CURRIED SPINACH RICE LENTIL BAKE

2/3 cup raw brown lentils
2 2/3 cups water
1 cup chopped onion (yellow or red)
1 bunch fresh spinach (approximately 10 oz, finely chopped)
1 clove garlic (finely chopped)
3 tbsp olive or canola oil
2 tsp yellow curry powder
½ tsp salt
½ tsp freshly ground black pepper
1 cup brown rice
2 cups coconut milk

Steps:

  • Cook Lentils: Measure the lentils into a strainer, pick over and remove any stones. Rinse thoroughly under running water. Transfer rinsed lentils to a saucepan, add 1-1/3 cup of water to lentils. On a stove top, bring the water to a boil then set the heat to medium low to simmer for 25 minutes.
  • In another saucepan, add brown rice and 1-1/3 cup of water. On a stove top, bring the water to a boil then set heat to low to simmer for 10 minutes.
  • While lentils and rice are cooking, use knife or food processor to chop onions, garlic, and spinach into fine pieces.
  • Preheat oven to 350 ºF. In a large skillet, heat oil over medium-high heat. Add chopped onions and garlic; then stir until onions are translucent and softened. Stir in rice, curry powder, salt and pepper; cook 2 more minutes. Add chopped spinach, cooked lentils and coconut milk; cook for 1 minute.
  • Transfer the lentil rice mixture to an oven safe dish; cover with oven safe lid or aluminum foil and bake 35 minutes.

2 Tbsp coconut oil
3 cloves garlic, minced ((3 cloves yield ~1 1/2 Tbsp))
1 tsp minced ginger
1/2 cup diced carrots
3 Tbsp red curry paste
1 6-ounce can tomato paste ((a 6-ounce can yields ~1/2 cup))
2 cups low-sodium vegetable broth (DIY or store-bought)
1 cup water
2/3 cup dry red lentils ((thoroughly rinsed in cold water + drained))
1-2 Tbsp coconut sugar ((or maple syrup))
1/2 tsp ground turmeric ((plus more to taste))
1/3 cup light coconut milk ((optional))
Cooked brown rice (I love this method)
Pita or naan ((omit if gluten free // check for vegan friendliness))
Pickled red onion*
Fresh chopped cilantro

Steps:

  • Thoroughly rinse lentils in a fine mesh strainer and set aside. If serving with brown rice, cook at this time using this method from Saveur.
  • Heat a large rimmed skillet over medium heat. Once hot, add coconut oil, garlic, ginger, and carrots. Sauté for 2 minutes, stirring frequently.
  • Add curry paste and sauté for 2 minutes, stirring frequently.
  • Add tomato paste, vegetable broth, water and stir to combine. Then add lentils, coconut sugar, turmeric, and stir.
  • Bring to a simmer over medium heat, then reduce heat slightly to low (or medium-low), and gently simmer for 20 minutes, or until lentils are tender. Stir frequently to incorporate flavors, and add more vegetable broth as needed if the mixture becomes too thick.
  • An optional (but recommended) step: stir in coconut milk for additional creaminess, and to balance the heat of the curry paste.
  • Taste and adjust seasonings as needed, adding more turmeric for depth of flavor, coconut sugar for sweetness/flavor balance, or a pinch of salt for saltiness.
  • To serve, divide brown rice (optional) and lentils between 2-3 (amount as original recipe is written // adjust if altering batch size) serving bowls and garnish with cilantro, pickled onions, and pita or naan for dipping (optional).
  • Store leftovers separately in the refrigerator for up to 4 days. Reheat on the stovetop, adding water as needed for moisture, or in the microwave.

1 1/2 cup red lentils
3 1/4-4 cups water
3/4 teaspoon turmeric
1 tablespoon fresh grated ginger
3/4 teaspoon salt
1/2 teaspoon garam masala
1 tablespoon tomato puree
3 tablespoons canola oil
1 teaspoon cumin seeds
2 garlic cloves, sliced thin
1 tablespoon very finely sliced fresh ginger
1-2 thai red chili's, chopped
2 cups cooked basmati rice, for serving
chopped cilantro, for serving

Steps:

  • Combine the lentils, 3 1/4 cups water, turmeric, grated ginger, salt and garam masala in a medium saucepan and bring to a boil. Reduce heat to low and cook for 15-20 minutes until lentils are tender. Stir in the tomato purée. Depending on how soupy you want this, feel free to add in more water. The lentils will thicken as they stand.
  • While the lentils are cooking, cook the rice.
  • About 5 minutes before the lentils are to be ready, heat the canola oil in a small skillet over medium heat. Add the cumin seeds, sliced garlic, sliced ginger and thai red chilis and simmer until garlic is just tender but not browned. Drizzle the heated oil mixture into the lentils and stir together. Season to taste, as needed.
  • Divide rice among 4 bowls and top with lentils. Garnish with cilantro.

4 garlic cloves (, finely minced (Note 1))
1.5 tbsp ginger (, finely minced (Note 1))
1 onion (, finely chopped (white, yellow, brown))
2 tbsp curry powder (, mild or spicy (your choice!) (Note 2))
1/2 tsp tumeric powder
1/2 tsp cayenne pepper (, optional)
1 1/4 tsp salt
1/2 tsp black pepper
1 cup dried lentils (, green or brown (or any other dried lentils or split peas, Note 3))
400 ml / 14 oz coconut milk (, full fat)
400g/ 14 oz canned tomato (, crushed or diced)
3 cups (750 ml) water
1/2 cup coriander/cilantro (, finely chopped)
Yogurt (, optional)
Basmati rice ((or other rice))

Steps:

  • Saute onion: Melt butter in a pot over medium heat. Add onion, garlic and ginger. Slowly cook, stirring every now and then, for 10 minutes until tinged with gold and the onion is sweet.
  • Cook off spices: Turn heat up to high, add curry powder and turmeric, stir for 1 1/2 minutes.
  • Add everything else: Add remaining ingredients and stir. Bring to simmer, then place lid on and adjust heat to low / medium low so it's simmering gently.
  • Simmer: Simmer for 30 minutes, then remove lid and simmer for a further 10 minutes to reduce the sauce. {Note 2 for cook times of other lentils}
  • Lentils should be soft, sauce should be thickened and creamy. Too thick, add water. Too thin, simmer with lid off - thickens quickly.
  • Coriander: Stir through half the coriander, then taste and add more salt if needed.
  • Serve over basmati rice, sprinkled with more coriander and a dollop of yogurt. (Low carb option - cauliflower rice).

2 tablespoons extra virgin olive oil
1 cup diced onion
2 teaspoons minced garlic
1 teaspoon minced ginger
1 cup uncooked basmati rice
1 cup uncooked red lentils
1½ cup fresh diced tomatoes
1½ teaspoons Garam Masala
2 tablespoons Thai Red Curry Paste
¼ cup diced fresh cilantro leaves, plus more for garnish
½ cup canned coconut milk
3 cups water
½ teaspoon kosher salt
Few grinds freshly cracked black pepper

Steps:

  • In a medium sauce pan with a tight fitting lid, heat oil over medium high heat.
  • Add onion, garlic and ginger and sauté for three minutes.
  • Add dry rice and dry lentils and sauté for two minutes.
  • Reduce heat to medium and add fresh tomato, garam masala and curry paste and stir and cook for one minute.
  • Add cilantro, coconut milk and water and raise heat to high.
  • Bring to a boil, cover and lower heat to low.
  • Cook covered for 20 minutes.
  • Remove from heat and add salt and pepper, stir and let sit covered for five minutes.
  • Serve with additional chopped cilantro.

Here's what Zenith had to say about this dish: A tasty vegetarian one-pot meal. (If you're not a vegetarian, you may wish to make this with chicken broth.)

1 -2 tablespoon vegetable broth (instead of using oil)
1/2 onion, chopped
3 garlic cloves, minced or put through a press
1/4 teaspoon ground ginger
1/2 teaspoon turmeric
2 -3 teaspoons curry powder, to taste
1 cup brown rice, washed
3/4 cup dried lentils
4 cups water
2 vegetable bouillon cubes
salt
1/3 cup raisins or 1/3 cup currants
1 large tart apple, diced (e.g. Granny Smith)

Steps:

  • Heat the 2 T broth (or you can use oil) in a heavy-bottomed soup pot, saucepan, or Dutch oven and saute the onion with 1 clove of the garlic until it begins to turn translucent.
  • Add the ginger, turmeric, and curry powder and saute for a few minutes longer.
  • Add more broth (or water), if necessary, and the rice, and saute for 2 minutes.
  • Add the lentils, 4 cups water, bouillon cubes, remaining garlic, and raisins and bring to a boil.
  • Cover, reduce the heat, and simmer for 25 minutes.
  • Add the apples and simmer, covered, for another 10 to 15 minutes, or until the water is absorbed.
  • Optionally, serve topped with plain yogurt and some more raisins.

1 Medium Onion (White, Yellow or Brown, Chopped)
1 teaspoon Crushed Garlic
1 Tablespoon Mild Curry Powder

1/2 teaspoon Turmeric
1/4 teaspoon Cayenne Pepper
1 1/2 cups Dried Brown Lentils ((300g))
28 ounces Canned Chopped Tomatoes ((800ml, 2 cans))
3 cups Vegetable Stock ((720ml))
14 ounces Canned Coconut Cream ((400ml, 1 can) Unsweetened)
2 cups Fresh Basil
1 Tablespoon Coconut Sugar (or Light Brown Sugar)
Sea Salt and Black Pepper (to taste)

Steps:

  • Add the olive oil to a pot with the onion, crushed garlic, curry powder, cumin, coriander powder, turmeric and cayenne pepper and sauté until the onions are softened.
  • Add in the dried lentils and toss them with the onions and spices.
  • Add the chopped tomato, vegetable stock and coconut cream. Bring to a simmer and then reduce the heat, cover the pot and simmer, stirring occasionally, until the lentils are soft and cooked - around 35-40 minutes.
  • When the lentils are cooked add in the fresh basil and stir in until just wilted. Add the coconut sugar and stir in. Add sea salt and black pepper to taste.
  • Serve with rice, fresh basil and some slices of fresh lime.

  • Remove from heat, add peas to pot, replace cover and let sit undisturbed for 5 more minutes.
  • Add tomatoes and salt and fluff with a fork. Transfer to a serving plate. Top with cilantro. Serve immediately.

  • Wash your lentils thoroughly to remove all the starch and until water runs clear. Add enough water to soak the lentils and soak them for about 30 mins. You'll see that they turn pale in color and plump up.
  • Then heat a saucepan or small pot. Add coconut oil. When the oil heats up add mustard seeds. They should sizzle right away. When they start to splatter add your curry leaves, pandan leaves, chopped garlic, and chopped onion. Saute until garlic turns brown and onions turn translucent.
  • Then lower the heat and add chili powder, turmeric powder, salt. Mix and saute for a few seconds.
  • Now drain water from your lentils. Add lentils to the pot along with sliced green chilies and mix well with other ingredients.
