FLANK STEAK SANDWICHES

"My sister and I found this recipe 15 years ago, changed a few ingredients and made it our own," recalls Elizabeth Hiner of Chico, California. "Now, when family and friends hear we're making these sandwiches, they come running! It's a quick, healthy crowd-pleaser that goes great with summer."

1 cup chopped onion
1 cup dry red wine or beef broth
3/4 cup reduced-sodium soy sauce
1/2 cup olive oil, divided
4-1/2 teaspoons minced garlic, divided
1-1/2 teaspoons ground mustard
1-1/2 teaspoons ground ginger
1 beef flank steak (1-1/2 pounds)
1 medium sweet red pepper, cut into 1-inch strips
1 medium sweet yellow pepper, cut into 1-inch strips
1 medium red onion, thickly sliced
1/4 teaspoon pepper
6 French rolls, split

Steps:

  • In a small bowl, combine the onion, wine, soy sauce, 1/4 cup olive oil, 2-1/2 teaspoons garlic, mustard and ginger. Pour 1-3/4 cups into a shallow dish; add steak, turn to coat and cover. Pour remaining marinade into another shallow dish resealable; add the peppers and onion, turn to coat and cover. Refrigerate both for 3 hours or overnight, turning occasionally., Drain and discard marinade from steak. Lightly oil the grill rack. Grill, covered, over medium heat for 6-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Drain and discard marinade from vegetables. Place in a grill basket. Grill, uncovered, over medium-hot heat for 9-11 minutes or until tender, stirring frequently. , In a small bowl, combine the pepper, and remaining oil and garlic; brush over cut sides of rolls. Place cut side down on grill for 2-3 minutes or until golden brown. , Thinly slice steak across the grain; place on bun bottoms. Top with vegetables and bun tops. Serve immediately.

SWEET AND SPICY GRILLED FLANK STEAK

There are some steaks that need nothing more than a little salt and pepper to bring out their beefy goodness. Flank steak is not one of them. This bold marinade is just the sort of seasoning the brawny cut begs for: lime juice and zest add brightness, brown sugar sweetness, and jalapeño and sriracha a complex heat. Just whiz it all together in a food processor and slather it on the meat. Marinate overnight (or 20 minutes if that's all the time you have) before tossing it on the grill. Lastly, always make more flank steak that you think you want. Leftovers are the best part.

3 tablespoons coarsely chopped scallions
1 tablespoon peeled and finely chopped ginger
1 fresh jalapeño, seeded if desired, coarsely chopped
2 garlic cloves, finely chopped
1 tablespoon light brown sugar
Zest of 1/2 lime
2 teaspoons lime juice
1 teaspoon sriracha or other hot sauce (or to taste)
2 tablespoons extra-virgin olive oil
1 1/2 teaspoons coarse kosher salt
1 1/2 pounds flank steak

Steps:

  • In a food processor, pulse together scallion, ginger, jalapeño, garlic, sugar, lime zest and juice, and sriracha. With the motor running, pour in oil until smooth.
  • Season steak with salt. Place in a large bowl and pour marinade over meat. Turn to coat well with the mixture. Cover tightly and refrigerate for at least 2 hours or overnight.
  • When you are ready to cook the steak, heat the grill to medium-high heat, or heat the broiler with the rack set 4 inches from the heat source. Transfer meat to the grill and cook, covered, until it reaches the desired doneness (about 5 minutes per side for medium-rare), or broil until charred and done to taste, 4 to 6 minutes per side. Let rest on a cutting board for 5 minutes, then slice thinly.

This recipe is delicious and easy. I make this quite often. I got it out of a local TV station cookbook called "KCTS Cooks" (on the grill).Serve with asparagus, baby red potatoes, corn on the cob, or any other summer vegetable. Cooking time does not include marinating.

1/3 cup soy sauce
1/3 cup honey
1 tablespoon minced garlic
1 tablespoon grated gingerroot
1 -2 lb flank steak

Steps:

  • Lay flank steak flat and, with a sharp knife, score deep cuts diagonally at one-inch intervals across the entire steak.
  • Repeat at a 90-degree angle to create one-inch squares across the surface of the steak.
  • Repeat on other side of meat.
  • Combine soy sauce and honey in a small glass bowl.
  • Whisk until blended.
  • Stir in garlic and ginger.
  • Place steak in 13X9-inch pan.
  • Pour marinade over meat, and turn to fully coat.
  • Cover pan with lid or foil and store in refrigerator overnight.
  • Turn steak at least once while marinating.
  • Grill 3 to 5 minutes on each side, or until desired temperature is reached.
  • Do not overcook.
  • Steak should be pink in the middle.
  • The ends will be on the well done side for those who prefer it.
  • Slice meat thinly at an angle.
  • Note: You can make an extra batch of sauce to save and serve warm at the table for pouring on top of the meat.

1 teaspoon(s) ground ginger
1/4 teaspoon(s) red pepper flakes
1 tablespoon(s) rice vinegar
1 tablespoon(s) water
1/2 cup(s) soy sauce
1 pound(s) flank steak
1 medium green bell pepper
1 medium red bell pepper
8 slice(s) french rolls, split

Steps:

  • In a medium mixing bowl combine garlic,honey, ginger,red pepper flakes, vinegar, water, soy sauce until well combined.
  • In a shallow baking dish salt and pepper flank steak. Pour soy sauce ginger mixture, reserving half a place reserve to the side. Cover flank steak with plastic wrap and place in refrigerator for 30 minutes.
  • Heat grill to medium high heat and oil with a little canola oil. Remove flank steak from Refrigerator and put on grill cooking 6 minutes each side only turning one time.
  • Let flank steak rest 5 minutes. Meanwhile, in a large skillet on medium high heat with a tablespoon of canola oil add green and red bell peppers saute until slightly tender 4 minutes. Pour reserve soy sauce ginger mixture and simmer for 5 minutes. Stirring occasionally. Remove from heat.
  • Slice flank steak against the grain thinly sliced. Add sliced flank steak to bell pepper and soy sauce ginger into the skillet and let sit until ready to serve. Lightly toast rolls. Using tongs add some bell peppers, desired amount of flank steak and use a spoon to add more sauce on top if desired to rolls, Enjoy!
