Believe it or not, the first place I ever had dirty rice was at Popeyes®. They were out of the red beans and rice. I'd never been a huge fan of liver before, but not only have I come to love dirty rice, I've also started to crave it with even more "dirt," i.e. more liver, pork, and aromatic vegetables, hence this redundantly named dish. While the traditional method cooks the rice first before "soiling" it, here we add all the "filth" at the beginning and cook it into the rice.

1 tablespoon vegetable oil
6 ounces boneless pork shoulder, diced
1 yellow onion, diced
½ cup diced celery
½ cup diced green bell pepper
1 tablespoon paprika
2 teaspoons ground cumin
2 teaspoons freshly ground black pepper
½ teaspoon cayenne pepper
½ teaspoon garlic powder
¼ teaspoon dried oregano
¼ teaspoon dried thyme
1 andouille sausage, diced, or to taste
8 ounces chicken livers, minced
2 cups long-grain rice
2 teaspoons kosher salt, or to taste
4 cups chicken broth
1 bay leaf
1 dash Worcestershire sauce
¼ cup sliced green onions
¼ cup chopped Italian parsley

Steps:

  • Heat oil in a high-sided pan over medium-high heat. Cook and stir pork until well browned and fat is rendered, 5 to 7 minutes. Add onion, celery, and bell pepper; saute until translucent, about 5 minutes. Stir in paprika, cumin, black pepper, cayenne, garlic powder, oregano, and thyme. Cook, stirring occasionally, until vegetables continue to soften, about 5 minutes.
  • Reduce heat to medium and add andouille sausage. Cook and stir to release some flavor, 2 to 3 minutes. Stir in chicken livers and rice until well coated. Season with salt, pour in broth, and bring to a simmer over medium-high heat. Add bay leaf and Worcestershire sauce. Cover tightly; reduce heat to medium-low. Cook, without stirring, until most of the liquid is absorbed and rice is starting to get tender, about 25 minutes.
  • Add green onions and parsley; mix well. Continue cooking over low to medium-low heat until rice is tender, about 10 minutes more. Taste for seasoning and remove bay leaf before serving.

One of our family's all-time favorites. Make it as spicy or mild as you please. It is hearty on a cold winter's night. If you are cooking for a crowd, this recipe can easily be doubled. Be sure to serve this with cornbread!

1 pound beef sausage
1 onion, finely diced
1 (8 ounce) package dirty rice mix
2 cups water
1 (10 ounce) can diced tomatoes with green chile peppers
2 (15 ounce) cans kidney beans, drained

Steps:

  • In a skillet over medium heat, brown the ground beef, sausage, and onion; drain.
  • In a large pan, combine rice mix and 2 cups water. Add diced tomatoes and chilies. Stir in the kidney beans. Bring to a boil, then add meat mixture. Season with salt and pepper. Return to boil, reduce heat, and cover, stirring occasionally. Cook for 25 minutes, until rice is easily fluffed with a fork.

This dirty rice recipe is classic Cajun cuisine, essentially white rice that gets "dirty" from bits of chicken, beef or pork.

1 tablespoon olive oil
1 green bell pepper (chopped (or use jalapenos for a spicier version, or serranos for even spicier))
1 medium onion (chopped)
1 rib celery (chopped)
3 cloves garlic (chopped)
10 ounces ground pork (or ground beef)
½ cup chicken livers (finely chopped (or more as desired))
1.5 cups white rice (uncooked (12 ounces))
3 cups chicken broth
2 tablespoon Cajun seasoning blend
1 bay leaf
1 teaspoon dried thyme
Salt and pepper to taste
Fresh chopped herbs for garnish

Steps:

  • Heat the olive oil in a large skillet or pan (or a pot) to medium heat.
  • Add the peppers, onion and celery. Cook them down about 5 minutes to soften.
  • Add the ground pork and break apart with a wooden spoon. Cook about 5 minutes to brown, stirring here and there.
  • Add the chicken livers and stir them in. Cook them down for 5 minutes.
  • Add the rice, chicken broth, Cajun seasonings, bay leaf and dried thyme. Sprinkle in salt and pepper to taste.
  • Bring to a boil, then reduce heat and simmer for 20-30 minutes, or until the rice is cooked through. Remove the bay leaf.
  • Garnish with fresh chopped herbs and serve.

5 cloves of garlic
1 medium onion, yellow
1/2 c diced celery
1 lb ground beef or ground turkey
2 Tbsp diced jalapenos
2 Tbsp cayenne pepper
1 1/2 c rice, long grain
3 c chicken broth, low salt
2 tsp pepper or pepper blend
1 c sliced green onions
accent, your choice
1 lb spicy italian sausage, regular or turkey

Steps:

  • 1. Heat oil in large nonstick frying pan over medium heat. add aromatics, stir to blend. Keep stirring until veggies are soft and garlic is golden. Add ground beef or turkey and Italian sausage, breaking up with a spoon continue to cook about 10 minutes or until meat is nicely browned. add peppers and adjust seasonings.
  • 2. Stir in rice a nd add broth and bring to a boil. Lower hear, cover and simmer 25-30 minutes or until most of the liquid is absorbed and rice is tender. Remover from heat, taste adjust seasonings, stir in green onions and serve hot.

1 lb hot Italian sausage (remove from casing)
2 tablespoons jalapenos (finely chopped)
1 cup long grain white rice (uncooked)
2 1/2 cups light chicken broth
1/2 cup scallion (chopped)
2 teaspoons seasoned pepper

Steps:

  • Het oil in large nonstick skillet over medium heat. Add the garlic, onion, celery, and bell pepper, stirring to blend.
  • Cook, stirring frequently , for about 3 minutes or uniil the veggies have wilted and the garlic is golden. Add the turkey (both), cook for about 7 minutes or until nicely browned. Add the jalapenos and season to taste with salt and pepper.
  • Stir in rice. Add the broth and blackened spice and bring to a boil.
  • Lower the heat, cover, and simmer for about 25 minutes or until the rice is tender.
  • Remove fro heat. Stir in the scallions. Taste and, if necessary, add salt and pepper and serve.

½ Sweet onion (diced)
2 stalks Celery (diced)
2 Pasilla peppers (diced)

3 cups Cooked long grain rice (from leftovers)
2 cups Browned ground beef (from leftovers)
1 can Small red beans (drained)
½ cup Stock (chicken stock or vegetable stock)

  • Start with cooked rice and browned ground beef. If you don't have these in the fridge already, make these first.
  • Add the oil, celery, peppers, and garlic to a large pan. Cook over medium-high heat until vegetables are fragrant. Approximately 5 minutes.
  • Add the rice, ground beef, beans, onions, oregano, chili powder, and salt and pepper. Mix until well incorporated.
  • Add the chicken broth. This helps to degalze the pan and get all of the flavor into the rice.
  • Remove from heat and add tomatoes, green onions and parsley.
  • Have your self a big bowl of yum!

1 1/2 cup basmati rice
2 tbsp vegetable oil
8 oz chicken livers (trimmed)
1 lb bulk pork sausage
1 onion (finely chopped)
1 green bell pepper (diced)
1 red bell pepper (diced)
1 tbsp minced garlic
1 tbsp chopped jalapeno chile
1/4 cup worchestershire sauce
2 bay leaves
1 tbsp chopped fresh thyme
2 tsp freshly ground black pepper
1 tsp kosher salt
1/2 tsp paprika
pinch of cayenne pepper
4 green onions (white and green parts, chopped)

Steps:

  • In a large bowl, cover the rice with 2 to 3 inches of cold water. Stir the rice with your hand and drain. Repeat five or six times, until the water runs clear.
  • Transfer the washed rice to a medium heavy bottomed pot. Add enough fresh cold water to cover the rice by about 1 inch. Bring to a boil, reduce to a simmer, cover and cook until the rice is tender, about 20 minutes. Do not overcook.
  • In a large saute pan, heat the oil over medium high heat until shimmering. Add the livers and sausage and cook, stirring occasionally and breaking up the sausage with the back of a spoon, until the meat is no longer pink, 7 to 8 minutes.
  • With a slotted spoon, transfer the livers and sausage to a small bowl. Add the onion, green and red bell peppers, garlic and jalapeno to the pan, and cook over medium high heat until the vegetables are soft, Stirring occasionally until 10 minutes.
  • Meanwhile chop the chicken livers into small dice. Return them to a saute pan, along with the sausage, worcestershire sauce, and the cooked rice. Stir until the rice is fully incorporated. Stir in the bay leaves, thyme, black pepper, salt, paprika, cayenne and green onions. Partially cover the pan, reduce the heat to low and cook until the flavors are well blended, about 15 minutes. S Remove bay leaves, discard and serve immediately.

Dirty rice is a popular Creole dish in southern Louisiana that is prepared with rice, chopped beef and pork and chicken liver.

2 cups chicken broth
1 bay leaf
1½ cup long grain rice
1 tablespoon bacon fat (or vegetable oil)
½ lb ground beef
½ lb ground pork
6 oz. chicken livers (finely chopped)
1 onion (chopped)
1 stalk celery (chopped)
½ green bell pepper (seeded and chopped)
¼ teaspoon dried thyme
2 cloves garlic (minced)
½ teaspoon salt
2 teaspoons Cajun seasoning (blend of paprika, oregano, thyme, chili pepper, garlic, salt and pepper)

Steps:

  • Reserve ½ cup (250 ml) chicken broth and pour the rest into a pot.
  • Add 1½ (350 ml) cup of water and the bay leaf. Put to boil.
  • Add the rice, cover and cook for about 15 minutes over low-medium heat.
  • Heat the bacon fat in a Dutch oven. Add the chopped beef and pork and crumble them with a wooden spoon.
  • Add the onion, celery and green bell pepper. Cook over medium heat, stirring occasionally until the beef is no longer pink and the vegetables are softened.
  • Add the chicken liver and garlic and continue cooking for 5 minutes.
  • Add the salt, Cajun seasoning and thyme.
  • Add the reserved chicken broth and scrape the bottom of the Dutch oven to release all the brown pieces.
  • Simmer one minute.
  • Remove the bay leaf from the rice and add the rice in the Dutch oven. Stir well.
  • Remove from the heat and serve very hot.

1 green peppers (or half of each) or 1 red pepper (or half of each)
1 -2 tablespoon olive oil
1 stalk celery
1 large onion
andouille sausage
2 -3 garlic cloves (2 tsp minced)
2 cups chicken stock
1 1/2-2 cups brown rice (Family style boil-in bag works great) or 1 1/2-2 cups white rice (Family style boil-in bag works great)
hot sauce (1-2 teaspoons)
black pepper
cayenne pepper (1/2 tsp or to your liking)
salt

Steps:

  • 1) Finely chop green pepper, onion, and celery and set aside. You want the pieces to be similar in size to cook evenly.
  • 2) Begin cooking rice (per directions on box or bag).
  • 3) Preheat a large skillet or large pot with olive oil over medium heat.
  • 3) Slice andouille sausage into 0.5 -1 inch pieces.
  • 4) Place sausage into pot and cook for 4-5 minutes season with a pinch of salt and black pepper.
  • 5) Add garlic and other vegetables and cook for 2-3 minutes.
  • 6) Place chicken stock into pot and bring to a boil. Stir in cayenne pepper. Reduce heat by half and let simmer for 10-15 minutes until vegetables are tender and stock has reduced by half.
  • 7) Combine cooked rice into skillet or pot and add hot sauce. Let simmer for 2-3 minutes to combine all flavors.
  • 8) You can serve this with salad or bread. Enjoy!

Meatless Dirty Rice image

Meatless dirty rice will delight your family members who like spicy, tasty dishes. A perfect Mardi Gras dish!

1 tablespoon olive oil
1 onion (chopped, about 1 cup)
2 celery stalks (including leaves, finely chopped)
1 green bell pepper (finely chopped)
4 cloves garlic (minced)
8 ounces fresh mushrooms (finely chopped)
2 teaspoons cajun seasoning (recipe link above, or store bought)
1 cup cooked brown rice (measure 1 cup after the rice is cooked)
1 15-ounce can red beans (about 1 1/2 cups)
1/3 cup vegetable broth or stock (see link above for making homemade)
salt and pepper (to taste)

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add onion, bell pepper and celery. Simmer until the onions are translucent, 5 to 10 minutes.
  • Reduce heat to low. Add the garlic, mushrooms, and Cajun spice. Mix well and cook for another 3 to 4 minutes, to soften the mushrooms and let them release their moisture.
  • Add the beans, rice and vegetable broth to the skillet, gently mixing. Continue to cook for 2 to 3 minutes to heat the beans through.
  • Add salt and black pepper to taste. Serve hot with your favorite Cajun dishes.
