saturate the beets, so just start with the listed amount above. Season the chips with a bit of garlic powder and smoked paprika. (I like to keep the salt until the end.)
  • Place the beets on the wire racks in a single layer. Bake for 20 minutes, then rotate the sheets and if you have larger beet chips, you can flip with each with a pair of kitchen tongs. Bake for another 15 to 20 minutes – until the edges are getting dry and crisp. Watch closely – they can SO easily burn! Remove the sheets and sprinkle the chips with salt. Let them sit to cool completely – this is where they will crisp up and why you don’t want to over-oil them! Once crisp, serve with the goat cheese dip.
  • Place the goat cheese, yogurt, herbs, salt, garlic powder and crushed red pepper in a food processor. Blend until combined, then with the processor still running, drizzle in the olive oil. You may need to scrape down the sides a few times to make sure everything is thoroughly mixed. Taste and season additionally if needed. Serve with extra pepper flakes on top. This will stay fresh sealed in an air-tight container in the fridge for a few days.
