CRANBERRY SAUCE WITH APPLES
Fall flavors! Traditional cranberry sauce with the addition of Granny Smith apples. The pectin in the apples helps the sauce to set and brings another layer of flavor to a classic recipe. Make it several days in advance to relieve some of the holiday stress.

SPICY CRAN-APPLE SAUCE
Delicious way to get extra vitamin C and fiber in my diet! Very high in vitamin C and fiber, this sauce is very versatile. It's great as a condiment/side to turkey, pork, fish or chicken. Also terrific dessert or snack mixed with a serving of vanilla ice cream, yogurt or as a topping on your favorite cheesecake! I like to use 2 different apples for a great taste and texture mix. Sunsweet brand has diced plums called 'Plum Amazins'. They are delicious and perfect for this recipe!

- Bring the wine to a gentle simmer with the cinnamon, orange juice and rind, cloves, ginger and star anise. Once steaming, remove from the heat and leave to infuse for 30 mins.

Bubble for 10-15 mins until the berries start to burst, and the apple is soft. The sauce will thicken as it cools - you can add a splash more orange juice or water to loosen, if you like. - In a small sauce pot heat the cranberries, sugar, and apple cider over medium-high heat until the cranberries pop.
- Add the remaining ingredients and simmer for 30 minutes. Remove the star anise. You could stop cooking it at this point but I like to cook my cranberry sauce at least an hour.
