Fall flavors! Traditional cranberry sauce with the addition of Granny Smith apples. The pectin in the apples helps the sauce to set and brings another layer of flavor to a classic recipe. Make it several days in advance to relieve some of the holiday stress.

1 (12 ounce) package fresh cranberries
2 large Granny Smith apples - peeled, cored, and diced
1 cup water
1 cup white sugar
½ teaspoon ground cinnamon

Steps:

  • Place cranberries, apples, water, sugar, and cinnamon in a medium saucepan. Bring to a boil. Reduce heat to low and simmer until cranberries pop and apples are soft, about 20 minutes.
  • Let cool completely before refrigerating.

1 cup sugar
1/4 cup cider vinegar
1 teaspoon salt
1 1/2 pound tart, crisp apples, peeled and cut in 1/2-inch chunks
1 pound cranberries
1 tablespoon grated ginger
2 teaspoons finely chopped jalapeño or Serrano chile
Pinch cayenne pepper

Steps:

  • Over medium heat, in wide stainless steel skillet, heat sugar, vinegar and salt, stirring to dissolve.
  • Add chopped apples and cranberries, and increase heat to medium-high. Let fruit cook, uncovered, for 5 to 7 minutes, stirring carefully, until apples are tender but still hold their shape.
  • Add ginger, jalapeño and cayenne, mix gently and cool to room temperature. May be prepared ahead and refrigerated up to 4 days.

So much better than a can-shaped blob, this cranberry sauce recipe unites cranberries with a natural counterpart, apples. Add ground cinnamon and cloves, and not only will your mashed potatoes and stuffing have a delicious companion, but your house'll smell divine, too.

1 cup apple cider (can substitute water)
1 medium apple (peeled, cored, and diced) (I recommend a tart variety like Granny Smith or McIntosh)
3 cups 12 ounces fresh cranberries, washed
1/3 - 2/3 cup sugar (plus possibly a little more, to taste)
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
Zest of one small lemon (about 1 teaspoon)

Steps:

  • Add all ingredients to a medium saucepan.
  • Bring to a boil over high heat, then reduce the temp to medium-low and simmer until the berries have burst and the mixture has thickened, about 10-15 minutes.
  • Let cool and serve.
  • May be refrigerated for two days or frozen for up to two months.

2 medium crisp sweet apples (cored and diced (not peeled))
1/2 cup sugar
1 cup apple cider
1 pinch sea salt
3/4 teaspoon vanilla bean paste

Steps:

  • Add all ingredients except the vanilla bean paste to a medium saucepan; bring to a boil over medium-high heat.
  • Once boiling, turn the heat down slightly so it doesn't boil over. Cover the pot and simmer until the cranberries pop and the sauce thickens, about 10 minutes. Turn off the heat and stir in the vanilla bean paste.
  • Store in a covered container in the fridge for up to 3 weeks.

200ml red wine
1 cinnamon stick
½ orange , rind peeled, then juiced
5 cloves
1 tsp ground ginger
2 star anise
1 small cooking apple , peeled, cored and cut into 1cm pieces
200g fresh or frozen cranberries
150g light brown soft sugar

Steps:

  • Bring the wine to a gentle simmer with the cinnamon, orange juice and rind, cloves, ginger and star anise. Once steaming, remove from the heat and leave to infuse for 30 mins.
  • Strain the wine into another pan, discarding the aromatics, and add the apple, cranberries and sugar. Bring to a simmer. Bubble for 10-15 mins until the berries start to burst, and the apple is soft. The sauce will thicken as it cools - you can add a splash more orange juice or water to loosen, if you like. Make ahead and freeze, or keep in the fridge for up to four days. Bring to room temperature to serve.
