BAKLAVA-INSPIRED SUNDAES
Baklava is a filo pastry-based sweet, popular in some Mediterranean countries. It is often made with honey and pistachios. Here, Ree has used store-bought baklava as a garnish, and used the baklava as inspiration to make a sauce from spiced honey and pistachios.

- For the honey sauce: Combine the honey, pistachios, butter, cinnamon, cardamom, allspice and a pinch of salt in a saucepan. Heat until simmering, about 2 minutes, then remove and set aside.
- To serve: Scoop 2 vanilla ice cream scoops per person and top with the warm honey sauce. Serve each with a baklava and some whipped cream.
SICHUAN CHILE CRISP SUNDAE WITH PEANUT STREUSEL
This sundae is based on the soft serve and chile oil combination that started showing up in Chengdu and Chongqing in 2018. The combination doesn't sound like it should work, but it does, especially paired with a Sichuan snack-inspired spicy peanut streusel. You can use store-bought chile oil or chile crisp, such as Lao Gan Ma, in place of homemade Sichuan Chile Oil. You can also omit the peanut streusel or replace it with crushed peanuts.

- Prepare the peanut streusel: Adjust oven rack to center position and heat to 350 degrees. (If your oven has a convection setting, make sure it is off.)
- Using a spice grinder or mortar and pestle, grind Sichuan peppercorns, chile flakes, star anise, cumin and fennel together into a fine powder.
- Combine all ingredients in the bowl of a food processor fitted with the blade attachment. Pulse until peanuts are roughly chopped and a coarse meal-like texture is formed. (Alternatively, mix together with your fingers, lithely crushing the peanuts in a mortar and pestle or under a skillet before adding to other ingredients.)
- Spread mixture over a parchment-lined sheet tray in little crumbles. Bake until deep golden brown, rotating the pan halfway through cooking, about 16 to 20 minutes. (The mixture will spread and flatten as it bakes.) As soon as the streusel is cool enough to handle, break it up into small chunks - it's OK if they are a little uneven - then cool completely. Do not let the streusel cool completely before trying to break it! Once cooled, streusel can be stored at room temperature in a sealed container for up to two weeks. This recipe makes about 3 cups.
- To serve, scoop ice cream into 2 bowls. Top with chile oil and streusel.
CRISPY GINGERSNAPS

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, cream the shortening and sugar. Add the egg and beat until light and fluffy, then stir in the molasses. In a separate bowl, mix together the flour, baking soda, salt, ginger and cinnamon. Add to the egg mixture and stir until well blended. Roll bits of dough into 1 inch balls. Dip each ball in sugar and place on cookie sheet, sugared side up about 2 inches apart.
- Bake for 10 to 12 minutes, until cookies have spread and tops have cracked. Let cool on wire rack.

FIVE-SPICE GINGERSNAPS

- Make dough:
- Whisk together flour, five-spice powder, baking soda, and salt in a small bowl.
- Pulse ginger with 1/4 cup sugar in a food processor until finely ground.
- Add syrup, butter, egg, and remaining 3/4 cup sugar to processor and blend until mixture is thick and creamy, about 3 minutes. Add flour mixture and pulse just until a dough forms. Form dough into a disk and chill, wrapped in plastic wrap, at least 8 hours to allow flavors to develop.
- Bake and ice cookies:
- Put oven rack in middle position and preheat oven to 325°F. Line 2 large baking sheets with parchment paper.
- Quarter dough. Keeping remaining 3 pieces wrapped in plastic wrap and chilled, roll out 1 piece of dough on a lightly floured sheet of wax paper with a lightly floured rolling pin to 3/4 inch thick. (If dough becomes too soft to roll out, chill on wax paper until firm.) Cut out rounds with cutter and transfer to 1 lined baking sheet, arranging cookies about 2 inches apart.
- Bake cookies until slightly puffed and a shade darker, 10 to 12 minutes. Cool 5 minutes on sheet. If desired, make holes with piping tip near edges to hang cookies, then transfer cookies (still on parchment) to a rack to cool completely. (Cookies will flatten slightly as they cool.)
- While first batch is baking, roll out and cut another batch, arranging cookies on second lined sheet. Bake in same manner, then gather scraps and chill until dough is firm enough to reroll, 15 to 20 minutes. Make more cookies with scraps (reroll scraps only once) and remaining pieces of dough, cooling sheets and lining them with fresh parchment before using.
- If using icing and coloring it, transfer small batches of icing to small bowls, 1 for each color, and tint with food coloring. Spoon each color of icing into a separate pastry bag, pressing out excess air. Twist bag firmly just above icing, then decoratively pipe icing onto cookies. Let icing dry completely (about 1 hour, depending on humidity) before serving or storing cookies.
