Chicken wing drumettes (the upper part of the wing) are a smart choice for air frying-their small size means you don't have to spend all day cooking endless batches. Traditional drumettes require tons of oil to guarantee maximum crispy goodness; this genius recipe gets it done with just a tablespoon of super-flavorful sesame oil. To get them extra crispy, give the drumettes a turn during cooking. Serve these Asian-inspired wings over brown rice, or double the recipe and serve as an appetizer.

10 large chicken drumettes
Cooking spray
1/4 cup rice vinegar
3 tablespoons honey
2 tablespoons unsalted chicken stock
1 tablespoon lower-sodium soy sauce
1 tablespoon toasted sesame oil
3/8 teaspoon crushed red pepper
1 garlic clove, finely chopped
2 tablespoons chopped unsalted roasted peanuts
1 tablespoon chopped fresh chives

Steps:

  • Place chicken in single layer in air fryer basket; coat well with cooking spray. Cook at 400°F until skin is very crispy, 30 minutes, turning drumettes over halfway through cooking.
  • Meanwhile, stir together vinegar, honey, stock, soy sauce, oil, crushed red pepper, and garlic in a small skillet. Bring to a simmer over medium-high; cook until slightly thickened and almost syrupy, 6 minutes. Place drumettes in a medium bowl. Add honey mixture, and toss to coat. Sprinkle with peanuts and chives.

3 cups peanut oil for frying, or as needed
1 cup self-rising flour
3 eggs
2 (5 ounce) bottles hot pepper sauce (such as Frank's RedHot®), divided
⅓ cup water
2 ½ pounds chicken wings and drummettes
½ teaspoon garlic powder, or to taste
salt and ground black pepper to taste
½ cup butter

Steps:

  • Heat oil in a deep-fryer or large saucepan to 400 degrees F (200 degrees C).
  • Place flour in a bowl. Whisk eggs, 1 bottle hot sauce, and water in another bowl until smooth. Season chicken with garlic powder, salt, and pepper.
  • Dip each wing into the egg mixture, then toss with flour mixture to coat. Gently shake off excess flour and set aside. Repeat with remaining chicken.
  • Fry chicken in the hot oil in batches until chicken is no longer pink at the bone and skin is golden brown, about 5 minutes. Drain in a large bowl lined with paper towels, then season with salt.
  • Heat butter and remaining bottle hot sauce in a saucepan over medium-high heat until butter is melted. Whisk until smooth. Remove paper towels from bowl and pour butter sauce over chicken; toss to coat.

These spicy chicken drumettes or wings are baked to perfection with a crispy coating. Make these wings with a dip for a snack or entree.

For the Chicken:
3 tablespoons hot sauce
3 tablespoons vegetable oil
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon garlic powder
3 pounds (about 20) chicken drumettes
3/4 cup all-purpose flour
For the Sauce:
6 tablespoons butter
1/2 cup hot sauce
1/4 teaspoon ground cayenne, or more
1 tablespoon apple cider vinegar
Few drops Worcestershire sauce
Serving suggestion: blue cheese or ranch dip , celery sticks

Steps:

  • Gather the ingredients.
  • Heat oven to 400 F. Line a large baking sheet with foil and spray generously with nonstick cooking spray.
  • In a food storage bag, combine the 3 tablespoons of hot sauce with vegetable oil, salt, pepper, and garlic powder. Add the drumettes and toss to coat.
  • Put the flour in another bag or a bowl and add the wings, a few at a time, and toss or shake to coat well. Arrange on the baking sheet.
  • Bake for 30 minutes.
  • Using tongs, turn each wing piece over. Return the chicken wings to the oven and bake for 30 minutes longer.
  • Gather the ingredients.
  • Meanwhile, in a small saucepan, combine the butter, 1/2 cup of hot sauce, cayenne pepper, vinegar, and Worcestershire sauce. Cook over medium heat, stirring until the butter is melted and the sauce begins to simmer. Remove from the heat and set aside.
  • Remove the wings from the oven and transfer to a large bowl. Pour the hot sauce mixture over the wings and toss gently to coat thoroughly.
  • Serve as an entree or snack with blue cheese dip , ranch dressing, other dips, and some celery sticks.
